What have you eaten today? (Low carb forum)

H/m baked beans on a slice of toast for breakfast.
Have to use some of the meat Neil has bought for me - at least have to cook it even if I don't get around to eating it. There's some turkey breast which I intend to stuff with pork mince and cranberries and have cold. There's some lamb to make a tagine with, some beef mince which might go into the freezer as it is. Oh yes, and there's some smoked mackerel - tomorrow's breakfast probably.

Well there’s a first time for everything and today’s first was being soooo full after lunch that a Hotel Chocolat dessert of hot chocolate and whip seemed like a bad idea so I just took the bus back to the hotel.

Lunch (there was no breakfast in anticipation) was meat, meat and more meat at my favourite Brazilian BBQ place. Picanha was the star as usual, with garlic sirloin, rump steak, lamb, chicken thighs and pigs in blankets as more than passable accompaniments. Oh, and a token portion of tenderstem broccoli and a very small plate of deli meat, smoked salmon and manchego cheese. Doubt there’ll be a need for anything else later.

Lol thank you, I’d already spotted them on the Lakeland website! I Daren’t go near the Windermere branch though, we will be so squashed in the car going back as it is.
As a lover of Lakeland, the Windermere HQ store is heaven on earth! When we stayed at Windermere on our way to Chester, I had to visit, dragging a reluctant Hubby behind me.

28 December bed 6 8 FBG 6 4 - I was watch8ng the boys in the evening, plus I had a dental appointment in the afternoon to adjust the new bridge. Thankfully, I felt better. Today *29th I don't.

B. TAG and 3 LC crackers with port salut and Wensleydale with cranberries.

L. Nothing - at dentist plus shopping to try to get Hubby to eat.

D. Made a wrap with a Tesco GF wrap filled with shredded lettuce, tomato, mayo, rare roast brisket, and mustard. CC little chocolate pot. @Goonergal, these are becoming my HC home addiction.
Much later, a couple of slices of cold roast duck.
I was kept warm by various animals resting on me like little hot water bottles at my son's house.

Today, 29 December, bed and FBG are both 6 4. As I mentioned above, I've relapsed again. In better news, tomorrow is the final day with multiple drops, in my right eye.

B. TAG and 3 LC crackers with port salut.

L. Nothing

D. I made another wrap with lettuce, tomatoes, rare roast brisket, etc. Vegetable bouillon. CC little chocolate pot. Later, I suspect I'll eat more duck.

Got nothing done today as we're both wiped out. Hopefully, tomorrow will be better as I have the optician for the hospital report.

I’m another who forgot to post yesterday, and possibly the day before - I can’t remember.

Today we travelled back from the Lakes to Cornwall (skilfully avoiding the Lakeland HQ in Windermere!) just 9 hr trip which was 1/2 as long as the journey up.
Loads of black coffee all morning.
L- sandwich made from HiLo bread and leftovers ( Turkey, ham, cheese, mayo). 2 slices of HiLo are 10g carbs, too much really but…
Mid aft a DGF cake
D- stopped at local coop on way back to buy wine and easy party food for the others. The ‘party food deal’ included Camembert for baking so I had that with some roast cauli florets to dip. Chilled white wine. Glad to be home.
@maglil55 sorry to read you are still not right, I do hope you start to feel better soon. Btw what are cc chocolate pots?

Skipped breakfast in anticipation of a walk with a friend which got cancelled last minute. So 2 coffee with cream instead
Lunch: 2 cold 95% chipolatas and 35g no sugar chocolate I was brought for Christmas. Glad it's gone now as has malitol in which I try to avoid.
D: pre theatre, minute steak and a small portion fries, extra creamed spinach.
Half a tub ice cream in the interval.
1 glass red,1 glass white

Only 2 more birthdays this week...too much celebrating and tempting. I need to get back to normal

Hi Annb, how do you make your baked beans please? I love baked beans but there is too much sugar in bought ones. Hope you are feeling better.

I soak the beans overnight and then boil them in fresh, unsalted water until softened. Then I put them into some of my usual home made tomato sauce in a covered baking dish and bake in the oven for about 45 minutes. The taste is good - not at all like tinned ones which, I think, has carrot in the sauce as well - but I still have problems with the skins not softening like the ones in tins. Next time I will experiment with using bicarb soda in the soaking process.

The stuffed turkey breast was not exactly a success yesterday, and there was an issue with the tagine as well. The stuffing leaked out of the turkey and the breast was drier than I had hoped. Still half of it left to make something else with. I couldn't find my north African spices to make the tagine, so I just used paprika and ginger as spices. Tastes fine, but it's not the same as a normal tagine. Plenty there for 3 or 4 meals.

This morning, I forgot that I was intending to have smoked mackerel and just made myself bacon and eggs with a slice of bread fried in the bacon fat.

I'll do something with the turkey to put into the freezer and have some of the tagine for my second meal today.

Must search through my spice drawers to see if I actually do have some Ras al Hanout or Harissa. Trouble is, I have too many jars of spices there and I should really weed them out.

Well started off out with two coffees and whipped cream and sprinkles of chocolate! Tasted nice but bloods all up by midday... I usually have decaff.
Ham and tomatoes (cherry)
Cheese and sausage.

Skipped breakfast.
Leisurely 20 minutes on the exercise bike.
11 a.m. 2 scrambled eggs with 2 95% chipolatas and a sprinkle of cheese
Coffee with cream
Mid afternoon a handful of almonds.
A good shop in Lidl followed by a clear out of our outside freezer
D: Salmon Wellington with carrots and broccoli . 1 sq 85% chocolate, 1 liebcucken heart, 1 whisky

I have the same issue with spices. I know I’ve bought both the ones you mentioned but I know I’ll never find them if needed. Added to that, it’s so damp here that as soon as a jar of spice is opened it has to be used up or it will set into a solid lump within a fortnight. It’s the worst thing about living in Cornwall.

Haven’t posted for several days, but each day has followed the same pattern of my normal breakfast, a couple of coffees with low carb snacks til evening meal time, which has been Xmas leftover type plates of food. I’ll let the pictures speak for themselves!

NB all bread featured is from the Low Carb Food Co!

B- meant to be a cheese omelette but it stuck to the pan so more like scrambled eggs. With h/m red cabbage&ginger sauerkraut.
L- bacon Brie and cherry toms on last slice of toasted HiLo bread. @PenguinMum I can see why you like this so much, I’ve really enjoyed it over the Christmas period. Probably just as well I don’t live close to a Sainsburys now.
D- rolled breast of lamb cooked in airfryer rotisserie. I bought the lamb from the super Gloucester services farm shop yesterday. It was fab. Had it with broccoli and fried mushrooms ( no 3 daughter dropped off a whole crate of mushrooms from her company today - they were past their sell by so couldn’t be used but they were absolutely perfect. Complete madness!) couple of glasses of red. IMG_1622.jpg

2nd meal was, after all, the turkey, chopped up. I started out thinking ot mix in some vegetables and cook the whole lot together, but I found salady things in the fridge and just chopped them altogether. Not freezable, so I just had that mid afternoon. Nothing else needed 'til tomorrow.
