What have you eaten today? (Low carb forum)

B- cheesy scrambled eggs on Schneiderbrot.
L- slice of cold brisket with blue cheese and a spoonful of latest batch of h/m sauerkraut. It contains red cabbage and fresh ginger which gives it a good kick. Few spoons h/m yoghurt.
D- sirloin steak with onions and mushrooms, Halloumi fries and salad followed by black tea and a DGF cookie. Now enjoying a glass of raspberry gin and some peace and quiet. IMG_2070.jpg
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a food dr bar.
Skipped lunch.
Mid afternoon: black coffee and DGF millionaires shortbread.
Dinner: Brie and cranberry on a low carb roll with coleslaw and baby tomatoes followed by DGF chocolate brownie and cream.

Thursday 23 March - bed 6.8 FBG 5.9. Bloodsucking morning. First time in 3 years. It was all fairly uneventful, and she found a vein on 1st stab (usually takes 3!). It's disappointing that I now have to join the telephone scrum at 8 am from next Wednesday/Thursday to get a review appointment.

B. Nothing - just water.

L. TAG, 2 LC crackers with whipped cheese

D. 3 egg omelette with pancetta, tomato, mushrooms, and spinach. CC Little chocolate pot. 20230323_190643.jpg

I've just went absolutely mental! and went over my quota for the day, in cals not carbs though.

not sure what's spurred it but felt famished and was about to do something nuts that probably wouldn't have impacted my health well.

ummed an ahhed for about 10 mins about going to the shop then decided to go nuts in a lower carb fashion

just had a second dinner of an avocado, fried aubergine, courgette, greens half a tin of tomatoes.

least I'm full now, I think!
 
Fried, in butter. I score the skin, salt it with ground rock salt, then skin side down in a frying pan. I don't keep it very hot, but I vary the temperature to get the skin crisp. Before I turn it, I add a squeeze of lemon juice over the fillets. I only give them 1 min tops on the other side.

Thanks. I’ll give your method a try next time. They look a lot more appetising than those I did last week wrapped in foil in the oven. ( they were whole fish though, not fillets)
 
Woke feeling poorly with a very sore throat.
B: small ff greek with seeds and berries
L: steak and mushrooms (was supposed to be last nights dinner but didn't feel like it then). A nut bar
5pm a chunk cheese
8pm at a yoga event they handed out "healthy snacks" of dates spread with peanut butter then covered in chocolate. I ate 3!, purely in the interests of research as I'm currently wearing a libre.
8:30 about 50g cheese as bg shooting up.
Ended up with a rise to 10, from 5 but only for an hour. Back to 6 by 10pm.

In future maybe just 1 date, then no need for cheese after . But will I be able to stop at 1? The sharpness of the graph was scary, so maybe.

shame, used to love a date, my nana used to have one of those trays with the little long fork in them on the side of her armchair always, so good memories attached.
 
Morning all. Todays the day! My family have arrived from USA and we are meeting for lunch when I have ordered rack of ribs, with salad, no chips. We will be with them all over the weekend so I doubt I'll be posting tomorrow. The whole family is meeting up...all 17 of us. Have a great weekend everyone. :joyful: :D:singing:

shame, used to love a date, my nana used to have one of those trays with the little long fork in them on the side of her armchair always, so good memories attached.
I have eaten dates in recent months - not many but usually for experimental reasons (developing recipes). I didn't find deglet dates too bad but medjool dates are an absolute disaster for my BG. Actually, not keen on medjools; they really are too sweet for comfort.

In recent years I've had no problem stopping at one date. I've never really liked very sweet anything. Now it's a no-date-at-all regime. Not worth the resulting BG or the curling up tongue. For me, curling-up-tongue syndrome is caused by any very sweet substance unless balanced by something acidic/citrussy.
 
Breakfast: bacon and egg. Had to cut it up small because Em was having her breakfast (pancakes, bacon and maple syrup) at the only space available at the table, so I had to sit in the big chair with mine. The table is like a jungle at the moment - I rook all the plants in pots down from the newly cleaned window sill but can't find any where to put them, so they are still all sat on newspaper on the table. One dining space available only.

Alistair made a packed lunch for Em today since supplies of things she would eat are short just now - I'm hoping Neil will feel up to shopping on Monday, or I'll be in trouble for fresh food. As it is, I'll need to ask Alistair to find time to get me some cheese, yoghurt and some milk. Those will definitely run out before Monday, especially with Em here.

2nd meal for me will be meatballs in tomato sauce. Might crush the meatballs, add garlic and make it into a ragout. I do have some squashes and a very small aubergine to have with it. Oh yes, and some courgettes, so it might end up being south Mediterranean/North African ragout.
 
BG is staying low despite cutting insulin right down. 15 units was a bit too much with breakfast but I did taste a tiny pancake to make sure the mixture was right before a make the batch and it did shove BG up to 8.8 for a couple of hours, but it is back down now to 6.5. For me that's good.

An old friend (we used to work together) is going to come here for lunch one day next week and I've been wondering what I can offer her. I think I'll have to make bread but am coming round to the idea of courgetti bolognese with a chopped salad. That should be easy enough to do. Having stood at the hob to make a pile of pancakes for Em, I have realised that standing too long to prep and cook anything will not be a good idea. I can sit and do the prep, even though it is awkward and the standing at the stove shouldn't be too long. The bread will be the hardest part. The bread making machine doesn't make a good job of 100% wholemeal so I will have to make it by hand. Wish I still had a dough hook - the Kitchen Aid machine doesn't have one and the old Kenwood one didn't fit.

What about a low carb cracker instead of the bread? It would be a lot less physical exertion for you?
