What have you eaten today? (Low carb forum)

Today was the same as the day before yesterday (meatballs with lots of onion and cheese in them, and green beans with a blue cheese sauce), which should have been yesterday's meal.

But yesterday was 'neighbour day', a real thing, promoted and subsidised by the government, provided you organise something to have neighbours spend time socially together.
Was a lot of fun and I spoke with a lot of so far unknown to me neighbours!

It started at 2 pm, and despite starting to get hungry at around 1 pm I figured to wait a bit with my first meal and see what would be available at the party.

So the first thing I had besides my morning coffee was a glass of hard liquor at 2 pm, as that was the first thing offered! :wacky:

Apart from that I had plenty of cheese cubes, cold meats, a couple of bitterballen (definitely not low carb) some cherry tomatoes and cucumber, and beer.
Enough beer to find it very funny we were actually drinking beer paid for by the government. :hilarious:
But I did manage to steer clear of all the other high carb snacks, and I had the insulin dosing pretty much spot on. :)

Got home at around 7 pm, decided a full meal wasn't needed after all the snacking so I had a meatball on a slice of low carb bread.

Enough of the beans and meatballs left for tomorrow, which means I only have to cook one more time for two days on wednesday before leaving on my holiday to the UK on friday!

Forgot to post last night’s dinner and tonight forgot to take a picture of my cheese and bacon double naked burger (one beef burger and one chicken breast). You’ll have to make do with a pic of my cappuccino!

It really is!
While it sounds ridiculous to have the government pay for your beer, it really pays off by having people getting to know eachother and offering to feed the cats and watering the plants.

And organising such a thing becomes a lot easier when you don't have to worry about everyone putting in some 5 euros to participate.

I think it's a great idea when governments pay for the beer, getting a a bit of a different tax rebate in liquid form would suit me down to the ground.

Skipped breakfast
Exercise class. Bg straight after was 8.5.
Cup of green tea
L: crispy cheese omelette, but I nibbled at least 100g brie while cooking the omelette
Late dinner at pub quiz at 8:30 fish pie with potatoes topping. 1 glass white wine. Came with veg. Up from 5.7 to 8.5, not too bad.

Forgot to post yesterdays food but we are back home now so I’m feeling a bit more in control
B- 2 boiled eggs. Spoonful of turmeric and ginger sauerkraut.
L- SLC roll filled with sliced beef and coleslaw.
D- pork chop, 3 M&S 90% pork chipolatas and cauliflower - all cooked together in the air fryer.
2 glasses red wine.
Thank you, good to be back. Just have to get baxk into the swing of things!
 
Morning all. Just had my coffee and cream. Lunch will be beef and pork mince with carrot, onion and runner beans with cauli mash. Teatime will be a protein shake with avocado. I'm trying to stick to 2mad. Bg was high last night but down considerably this morning, so maybe I'm doing something right! Going to change coffee with cream to coffee with coconut oil. See if there is a difference
 
Today, at around 7 am I decided to go back to bed after being up since 3.45. I'd just dozed off when I heard the patter of tiny feet - at least not tiny but not as big as Neil's. I got up and found Em sitting in the kitchen eating a wrap with cheese. She didn't know why she had been dropped off here before school and I would have expected a quick phone call to let me know. However, I guess time was short and Alistair knew she would be welcome. I didn't think a wrap was sufficient for a breakfast to keep her going through morning classes so gave her some strawberries and orange juice - no time to make bacon by the time I'd got her washed, brushed and dressed and one of the few occasions when I thought some sweet stuff would do the job. She went off to school quite happily.

Then I realised that the bins weren't out and it's dustbin day (once every 2 weeks) so hussled around getting those organised and out to the roadside. That just about finished me for the day - legs felt as though they were breaking in half so I had to rest for a bit. And at last - about 9.45 I had breakfast. That was 2 slices of streaky bacon and 2 fried eggs.

I'm still quite hungry though, so doubt if it will last me all day. My fall back position is a nice juicy steak that Neil managed to get for me yesterday, with some mushrooms and onions. I'm talking myself into it!

As usual all brekkies are slice LC toast, good butter and copious tea.
sunday evening we had crispy Peking duck from Sainsburys, mine with green veg and a trickle of sauce.
Monday and Tuesday lunches were cold meat, side salad and spoon coleslaw.
yesterday had a DGF Bakewell with cup of tea after. I am not ordering these cakes again as they are too sweet and too expensive. Supper on Monday was a cheese & tomato omelette. Last night it was 8 chilli tomato meatballs with green beans. Lunch today will be early and scrappy from fridge, bit cheese and couple of rollitos then off for eye injection at the hospital. Supper tonight is baked corn fed chicken breasts stuffed with a bit of cream cheese and frozen cauli cheese also baked at the same time is surprisingly good and convenient esp for one.
@Annb sorry about your friend and sorry about the well cooked fish but glad it was rescued by a bit of mayo. A bit of mash potato added would have made a good fishcake, if you can tolerate potato which I defo can’t.
PS. My new discovery is Marmite peanuts which are amazing and don’t seem to be too detrimental providing I stick to half a ramekin!!

Must admit, I have done once or twice, but once I realise I keep a very close eye on my BG and inject if it's going sky high. More often I forget my pills. Just decided yesterday that it isn't necessary to take them after my meal - other than the Metformin, so I can take them early on when I have time to think about them.
 
Another one of those days.
Remind myself to only buy toothpaste in Lidl.

No breakfast apart from half cup of black decaff coffee, followed by a swimming pool work out.
Late lunch mushrooms, salmon scrambled egg, and proper coffee, without milk.
Dinner was chicken thigh and roast veg, sugar free tonic water.
 
Please tell me about this. How do you make it?
Put the grill on heat up.
Whisk eggs in a bowl
Grate a good couple of handfuls cheddar
Heat omelette pan on hob with a little butter in
Put a thick ish layer of cheese in the pan and wait until it melts.
Gently pour eggs on top. When half cooked, put under grill to finish, adding any remaining cheese.
Fold to serve

You end up with a crispy cheese outside . Can add other omelette fillings too.

Edited to add I got the recipe from someone on here but can't remember who. Respect to whoever it was

L: some fat head dough cooked in airfryer, garlic sausage slices made more interesting by wrapping round cream cheese and a slice of roasted red pepper

Decided to harvest all my grapes as decided they wouldn't wait a month until we are back from a trip.
Too many fell into my mouth.
Rest have been frozen while I decide what to do with them.

D: a Curry flavour melange (!) Of cooked chicken heated with onion, carrot and sliced sprouts, yoghurt. Boys had theirs on lentils, mine was plain but tasty.
