What have you eaten today? (Low carb forum)

Low carb bread with lots of cheese at around 2 for first meal as usual.
No real evening meal, there was a get together to remember a colleague/friend/captain who died too young and suddenly a couple of months ago of a very agressive brain tumour and whose funeral was only for a selected few (of which I was not one, having mostly lost contact in the past few years).

Very good to see all those people from the time I was sailing full time, had a very good time too, both remembering our friend and just having a good time!
Finger food was all around so I had things like tomatoes and mozzarella, olives, small sausages, nuts, little meatballs, egg mayo, one bitterbal (for which I injected more than I thought I'd need in hopes I could have a cheesy bread stick as well, but alas, the dose turned out to be spot on.) and called it a meal.

Will do some midnight snacking on the very last of the yummy barbeque flavoured pork scratchings they sold at Lidl this spring. Bought a ridiculous amount but I'm now on the very last bag. High time too, it's almost two months past its use by date, but not looking forward to finding a new favourite midnight snack!
 
The soup yesterday was a bit rich and I struggled to sup the bowlful tha I had put out. Then, of course, tum objected. Maybe there was too much cream in it. There's more than one bowlful left to use up though. Might put that in the freezer. So far 2 cups of tea and a slice of toast.

I have a couple of steaks in the fridge so one of those will do for a 2nd meal today. There are a few mushrooms to use up as well.
 
Woke up ravenous, probably due to overeating chocolate yesterday after a difficult medical appointment which took me past Hotel Chocolat on the way home.

Had 2 slices of Schneider Brot toasted with grated cheese on top followed by the remains of the illicit chocolate.

Then back on track with 20% mince fried with onions, bacon, courgette and a beaten egg/grated cheese mixed in. Dessert of Greek yoghurt.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a PE protein bar.
Dinner: same as yesterday, just on a different plate (!) followed by SF cherry jelly and cream.

(Have been without eggs this week , turning to chunks of cheese instead probably hasn't been a sensible strategy!)
finally got to lidl - no eggs! Again! Got some at Home bargains next door
L: crispy cheesy omelette (my boy cat mugged me for the end bit, he has very human tastes :))
D: hm lc chicken curry. Boys had rice and onion bhaji with theirs so I had 2 bites bhaji. 2 glasses wine with soda water

I think almost all cats love cheese and eggs!
Now my cat ate a substantial portion of zuurkoolstamppot today, even before meat was added. So it basically was mashed cauliflower, lots of sauerkraut, veggie stock cube and some crème fraiche. Odd cat.

I had the same (left from the day before yesterday), but with rookworst (a Dutch smoked sausage) and zuurkoolspek. Zuurkoolspek is a salted but not smoked piece of pork belly. You cook it in water for 20 to 30 minutes and then slice thick and use like that, or you can fry the cooked slices. I love both, and I still recommend you all try a Dutch zuurkoolstamppot. :)
As you can see, my new keyboard arrived today so I can finally use all letters again!

I thought to finally try this cheese and onion pie tomorrow so I looked up the post and found it was posted on the 29th of october two years ago. So it must be your birthday again!

Does the recipe say I should boil the chopped onions in water?
I guess it does, it's just that I never boiled onions before so now I'm in doubt. The words cooking, boiling, baking, frying are somewhat confusing for a Dutchie because they're not used in exactly the same way in my language.

We've been hungry tday, so ate early this evening. It was MrB (our) World Famous Cheese and Onion Pie. Aside from lots of delicious onion in it, it is very low carb. Ingredients are all very approximate, in terms of amounts.

For two:
1 large onion chopped.
c200-250gr cheese of your choosing; grated - for us, this evening, it was just a strong mature cheddar
A decent knob of butter
1 egg

Firstly, boil the chopped onion until soft, the drain very well.
In a bowl, combine the onion, cheese, egg, butter and seasoning, the decant into your chosen cooking vessel. It works just as well as one dish, or individually. We had individuals tonight.
Put it into a 200c fan oven for c30 minutes.

I think it would also be wonderful with cooked bacon or chopped chorizo added.

It's very filling.
 
Three hard boiled eggs, two slices of vegimite on toast for breakfast.
Savoury liver and bacon, onions and tomatos, lemon / lime sorbet for lunch.
Cheese, tomato, lettuce sandwiches, half a mandarin for supper at six,

Usual glass of single malt before going to bed.
 
Coffee.
Breakfast: Few rashers of bacon, handful of roasted chickpeas.
Later: Chicken thighs baked in coconut cream with chili and cilantro. Last of my blue goatsmilk cheese with cucumber and walnuts. Few squares of dark chocolate. Matcha tea.
Planning an extended fast this coming week.. Have been 'building my fasting muscles' the past few months and really want to do a good length therapeutic fast - for automimmune and neuro issues - before the silly season is upon us. Will still read this thread but will not post about my coffee and water.
 
Morning all. Forgot to post yesterday but I know I had bacon, eggs and tomatoes for dinner and the rest of the tin of tomatoes for tea with 2 buttered Ryvitas. Plus some Co-op Divine 70% chocolate. Today I have a chicken breast which I will stuff with cream cheese with brussels, broccoli and cauliflower. I have some Porcini mushrooms so I'll try to make a sauce out of them. I did make some lc bread but wasn't impressed. It was more like cake than bread but I'll keep trying. @DJC3, how many carbs per slice is the HiLo bread? I miss real bread more than anything and I sometimes crave a cheese sandwich.

It’s about 5g per slice. I completely agree about the cheese sandwich.
 
Breakfast: 2 fried eggs on a slice of toast followed by 3 very thin slices of salami and tea.

Bit of a cheat - I toasted the bread in the pan I cooked my steak in yesterday so it picked up the juices left behind. Better than butter. I have tried various low carb bread substitutes and some are not too bad, but so far haven't found one that doesn't have something in that sets off my allergies/intolerances. So I try to restrict myself to one slice of ordinary bread per day, usually toasted with lots of butter. The steak I saw Neil putting in the fridge for me wasn't 2 smallish ones, as I had thought, but one pretty reasonably sized slab of Aberdeen Angus. I intended to eat half of it and keep the other half for today but on realising that I was 2/3 of the way through it, I decided just to carry on. It was a struggle, but I made it!

2nd meal today will be seared salmon with some lemon and spring onions.

Had a naughty Friday and Saturday as was a away on a "Foody" trip to Italy... Booked ages ago with friends, so could not avoid. As it turned out, my Glucose did not go up as much as i feared and came down pretty quick on Sunday (today)... 4.8 before, then peaked at 7.0, then down to 5.2 by sunday afternoon I avoided breakfasts, but did big lunches and dinners, all 4-5 courses.. I just ate a spoon or so of the stuff with carbs (except for 2 small bowls of Tajarin pasta)and the odd breadstick, and limited myself to 2 glasses of wine plus a pudding wine with each meal... Oooh! .. and 1 Campari and tonic... Naughty, but very very nice and much missed! Weight wise, was a little strange... Thursday night 109.6, Friday morning 110!... Now after the weekend excesses 10.6kg... Hopefully this week with 0 carbs, 0 booze and sugar, 1 or 2 meals per day and 14 hour fasting i hope to get it down another 7kg... Oh! i Have just realised i have another big meal that i cannot avoid tomorrow... But that is it until end November!

It is cheese and crackers I miss, or in fact actually it is anything and crackers... I love crackers :)

How long will your fast be? I was thinking of doing a 2 day one last wek, but having never done one before was not sure how safe it would be.

Most cheeses are fine. Crackers? Google low carb or keto crackers. There are loads of them. One of the popular ones are M&S super seeded but are notoriously difficult to find in store. Many online suppliers have them too. You'll also find loads of recipes online for crackers. I am currently using M&S crispy cheese crackers. Carb count is higher than the low carb version but I can get away with having 2 or 3 of them.
