What have you eaten today? (Low carb forum)

@RosemaryJackson @DJC3 @Goonergal and anyone else interested in gut health and diet I've just been listening to episode 260 of Cynthia Furlows Everyday wellness weekly podcast this is the latest one with Dr William Li and about halfway in there is a particularly interesting bit about Akkermansia gut bacteria that you may find explains a bit more about it and why it is good for your gut.
You can also search for this episode wherever you listen to your podcasts for example I listen on Spotify but put a generic link in because people listen to podcasts on different platforms.
Bear with Cynthias adverts she does sell a lot of products in America but think Dr Lis stuff is good stuff and worth sticking through her adverts.
Very interesting stuff about importance of Akkermansia to cancer recovery for example.

Thanks for the heads up re the podcast @shelley262 I will have a listen. I tend to listen to podcasts at bedtime but often nod off before they’re finished! I’ll listen to this one earlier.
Thanks also @PenguinMum for the microwave swede tip. I remember hearing this years ago but had completely forgotten it, and never tried it.
Today’s been a very undisciplined eating day, can’t actually remember half of the snacks I’ve nibbled on.
I know there was cheese, nuts, a couple of DGF cakes and a tin of tuna.
Dinner was 2 x 0carb sausages and fried eggs. Then a glass of raspberry gin.
 
Do you use ketone strips to test for ketones?
I too want to do nutritional ketosis. My high ldl is a problem. Dont want to eat chicken, cheese, butter as am on statin.
No, just weestix. I know they're inaccurate but accurate enough for my purposes. You might want to look at how ldl is calculated - I don't really pay it any attention. Chicken, cheese and butter feature quite a lot in my eating.

Pan fry: Streaky Bacon x4, red onion, white cabbage, spring greens, radish, 2 tomatoes, little fennel, in a tsp of olive oil, seasoned with caraway seed, black pepper, garlic powder and salt.

Love the look of your meal, it’s exactly the sort of food I like.

Lunch - grated tofu fry, 1 egg omelet, mustard-spinach paste, beans fry, raw papaya-mango salad , shredded chicken fry 1spoon.
 
Morning all. Happy Mothers Day to all the Mums on here. Enjoy your special day, hopefully a pampering day! For my special menu I'm having barbecue ribs with mangetout and celeriac chips. My bg is up because yesterday I had some 85% chocolate which gave me acid reflux. I can't take the prescribed meds for it, so I had milk which obviously has sugar in it. Today will be a more careful day! :joyful:

My treat today is my weekly phone call to my brother. My children have always been told that I was privileged to be able to have them so need no gifts, just their continued presence in my life. Busy day, anyway. Have to start the prep for Tuesday's event - some baking and a vegetable dish. Thought I would shock them all by making a jewelled rice, but with cauliflower rice instead of basmati. ;)

Breakfast: bacon and egg but this time in the form of an omelette.

2nd meal: some more of the butter chicken from yesterday. It is supposed to be made with chicken breast, but I used chicken thigh because I prefer the flavour (and the cost). Mine is a lot more basic than the "official" recipe and is a lot less complicated, so it suits me.

@Annb - the reduction in insulin is definitely a win! Friday 17 March - bed 7.7 FBG 7.9 A busy day despite it being 1/2 day Friday at school as I was ferrying family here, there, everywhere. I also had to fit in my shopping in the afternoon as the boys are staying on Saturday.

Saturday 18 March - bed 7.1 FBG 7.8 An even more chaotic day. Thankfully, jujitsu was cancelled as the coach was unwell. The washing machine needed sorting (which Hubby fixed), and I wanted to finish ironing before the boys arrived.

L. Still crustless quiche. (I nibbled on this on and off all day).

D. Not a lot as I was dealing with boys wanting to eat at different times. 2 slices ox tongue, spiced ham, egg mayo, and a tiny bit of eldest grandson's GF cheesy garlic flatbread. 20230317_190132.jpg

Brekkie was usual slice LC toast and copious tea.
Lunch was ham salad.
Supper will be two lamb chops with chopped mushrooms fried in the same pan.
Newsflash: I finally plucked up the courage to cook a whole swede in the microwave and it was a brilliant success. I put knife dents all over a medium swede then placed it on kitchen paper in a pyrex dish. Did 15 mins on high, then turned over and did another 15 mins. Took it out and when cool cut easily in thick slices, removed skin, and mashed with seasoning. Microwave didnt explode and now I can return to enjoying swede again. Two bags gone into freezer for cottage pies. If I hadn’t needed to mash it 10 mins a side might have been enough. Next time for mash I will do it while still warm so I can mix in some butter.
The sooner I can get proper reading glasses the better. I read that as "Octopus tea!"

A small Greek yoghurt with my morning meds (my new research) then just now a very nice piece of cheese (Stratford Blue). Dinner will be leftover lamb with red cabbage vaguely Eastern European style but without the few diabetes-unfriendly ingredients.
 
@Annb - the reduction in insulin is definitely a win!
Not all that long ago I was taking 180 units of Humilog daily and BG was still in the 12-14 range. Now I am taking about 50 units daily and my BG is in the 5-9 range most of the time, other than first thing when it is 8-9. Something is going right.
 
@Annb so pleased to hear things are going better for you with your insulin management well done you.
I knew today was always going to be tough the first mother's day without my mum so deliberately took it easy and low key with easily prepared food.
10ish departure from my normal kefir made a cooked breakfast and served it on one of mums favourite plates.

1ish sauerkraut, kimchi, two baby tomatoes and olives with tin of sprats in olive oil ( they sell them as sardines but are actually sprats and I really enjoy them. Followed by my now usual apple peel and 100% chocolate

10ish a whole Ketonut. My son bought me 6 as a Mothers day gift so 5 are now safely in the freezer, each cut in half
1ish Sunday roast of chicken with carrots, green beans and broccoli, cooked for me. We had visitors so roast potatoes and stuffing was served. I had 1 tiny stuffing ball and 1 tiny roast. I also had 3 almond biscuits I'd made while they all ate tiramisu for dessert. 1 small glass red.
Oh, did have a few crisps while visitors had the pre lunch drink. No drink for me though.

About 5, another hm lc almond biscuit.

Now sat here at gone 7 trying not to eat again today.

1st day of new libre and everything is looking good. Fbg was lower than it has been in a month, and that's nothing to do with the libre as I hadn't activated it then. Morning around 7, rose to 9 over lunch but dropping gradually and down to 5.5
