What have you eaten today? (Low carb forum)

Cut them in half and fry - you’ll get some nice crispy edges.
I went with your suggestion; more crust for the same amount of meat, and quicker than the trick with water.
Quick was the keyword here, as I'd been hovering between 3.8 and 4.2 for the last hour, so very little leeway, and I preferred the flour in the cheese sauce to nudge me up just a little over treating with sweets and then injecting for the food.
I won the gamble this time! :D
(I ate at around 8:20, I'm an hour ahead of most of you.)

Same hotel breakfast today, followed by yoghurt raspberries and cream. Then a decent walk along the Tame Valley Canal with a friend and a late (for me) dinner of chicken shawarma, tomatoes and onion with tzatziki on the side at a little informal place in Brum. No idea why I ordered the tomatoes - just a whim! Didn’t finish it but did squeeze in some more yoghurt, raspberries and cream back at the hotel.

Missed yesterday as we went for a day trip to the coast, I had my usual breakfast, a naked burger for lunch on the pier and a steak and salad for dinner at a beach front restaurant looking out to sea.
Back to normal today!
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a food dr bar.
Dinner: creamy, garlic prawns with sliced sautéed courgette slices followed by SF raspberry jelly and cream.

Emotionally confusing but very tasty midnight snack of chicory and hummus.

This has been a go to midnight snack for a couple of years until 19 december 2019. Worked perfectly with my diabetes, I love the taste, and it gives me an extra portion of veggies as well.

Also, my old dog absolutely loved hummus and he got a generous lick of it every night before we went to sleep.
On that 19th december, 6 years after my father peacefully passed away in my living room, I had to say goodbye to my dog in that same living room, GP having been changed to vet, circumstances much the same.

The first injection hurt the dog so I quickly had someone retrieve the tub of hummus next to my bed to distract the dog, and Hidde went, happily licking the hummus, pain forgotten.

And then I couldn't eat chicory and hummus without crying again so I lost my favourite bedtime snack.
I tried every once in a while but it didn't get better so I gave up.

Today the hummus was buy one, get one for free, so time to try again and I didn't cry!
Still, not the easy chomping away it was when Hidde was still sharing, and it will take a lot of practice to have it turn back to just another food again, but maybe this is the start of getting there, I'd love to finally have my favourite midnight snack back!

Mashed up JO's fish cakes, with some left over veggies mixed in for breakfast.
Slice of toast for lunch as I did not feel like eating a bigger meal for lunch.
Chunky beef and veggies soup, couple of slices of toast for supper at six.

Glass of single malt whisky before going to bed.

Forgot to mention...
In the supermarket earlier today, still in August, there were piles of big sharing tubs of chocolates and loads of party food in the freezers...
And a certain type of recipe is coming up on fb and other places
Yep, it's coming, just under 4 months.

Anyone else nostalgic for the days when we used to get harvest, then, autumn, then Halloween, then guy fawkes, then the big day?
 
Morning all. My fbg was 8.9 this morning at 4.30. Foodwise it shouldn't have been because I had a very lc day. So today it will be lower! Scrambled eggs with ham and cheese and hm vegetable soup fo tea tonight. I suspect the high number is more to do with the day after tomorrow when I fly 10 hours to Texas to see my son and family. I'm trying hard to keep calm!:joyful::nailbiting::D
 
I take back everything I said about my menu fears at the place we stayed at over the weekend. They have a really good chef, all food was quality and cooked perfectly. I enjoyed the brekkies of scrambled eggs creamy not rubbery), mushrooms fried in butter and a grilled tomato. Together half a slice of brown toast got me through to supper. Had an excellent carvery on the Sunday with lovely veg of my choice (green beans, cauli cheese) and as much as I wanted. Another night I had a lamb steak. The night in between had scampi (good quality not all coating) and it was such a treat with a nice salad. So back late BH Monday to t/a Tandoori King Prawns and cauli bhajee.
Back to brekkie of slice of LC toast and lots of tea. Lunch yesterday was sliced cold beef, dab of horseradish and side salad. Supper was chicken breast with cauli cheese the first time from a bag of frozen from Sainsbury. I have to say it wasnt half bad cooked for 30 mins on the shelf below the chicken and was ok for my BG so thats a keeper. You all know I like an easy meal not least because Mr PM doesnt like veg so short cuts are appealing.

So emotional to read let alone experience Antje but maybe having the late night snack of hummus will make you feel closer to Hiddie. You gave him the best comfort possible at the end and that was out of love for your friend to ease him on his way.
I hope you can enjoy hummus again with pride.

3 Free range pork sausages. 2 Tomatoes.
Coffee and cream.
 
Getting predictable round here. Hotel breakfast of omelette with ham, cheese and onions, with plenty of bacon on the side. Followed up by yoghurt, double cream and raspberries.

Mid afternoon visit to Hotel Chocolat (final one of the trip) for a hot chocolate and then dinner was the remains of the Spanish deli stuff I bought from M&S the other day, supplemented by a couple of bits of cheese from the breakfast buffet.

L: samosas and pakora shared with hubby, not planned, just found a gourmet street food van in a car park middle of nowhere. Very tasty
D: chicken and avocado salad. A choc ice cream, hm lc.
Think a few nuts have been nibbled throuhh the day as well. Put a packet out to be used up soon as near date and it has got suspiciously light

But while I love to feel closer to him every once in a while (he's very sorely missed) and I welcome the occasional remembering, even if it hurts, I don't necessarily want to have my midnight snack turned into emotional reminiscing every time.
I enjoy thoughtlessly eating while reading my book as well! :D

Today was the last day of cauliflower and broccoli with cheese sauce with small meatballs.
I reheated the meatballs with the veggies in the frying pan I originally fried the meatballs in, so with tasty bits and bobs. Added a little water to have it reheat without burning at first, and added the cheese sauce once the water had evaporated.

This definitely made for one of the most unappetizing looking meals I ever made but thankfully I'm not fooled by looks, it tasted delicious! :hungry:

You gave me the worst earworm yesterday, and it still won't go away so I'll share!
The amazing thing about this song is that it was written by an American songwriter who complained of the same issue in 1993 (almost 30 years ago!) but the 'season' lasted only two months at that time according to the song, which I thought was a ridiculous US thing then.
When I first heard it, christmas stuff wasn't available in my country until after 'Sinterklaas', the 5th of december.

How we wish now it only lasted for two months!
