What have you eaten today? (Low carb forum)

Hi All
Thanks for concern and kind remarks re Mr PM. He continues to have regular ‘events’ and has been referred urgently to Cardio. In the meantime we are paying for a private consultation next week. The really scary thing is on Sun evening I couldnt get either a taxi or an ambulance and I can’t drive in the dark so he had to drive himself. He got told off but what are we supposed to do. Rang son who was 2 hours away. Neighbours are all OAPs with their own issues.
Anyway back to topic.
usual brekkie of slice LC toast and copious tea. Yesterday lunch was big mug of chicken soup. Supper was two plant burgers topped with two portobello mushrooms preceded by a few Marmite peanuts and a gin & soda.
Today lunch will be cold plate with bit cold meat, cheese, chopped salad & spoon coleslaw. Supper will be chili (atMr PM’s request) but I may well have an omelette.
I hope Mr PM gets the treatment he needs and gets much better soon. It's a worrying time for both of you. My brother was in the same position when he stubbed and broke his toe. He was bleeding heavily (he is on blood thinners) but his wife can't drive their car and he had to get to hospital and home again the next day, after an overnight operation and blood transfusion. So he drove himself. They made such a fuss when he was leaving the hospital next day that he agreed to ask his wife to come to fetch him (ostensibly to drive him) using the car he had left outside the hospital the day before. She came - he drove home. Everyone was happy. Sometimes you have to wonder if the medics understand that outside of the hospitals etc, people have to live real lives.

Had a fairly early breakfast because I have to go to get my legs seen to, but I wish I hadn't. It was cream of mushroom soup which is not normally a problem, but now I'm feeling very nauseous and my stomach is kind of warning me not to take any more liberties. I'm going to lay down for a while and hope it sorts itself out before I have to leave.
 
I found a supermarket and I've bought paneer. Must be some kind of cheese.
But how do I use it?

Also bought a tub of double cream so I can finally find out what it is.
The tub can't be reclosed though, so once opened I need to use it.
So what can you do with double cream?

Paneer is an Indian cheese. It's usually added to vegetable dishes and (in my opinion) just adds some protein to the dish. It soaks up other flavours, but doesn't have much of its own. It's not really a cheese you can eat on a sandwich or crackers. A bit like Feta.

If you have any foil or cling film, you can close your cream tub with that - better if you have an elastic band to hold it firmly in place. These pots always used to be sold with a plastic cap to reclose them, but more and more these days the manufacturers are not putting those on, under the pretext of saving plastic (saving them money!). If you are likely to have any more of these kind of tubs, you can get silicone tops to fit these pots. Supermarkets should have them.

How to use double cream? Mix with some cocoa powder (and sweetener if you use it) and whip it until thick. Very nice dessert.
Stir into soups or stews.
Pour into coffee.
Stir into whisked egg for an omelette.
Stir into melted cheese for a cheese sauce.

Lots of things that you want to enrich. It's bland but makes lots of things taste so much more luxurious.

Paneer is an Indian cheese. A bit tasteless like Tofu but easy to deal with. You can knock together a curry easily with paneer. Fry off some chopped onion and soften down. At this stage you would normal add a mix of spices to cook off but, mindful of your limited cooking facilities, I would get a jar of Indian curry sauce. You can get some with the spices in a little container on top. If it has the spices they cook off first then add the sauce. The paneer should be cubed and go in at the very end for 2 or 3 minutes. I like spinach in it as well. You'd add the spinach before the paneer and wilt it down. If you can get cauliflower rice add some of that too but keep paneer to the very end.
 
Afternoon all. I'm late today. Getting my dining room ready for my granddaughter to sleep in. Both of them are coming for the weekend. Hopefully my grandson will come as well and it will be the first time they have ever been together at the same time. One lives in England, one in Ireland and one in America. Fasted today till 1,30 then had a plateful of fried veg. Am going to stay in the kitchen and boil some eggs! Don't want anymore to explode lol.
 
Stomach has kind of half settled but is still issuing warning signs despite me feeling hungry. At the Health Centre I was told I was to have a blood test as well as get my legs sorted. Had I known, I might have taken on more fluids this morning but, knowing I was going out, I deliberately kept fluids to a minimum. Not good if they want to take blood. They couldn't get any, so I have to make another appointment for that. Legs sorted after a fashion, but that's another story, not for this thread.

Had some tea when I got home but tum didn't like it. Not sure what to do about it.

At some stage today, I have some lamb chops to cook and eat. I'll just have to wait for that. I did want to make some green soup but may just have to make it and put it in the freezer, if tum is objecting to soupy kind of things. I have some spinach to use up and tum is usually fairly comfortable with that, so I'll have that with the lamb. Much later.
 
5 October bed 8.4 FBG 7.9 - I'm waging war on my BGs to try to get them back down. I really want to stabilise them again before we go away. As Hubby says though, if a bug of some description is lurking, it's a bit of a losing battle! I can try though.

L. 2 slices of butcher's roast pork leg I got yesterday.

D. I'd made a beef casserole (boys were here) They had mash, broccoli, peas and bits of puff pastry (Mea Culpa - I did eat a little bit of pastry eldest left). I had casserole with lots of veggies. Broccoli, carrot, peas, courgette, green beans but definitely no pastry!

My Fitness Pal (MFP) doesn't like me. It says I'm not eating enough.

My son is due to be made redundant in February. He got his 2nd firm job offer today to start 1 March. Great to have two firms battling to recruit him in 5 months time. No wonder he wasn't concerned about redundancy. 20221005_184503.jpg
 
Not posted meals for a few days and unlike @maglil55 I have no idea beyond the day I’m on.

A bit erratic today as on the road - long trek across London and then a coach to Brum due to train strike. Bought M&S ‘best ever’ sausage rolls and removed the pastry for my journey. The meat filling is very tasty indeed. Also bought some rollitos, but those ended up being dinner!

Just stocked up in Morrisons as I have a few days in an Airbnb. But not before I’d popped into town to add to the jumper mountain @DJC3 and @maglil55 - kept myself to 2 at FatFace, where they have 20% off. One of the two fitted me in 3 different sizes :hilarious: went for the middle on after consulting the shop assistant!
 
Usual breakfast of coconut ‘porridge’ and strawberries before setting off to Birmingham. I drive an electric car so stopped around lunch time, near a Costa to charge it, I went to have some coffee and a mini English breakfast caught my eye, all low carb apart from the baked beans. It wasn’t very nice so left some meaning it was even lower carb!
So this evening still hungry I got Nando’s delivered to my hotel :)

@Antje77 I hope you’re keeping warm, I thought of you today when I woke up and it was pouring with rain. By the way, eat double cream with everything, and yes, as @AndBreathe says, you must try clotted cream.
@maglil55 your food always looks so appetising, sorry about your high BGs, it can’t be anything you’re eating though. Hope it calms down soon.
@PenguinMum what a worrying time for you and Mr PM I hope there are no more episodes before the appointment next week.
On to food-
B cheese omelette, turmeric&ginger sauerkraut.
L cream cheese, smoked salmon and avocado on a slice of schneider brot protein bread. Then choc chia pud.
D- salmon fillets, air fried with mushrooms and asparagus. Sf jelly and h/m yoghurt
Ps @RosemaryJackson I hope the eggs stayed intact.

Now you've had double cream, you need to graduate to clotted cream. That is near solid with a delicious crust. You can just tackle it with a spoon.
I didn't have the double cream yet because it can't be closed again, and I had a big meal this afternoon already and I'll be out all day tomorrow.
Tomorrow will include an all you can eat thing in the afternoon so I'm not about to spoil my appetite with double cream for breakfast!

But I'll make sure to buy clotted cream before heading back home!

As for what I had today, I'm not sure it's suitable for this thread. But here comes:

For starters I had very good lightly battered squid with fresh chilli pepper and garlic mayo.
Mains was liver and onions with onion gravy and bubble and squeak, according to the menu. I'm not completely sure what bubble and squeak is but I think the kitchen ran out of it, because what I had tasted exactly like mashed potatoes. The onion gravy was delicious (and likely very high in carbs), and there were also leeks on my plate but very little onion.

Not complaining though, everything was tasty and I mostly ate around the mashed potatoes, and the price was very fair, especially considering I'm camping at the most beautiful spot attached to the pub for only 10 a night!

Pretty proud of how I caught the drop too!

No problem keeping warm so far!
Impressive amount of rain and wind this afternoon, but only for a short while and my tent is completely dry on the inside!
