What have you eaten today? (Low carb forum)

Wednesday 22 March - bed 6.8 FBG 7.1. A quieter day, thankfully, although the school decided to give eldest the first 2 periods off this week and next. It was mainly because he has been unsettled on Wednesdays as he doesn't regard them as "proper educational subjects." I can't say it, but I agree. Instead, he spent the time with me, and we got through a lot of his English homework.

B. After delivering grandson back at school & shopping, TAG, and a couple of M&S crackers with whipped cheese.

L. Bit of crustless quiche

D. I enjoyed the sea bass so much the other week that I had it again with spinach, tomato, and mushroom.

Smoked. Every time I've tried it, there are bones galore. I'm one of these people who, if I find a bone, is immediately put off eating anymore.
Weirdly, I also love a Dover Sole, but in that case, I prefer to get it on the bone and do my own filleting once it's cooked.
Mackerel, I'm afraid, has been the source of too many bones for my mind to accept it.
I'm the same when it comes to bones - that's why I won't eat herring or kippers. No way to get rid of those tiny, fine bones. I do waste quite a lot of smoked mackerel getting rid of the bits where there are bones, but I can manage it. Usually I prefer my fish to be without bones, other than skate or dogfish (which used to be called rock salmon but was neither salmon nor caught inshore) but neither of them have real bones - just cartiledge, and it's hard to get skate wings and impossible to get dogfish here.
 
Today my usual brekkie of slice of LC toast and copious tea.
Lunch was chopped salad, a finger each of cheddar, Shropshire Blue, chopped up, coleslaw and pickled silverskins. It looked quite a lot on the plate but was very satisfying.

Supper will be chunky cod fingers with cauli cheese.

have bought some smoked haddock for tomo as we haven’t had it for so long and will cook it a la Delia in Double cream with herbs.
@maglil that seabass did look good, I too LOVE Dover Sole and don’t mind peeling the flesh off the bones if I haven’t cooked it myself. I am hit and miss with mackerel but Mr PM does it well on the bbq.

PS. @DJC3 Happy birthday to Dennis hope he enjoys his cake! And his party!
 
10ish kefir with lemon zest
1ish two boiled eggs while out and a couple of squares of 100% chocolate
5ish chicken slow cooked with peppers served on bed of cabbage also small glass of red wine pudding my quick frozen yoghurt a few frozen raspberries mixed with a few spoons of yoghurt also added a sprinkle of freeze dried pomegranate which turned my pudding a lovely pink colour.

Way too much black coffee until 1pm. Then a pot of Earl Grey tea.
L- scrambled eggs and a slice of Schneiderbrot. Then joy of joys. one of the little Rockit apples from M&S that @Goonergal mentioned. I really enjoyed crunching a real apple again, no obvious effect on BG so I’m very happy.
D- mince and cabbage curry, takes 2 mins in instant pot so it’s my go to if I’m short of time or inclination. Garnish of things going off in the fridge ( fresh chillies, spring onions, chopped avocado). Followed by Double Gloucester cheese, walnuts and a glass of red.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a food dr bar.
Dinner: corned beef hash (corn beef, cauli rice and onion) with broccoli, Brussels and carrot followed by SF blackcurrant jelly and cream.

B: ff greek with milled seeds and 6 blueberries
L: 2 slices hilo toast with cheese on (in air fryer). 1 small avocado. 1 sq lc coffee cake.

Spent the afternoon baking proper biscuits for an event. Fatal. Recipe used golden syrup and rolling so it got all over my hands then into my mouth. Then baking multiple batches meant I tasted one from each. Bg went from 7 to 13. Took about 3 hours to come down.

I love skate wings Ann. I even eat as many of the bones as I can manage hoping there is some collagen in them. Will have to look that up!

In my opinion, the best fish ever is dogfish. Being a kind of shark, it doesn't seem to be very popular and fishermen just chuck it back because they don't have a market for it. Similar to monkfish, but better tasting, it just has a cartiledge along the length of its body so no bones to worry about. There was some talk about dogfish being endangered but I don't see how, there is little market for it - unless they catch lots and throw them back dead into the sea.
 
Just received information from diabetes nurse - she's not sounding too impressed by the low carbing but gives a hope that it might help my liver. She tells me that my HBa1c is 63 (9 February) down from 64 last September. I suppose that's a bit better but my HBa1c was 53 some months ago so it's a bit disappointing. The thing is, when I had my blood tests, nobody would give me the results, so I was unaware. Maybe I can get it back down by really low carb, which is what I am doing now.

Breakfast: cabbage with other veg, left over from yesterday with eggs.

2nd meal: will be salmon with ginger and garlic sauce.

2ish after yoga two boiled eggs with one slice of lc toast followed by 100% chocolate and LC cookie
5ish salmon with lemon butter, a few peas and a couple of small new potatoes - pre cooked and open frozen cut into chip shapes - cooked from frozen in duck fat, also glass of dry white wine. For pudding I'd slow cooked some rhubarb earlier with ginger root and lemon and had a spoon of the cooked rhubarb with yoghurt.

Just had my salmon with garlic and ginger sauce. Sadly, the piece of salmon was very small and I could have eaten twice the amount. It was really good though. To fill a pretty large hole I had 2 tiny slices of low carb bread (3 grams carb total) with plenty of butter. 15 units of insulin before breakfast and before 2nd meal and BG has been below 6 all day so far.

Em is coming for a sleepover tonight because her mum is going to the mainland on the early ferry tomorrow. I'll have to make some pancakes for her breakfast since I am getting low on supplies - Neil hasn't been well enough to go shopping, so I'll have to last out until Monday with what is in the freezer. Fine for me, but I don't think what is there will suit Em.
