What have you eaten today? (Low carb forum)

Breakfast will be ham and cheese in a lettuce wrap.
It was a mistake to reduce my basal dose as demanded by the diabetes nurse.
Wow, what a great idea with the lettuce leaf. That’s being added to my menu for sure
My diabetes nurse wanted to adjust my basal to try and get my fasting BSL to be in the 7’s rather than the high fives, low sixes. Not sure why

In my case, apparently, it is because of my age (77). They think the lower level might damage my heart, the reduced amount of food might damage my liver and kidneys and there would be a danger of slipping, all unaware, into a hypo. One size fits all, as usual. In my case it has shoved my BG high enough to make me feel ill, so I'm trying to get back to where I was a few weeks ago.

The lettuce leaves were quite small so ended up being a lettuce sandwich rather than a wrap, but it worked just as well.
 
I have to say the SRSLY tortillas do actually have the texture of tortillas. I've never managed to get the DGF wraps yet. For quesadilla, I have no doubt either would work. Tuna is certainly not a usual quesadilla filling, but I didn't see any reason why it wouldn't work. It was very, very filling. I've always liked a quesadilla, so it's great to have a LC version.
Oooh, these sound great. I had chilli with the family last night, but they have theirs with tortilla chips and rice. I easily subbed the rice but had to forgo the tortilla. I wonder if these would work if I sliced them into triangles and air fried them?

BG has been sticking at 11.2 all morning so far. Diabetes is trying to take control of me and I'm trying to fight back. It was a mistake to reduce my basal dose as demanded by the diabetes nurse. That's when BG went up and stayed up, despite going back to the previous dose over a week ago. Sometimes I think this condition is a nasty, sentient entity which swipes back every time I try to reduce its impact. Other times, I think I can do this. Right now, I'm not sure but I will keep going. Wish it didn't make me so hungry though.
Good for you for the fight back and do the best you can attitude. What You are trying to do isn’t easy, far from it, there’s so much to learn and deal with; but so important to take the best care of ourselves we can. Be pleased with yourself for making yourself putting in so much effort, that’s an achievement.
 
Lots to do this morning plus my yoga class so just black coffee until lunchtime
Lunchtime fried mushrooms and two eggs in olive oil and served on LC toast followed by kefir and the peel of one apple
Mid pm one slice of toasted LC fruit loaf
Dinner my usual Friday salmon in lemon butter served today with green beans and glass of dry white wine followed by LC blondie with spoon of yoghurt.
@Stardew I cut my LC wrap into triangles and baked in air fryer think important thing is to turn them and keep an eye to make sure cooked to right crispness - I didn't leave mine in long enough although if cool on a cooling rack they do crisp up more. Hope it works for you I used the plain wraps from deliciously guilt free (DGF) but may try with their roti wraps which have turmeric and cumin seeds in.

@maglil55 great news about your eyes, the chicken cauli Alfredo looks great, have you adapted a recipe for this or is it a fully formed lc version?

L- Egg mayo & salad in SLC roll 1 square Lindt 90%
D- DD keto Chicken Caprese casserole, green salad. Couple of glasses red wine. IMG_2269.jpg

I used to fry tortilla triangles in Olive Oil to go with chilli. I haven't tried it with the SRSLY Mediterranean tortilla, but the texture is very tortilla like. In an air fryer, do you have the oven type or a drawer version? I was having a nice little memory revival with @AndBreathe a few days ago. We both have the oven type, and lightweight things fly around the air fryer. I tend to use 2 of the wire racks to stop them from taking off! The quesadilla certainly worked, as should a burrito. Mexican is back on the agenda.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and food dr bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: LC roll with Brie and cranberry with coleslaw followed by DGF orange and chocolate brownie and cream.

It's a Diet Doctor recipe (but with my usual additions!) - spinach, a few santini tomatoes, mushrooms, touch of tobacco, black pepper. Nothing problematic. It is very tasty, and it's even better 2nd day.

I was highly delighted with my eye results. Even the bloodshot bit is finally starting to drain away. Today, I finally got an appointment with the GP for my diabetic results and a medication review. HbA1c was up a bit at 53, but I think she was rather surprised when I told her, "No, I am not increasing the diabetic meds." I did explain that I've had quite a few bugs since Christmas, so keeping the BGs under control isn't easy. I informed her I'm trying to reduce meds, not increase them. Then came the statin conversation! LDL was higher than I expected, but I've stalled that one, too, since any adjustments to my diet will take LDL into account. Oddly, the one where I would have agreed to an adjustment, she didn't. My BP was up at the hospital checks and the surgery check. However, I've done some home checks now, and it's fine. We compromised on another A1c/ cholesterol check in 3 months.

Well done standing your ground, the constant health issues you’ve been plagued with the last few months would be bound to raise your HbA1c.
Ahh a DD recipe! I thought it looked familiar, I’m pretty sure I’ve made it but no doubt with different additions (certainly no tobacco lol )
 
Random few bits over the course of the day as was in hospital this afternoon, hard boiled eggs, corned beef, some dark chocolate.

Had a bit of a whoops with some samosas after some surprising news but I reckon I’m still within carb/calorie limits for me.

Got some strawberries but don’t want to push it tonight although I fancy them.

Should have kept the dark choc melted it and put over the strawberries and then resisted the samosa earlier but what the hey, I’ll have the strawbs tomorrow.
 
Woke really early.
Can't remember any breakfast but might have had 2 hm lc almond biscuit at some point
L: ham and cheese roll up with a sliced gherkin pickle in the middle, but it was cold and I was cold fancying something warm so tried roll up no 2 in the microwave 30 seconds. Quite nice but cheese, which was on the outside, melted and ran. So no 3 had the ham on the outside and worked perfectly :)
D: meatballs in tomato sauce served on cabbage. Boys had spaghetti. Coffee ice cream. 1 rose wine
 
Great to know that airfrying the tortillas should work. I've got the air fryers with the drawers. I'm desperate to order some tortillas but we have no freezer space and it all needs sorting out so we can defrost it before I stock up.

Breakfast: a Fulfil chocolate and salted caramel bar, with coffee and cream. Didn't actually feel like anything but needed to eat something to take meds.

Lunch: 1 slice Hovis seed sensations toast with ham, firecracker cheese (red Leicester with chipotle), a side salad and coleslaw.

Dinner: My take on Nigella's marmite spaghetti recipe, which was an old favourite.

Mushrooms fried in butter and marmite, then I added courgetti, parmesan, a spoon of cream cheese and lots of black pepper. With the liquid out of the veg, it made a lovely sauce. Garnished it with a bit more cream cheese and some onion seeds. Definitely a new go-to meal for me.

I have some 100% dark chocolate (Montezuma's Absolute Black) so I'm having a piece before bed. It used to taste like bitter fag ashes to me and now I really love it.
 
I was good today. Made some cookies with peanut butter nibs in them for Em. Actually made about twice as many as I expected. Al called in this evening (something to do with the new shower installation at his house which Neil is helping with) and I offloaded the whole lot on him to take home. Never a nibble!

Not too much of a victory really - I was feeling pretty nauseous all afternoon so didn't want anything to eat. Didn't bother either with the curry - just tea and more tea.
 
Breakfast: 2 Portabello mushrooms fried in butter and 2 eggs, fried in the same butter. Half a slice of wholemeal toast (home made and I reckon about 15 grams carb in half a slice). I know I am wanting to cut carbs to as close to zero as I can, but I need the fibre.

No promises about a 2nd meal today. Inside's a bit unhappy again.

They can fly happily in the drawer then with no chance of escape . When it comes to freezing the tortillas, I separate them with greaseproof. I discovered this with SRSLY Pizza bases. They are impossible to separate when frozen unless you separate them. I keep them in the same bags, but slide greaseproof circles in-between.

Amazing how tastes change, it’s a nice thing to have now and then. And I thought dark was nasty before.

Had a bit of milk chocolate over Easter, about a thumbnail of the kids egg as dad tax, and it was far too sickly and sweet, I could eat loads of it before.

Prefer the dark by far, 80% upwards, not sure I’ve tried 100% though. Will seek some out.
