What have you eaten today? (Low carb forum)

Mrs mitten cooked cheese scones and I weighed up the carbs/calories amounts of a single scone and thought... nah, I'll have a plate of bacon and cabbage and onion fried in butter instead of one measly, although lovely scone for abut the same amount of cals, and waaaay less carbs.

I did nibble a crumb though just to appraise the goods, didn't want any more, although very nice.
 
M&S sell some dinky mini apples. Expensive but about a quarter of the size of a normal apple. They’re called ‘rockit’ and might meet your ‘whole apple’ craving.

I’ve had a few recently and recommend.

0630-0700 2 double espresso with double cream
1100 Kong Strong sugar free caffeine drink
1200 100g Lidl smoked sausage with cheese (2.6g carb)
1530 cortado (Costa) - maybe 3g carb?
1700 Kong Strong sugar free caffeine drink
1930 Chicken Thuriwala with mushroom instead of potato. Bit of pickle. Estimated 10g carb
2100 - 2200 2x zero sugar Salute lagers
2230 one large rum


Total somewhere around 17-18g carb max. Still in (moderate) ketosis.
Yes, but how much caffeine? I'd not sleep.

Maybe I am just a delicate sort after all. :)
 
Are you, or have you, tested bg?
Especially now you've been doing it a few days (I have a theory that bg can build up over days, unscientific and unproven)
Yes I have been testing and for me no impact at all But as you know we are all individuals and also I really do just eat the very thin peel of one apple and a small amount of lemon and lime zest not convinced lots of carbs there to react to.
 
First thing before Yoga class- at long last I've made time to go back to yoga - kefir with lemon and lime zest
1.30ish three eggs scrambled in butter with one slice of LC toast followed by one green apple rind and 100% chocolate
Mid pm LC ginger cookie
5ish salmon in lemon butter with a few peas and pre cooked and frozen two small potatoes cooked in duck fat and one glass of dry white followed by last of hm LC rhubarb crumble warmed and eaten with yoghurt.
Hi shelley262, I'm very curious. I follow all your information on gut health and I would like to know what there is in green apple skins that is so good for the gut? Apples put my level up so will the skins?

Oddly enough, whatever the amount of caffeine, it doesn't stop me sleeping. In fact, I don't drink it very often; it doesn't give me any kind of lift and doesn't quench my thirst, so I don't bother most of the time. It's another one of those ways in which people are different.

Edit: Neil finds that a cup of coffee puts his blood pressure up - he is having slight problems right now and taking Ramipril - the dose has just been increased and it seems to be pushing his BP too low, so he corrects it with a cup of coffee. Just as well I don't drink it then - my blood pressure is permenantly too high, despite medication.

Hi it's the fibre that the bacteria like but like everything else there are more bg friendly alternatives if apple skins put your bgs up eg olives or a few nuts -I personally don't think I could eat a whole apple without impact on my bgs, so many of the ones on sale are way too sweet and red ones especially - I find the greener they are the less sugary they are. The skin, like a lot of fibre only gets digested in the gut by gut bacteria I believe but you only need small amounts and we all are different about what helps us.
Edit to add also one of best things for Akkermansia is simply fasting as they love cleaning up the gut once we are not eating for a longish - over 12 hour period- hence my regular time restricted eating. Also to say I'm really not a gut health expert I just listen and read about gut health and experiment on myself working towards a way of life and eating that keeps me as well as possible

Morning all. Thanks @shelley262. I will have to try it for the problems I have. The Kefir is helping too. I'm having sausages, egg, mushrooms and tomatoes for lunch today and a piece of cheese for tea. I am in the 7's and want to get back down to the 5's (bg). My discipline went out of the window so now I'm trying to close the window! Have a great weekend everyone.

Do you use ketone strips to test for ketones?
I too want to do nutritional ketosis. My high ldl is a problem. Dont want to eat chicken, cheese, butter as am on statin.
 
Breakfast: bacon and eggs. This seems to be the safest option for me. Very much reduced amount of insulin - about a third of what I was using a few weeks ago.

2nd meal: more of the chicken. I made the curry yesterday and it was good - apart from the fact that I used coconut cream to give it some body and it rather spoiled it for me. Maybe it had been in the cupboard too long. It was still edible but I threw the rest away this morning. There's still a lot of chicken left in the pack that Neil bought so today I will make buttered chicken.

The china and glass are all washed, dried and in boxes for Neil to carry back to his little kitchen where they will remain until he gets the wall unit finished. There are some things which I have set aside to go to the charity shop but there's lots which, although I'll never use them, I can't part with. My mother collected glassware and most of this is her collection (plus a couple of sets of "fancy" glasses which were leaving gifts when Tom retired from the College and then, years later, when I did).

Brekkie was usual slice LC toast and copious tea.
Lunch was ham salad.
Supper will be two lamb chops with chopped mushrooms fried in the same pan.
Newsflash: I finally plucked up the courage to cook a whole swede in the microwave and it was a brilliant success. I put knife dents all over a medium swede then placed it on kitchen paper in a pyrex dish. Did 15 mins on high, then turned over and did another 15 mins. Took it out and when cool cut easily in thick slices, removed skin, and mashed with seasoning. Microwave didnt explode and now I can return to enjoying swede again. Two bags gone into freezer for cottage pies. If I hadn’t needed to mash it 10 mins a side might have been enough. Next time for mash I will do it while still warm so I can mix in some butter.

By “ dents” do you mean little cuts or not pierce the skin?
 
Finished our last batch of home preserved olives in oil so prepared more this morning I use a tin of pitted black olives in brine (Waitrose essentials) strain and then put in kilner jar with extra virgin olive oil and a few sprigs of Rosemary from the garden. while out there in garden spotted how well my mint is growing back so also snipped some to make a raita for with our curry. I love the plump olives and use all the olive oil for cooking and salad dressing - nothing goes to waste! Especially as good olive oil gets pricier and pricier! I also prepared some sauerkraut with cabbage and root ginger.

10ish kefir with lemon and lime zest
Almost 2pm - got a bit distracted - scrambled three eggs with butter and one slice of low carb toast followed by an apple rind and 100% chocolate
5ish hm LC chicken curry with my mint raita and a new discovery from Deliciously Guilt Free a low carb Roti it really was a winner for me I cooked in frying pan for a few mins with small blob of butter wow they have tumeric and cummin seeds in and lovely texture.

Sitting enjoying glass of red wine but just about to have LC blondie and decaffeinated coffee.
 
Early yoga so home to a brunch of bolognaise omelette, a new version but worked well using a couple of tablespoons of last nights leftove bolognaise sauce in the centre of a 2 egg omelette. Bit of cheese grated on, yum
Went to aldi in nearby town. Omg was so busy! Nearly turned tail and headed home. Left the boys to do the main shop while I went to M&S next door to return soem items and get eggs.
D: was 2 sausages with fried onions. Dessert of 1 sq hm lc icecream and 1 so hm lc coffee cake.
Saturday so a glass white wine with a lot of soda
