What have you eaten today? (Low carb forum)

Really starting to resort to odd combinations of leftovers by now.
Tested positive for covid on monday, neighbour was happy to get me groceries on tuesday morning. But making a shopping list when not hungry at all is close to impossible so there was not much on the list, and instead of a head of endive and lettuce he bought me pre-cut bags, which obviously won't last more than a couple of days.

Oddly, the bag of spinach which was reduced price because it was on its use by date 6 days ago is still perfectly fine!

So today was the last of some leftover sparerib meat, mixed with onion, some sorry looking mushrooms (use by date last tuesday), an onion and some Turkish sausage to make it a bit more with spinach salad.
Not bad at all considering my lack of planning!

The very last of the spinach will go to the guinea pigs tomorrow, they've eaten lots of pre-cut leafy greens for 3 days but after that it has been mainly carrots and stolen sugar beet for them.

I'll stick to quarantine one more day so I guess tomorrow will be bacon and eggs or such.
Rules say to stay in quarantine for at least 5 days, plus one day of being free from symptoms. Still coughing but I've been coughing for two months so I doubt this will suddenly change.

New years eve turned out more fun than expected, multiple neighbours had covid too during the past week so I was invited for pea soup at one neighbour and enjoyed far off fireworks with my other neighbour and his son at midnight, followed by drinks and playing with kittens. :)

Saturday 31 December bed 7 4 FBG 6 3 still have vertigo but it improves once I start moving. Went visiting SIL, her daughters and their families as they head back to Manchester & Australia next week. Exhausted again once I got back and I had to force myself to go buy some food.

B. Just TAG

L. Black tea.

D. A few nibbly things. A mini chicken pie and a mini steak pie. 4 grilled prawns. Later, yet another wrap with lettuce, tomato, rare brisket, mustard and mayo The last LC creme brulee with 3 sliced strawberries.

First totally dry New Year in a long time but neither of us could face a drink.

Sunday 1 January bed 6.8 FBG 6.5

B. TAG and 3 LC crackers with prawns and Marie Rose

L. 4 tiny (I mean tiny) prawn toasts, 2 mini spring rolls and a mini chicken pie. Not my usual fare but not doing much damage and it's simple.

D. Yet another wrap. Out of rare brisket so it was lettuce, tomato and prawn with Marie Rose. Vegetable bouillon.

Son and family arrived for a visit - I'm still alcohol free!

Welcome back @shelley262 and sorry to read of your troubled times. May the New Year bring better times.

@DJC3 - I love that featherblade recipe. So tender and delicious in equal measure.
 
Two slices of toast and vegimite for breakfast.
Chicken pie without the lid from the pie shop for lunch.
Ham and tomato sandwich for supper at six.

Glass of single malt before bed.

I made it to 2023, but now with the VAD law legal in Queensland, it's time for me to re-access my quality of life with my palliative care GP and palliative care team from the base hospital.

CC little chocolate pots are the Coconut Collaborative little chocolate pots. They are tiny, non dairy and vegan. They are a glorious chocolate fix though. 8g of carbs but on a not too carby day they are a delight (plus they are not doing much to my BGs). They make loads of things but some are a bit too carby. I do love their snowconut dipped sticks which are non dairy ice lollies as well. View attachment 58495

Woke earlier than planned and realised I was really hungry so
B: 3 eggs scrambled with a bit of cheese, cwc
Skipped lunch
D: roast turkey, cabbage, carrots and buttery leeks. Ice cream with added brandy butter. 1 glass white wine, topped up with double soda water.

Through the day 5 sqs of dark coffee chocolate disappeared.

I have an hba1c on Wednesday, wish it had been before all this indulgence ( it's been cancelled 3 times)
 
No breakfast, went out for a solitary walk instead. Very quiet out and about. Perfect as the rain had stopped and the sun was out.
lunch at 1pm was my usual Sunday breakfast, egg, bacon, sausage, mushroom, black coffee.
dinner chicken sag aloo, and a bottle of beer.(My concession to the new year festive menu)
drank plenty of water and coffee during the day.
 
I seem to recall a couple of people on here experimenting with oat fibre in recipes. I have a packet but I’ve no idea why. I’m wondering if I can use it instead of flour to dust some pheasant portions before frying and adding to a casserole. Any thoughts?

Hiya I've used oat fibre a lot when doing LC baking mainly
to reduce the amount of almond flour used in baking so results not as heavy - it's particularly good in low carb bread I used to find although not made for a while! I also once experimented with a low carb berry crumble using half oat fibre and half almond to rub the butter in it worked well I seem to remember.i also used it to make LC seeded crackers but it's quite dry so use it conservatively at first and you'll need to adjust the water amount used! Gosh it's so long since I've had motivation and time to bake maybe back to it in 2023......
@DJC3 it's quite light and flyaway but as you are not serving them as fried portions but adding to casserole may be worth an experiment let us know

Thank you. I thought it was you who’d experimented with it. I’ll post results later. I’m just hoping it might help to thicken the liquid like flour does.
Ps will also report back on the DGF wraps when they arrive.
 
Success today at Sainsbury's managed to buy 2 loaves of hilo bread it's 5 gram of carb per slice so more than some low carb breads but it's a good thick slice. I take out of wrapper and cut strips of kitchen towel which I use to interleave between slices to keep slices separate then put back in bag interleaved and then freeze so can just toast a piece from frozen when needed.
Use my freezer a lot to portion so for example the chips I eat -I par boil new potatoes in their skins,cool them and then slice into chip shapes I open freeze them by using an oven tray lined with a reusable silicone sheet to place chips on.when fully frozen they can be put into a bag or container and keep separate. I can then just do a few chips which I cook usually in oven with some duck or goose fat.
10ish small amount of kefir with my supplements and coffee
12ish chicken leg leftover from yesterday and spoon of kimchi
3ish black tea and a DGF ginger cookie from freezer I prefer their LC cookies frozen more crispy
5ish a few of my hm oven chips,seabass cooked in corriander butter and green beans followed by DGF LC chocolate orange brownie warmed and served with yoghurt.

L- slices of roast beef topped with cream cheese and ginger&tumeric sauerkraut.
D- the pheasant casserole. @shelley262 I don’t think the oat fibre thickened the sauce ( didn’t really matter as it reduced a lot during cooking) I do think that the light dusting before searing the joints helped to give it a nice golden crust though. Served with broccoli and sprouts which are getting a bit tired now. Cup of tea and DGF cookie. IMG_1648.jpg

I’m going to try your chip method. I’ve read about the effect of freezing on starch but never been brave enough to try.

I also prefer the DGF cookies frozen.

I tried first with two small chips and no spike now eat 4 chips IE about one or one and a half new potatoes cut into chips without any impact on my bgs But I also do cook them in fat which may help as well as the freezing effect. Test and see but I think if you control the amount it is less likely to impact. I do same with roast potatoes and stick to one as bigger.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a food dr bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: butter chicken with cauliflower rice followed by DGF Xmas pudding and home made brandy butter.

Slice of xmas cake and a mug of black coffee, with the blue care nurse for smoko.
Two sausages and mashed pumpkin with diced up raw small onion mixed in, butter mushroom gravy for lunch, sevaral bits of stone fruit for lunch.
Ham and cheese sandwich for supper at six.

Glass or two of single malt before bedtime.
 
Morning all. A Very Belated Happy New Year to you all and a big thank you for being there for me since I joined you. Been having some problems recently so haven't posted at all. Hopefully things are starting to improve so for today I'm having airfried belly pork on it's own. Trying to cut down on carbs as much as possible for the time being. (Like the idea of freezing chips before you cook them tho.) I'm not really back in the proper way of eating yet. Been feeling really sorry for myself as haven't seen a soul to talk to face to face since before Christmas. The phone has been my lifeline. But it's a new year and a new chance to get this demon under control.
 
So far today I have had a - Lupin pancake with melted butter, dash of lemon juice and a dash of stevia. No tea as I have cut down. All made by my husband as I was poorly for a few days.
Dinner - Courgetti bolognaise all home made, tones of herbs (half the jar fell in) oh well! Pudding was the left over lupin bean pancake with a drizzle of cream, now I really am contently stuffed :joyful:

2 January bed 7 4 FBG 6.8 - I still can't shake this bug off. It is really horrid. One moment you feel not too bad, the next vertigo and nausea kicks in again. It seems loads of people around here have it and, it is not inspiring to learn that some have had it for 7 weeks!!we all seem to have tge same symptomsvand those who have managed to see a Doctor have just been told "It's viral. Go home and take paracetamol." Guess I will stick with steam inhalation and paracetamol then?

L. Thought I'd better eat something so had 4 of these mini pies - 2 steak and 2 chicken. Note to self - 2 mini pies are fine. 4 mini pies are not! BGs hit 9.1

D. Vegetable bouillon and another wrap with lettuce, tomato, prawns and Marie Rose sauce. Later, a raspberry PHD bar.
