What have you eaten today? (Low carb forum)

Another odd result. Yesterday's 2nd meal was Kerelan chicken. Spicy but not high in carbs. Took 40 units of insulin but that obviously wasn't enough because BG was on the high side until early morning today.

2nd meal today was a pork chop with braised cabbage, apple and onion. Probably marginally higher in carbs than the chicken. Took 45 units of insulin to cover that and have been struggling to keep BG above 3 for the rest of the evening. Didn't realise a hypo was coming on until it was in full flow because I was on the phone to my brother and not paying attention. I did hear the alarm on my Libre but didn't identify it. Actually wandered around the room to see what was beeping and didn't notice it. Now it is up to 4.5 after several carby things so I can go to bed.

Maybe I should take the insulin after eating when I can see what effect the food has had.
Sometimes I’ll take half or two thirds before the meal and then wait to see what happens before taking more. Especially if there’s lots of protein or fat as that seems to take longer to react to.
 
Breakfast/Lunch: soft boiled eggs with chopped up bacon soliders
Planned dinner: egg, bacon, and chicken salad (lettuce, spinach, couple of tomato slices), and some mayo

Planning to make a sausage casserole for tomorrow too - cooked heck sausage, cooked cauliflower, cooked broccoli, cream cheese mixed in, and some cheddar on top then baked in the oven until golden
 
Interesting yes my bgs were fine too 2 hours on so maybe I could cope with larger amount. I used a lot of olive oil too so I'm sure that helped.

Hummus is a strange thing for me, it doesn't need nearly as much insulin as I would expect according to the carbs. And I definitely eat more than a few teaspoons too, it's one of my favourite midnight snacks to have with chicory leaves.
It may be it's the same for you and carbs from hummus don't act the same as other carbs.

Hummus rarely affects my bg too, it so odd how some things don't and others do.

glad cause its easy and cheapish to make really and I can eat it until the cows come home.

Snacks after dinner: kiwi fruit, 95% chocolate, protein bar, milkshake (hazelnut "milk", sugar free drinking choc, unflavoured faba protein powder, psyllium husk)
Hi All back from Estepona and a perfect week with family, lovely weather, great food and Ribera del Duero (the only red wine I will now drink). The cost of eating out or just having coffee was so much less than what you would expect. Similarly fresh food in supermarket much cheaper than here. Ate grilled sole on the bone 5 nights and Turbot fillets once. Other night we bbqd meat and accompanied salad. Wore a Libre and though choices were good the portions were large and we had lunch out 3 days after finding a great beach bar. Some great succulent olives offered everywhere. Need to get used to eating less!
Sat evening we got back exhausted and ordered Indian t/a and I had cauli bhajee and Tandoori King Prawns, couple glasses Rose.
Sunday brekkie slice LC toast (while I was away I had slice of Sesame Ryvita I took with me) and lots of tea (took English tea bags with me also).
Lunch was 3 buttery scrambled eggs.
Supper was half a bag of scampi with cauli cheese.
Agree with @samcham the Sainsbury’s frozen cauli cheese is great, tried the Asda one once and was so inferior though their 4 portion packs of cauli rice are great.
today same brekkie.
Lunch (after doing big shop) was egg mayo with lettuce, one tomato and bit of cucumber.
Supper tonight will Bolognese on green beans with Parmesan on top.
 
Just like to thank all of you regular contributers to this forum and the not so regular ones. I was diagnosed with a Hba1C of 112 (!) after chemo and steroids in 2022 with the "watch what you eat" tag line from health professionals. This website but particularly this thread gave me a great opportunity to learn about low carb and pinch some recipe ideas from you all. Latest Hba1c is 42 (cannot tell you how happy that made me). Now to keep on keeping on at the low carbing and lurking on here to see what bright ideas you creative people have for recipes. A huge and heartfelt thank you.
 
@Nicki70 congratulations on your results well done you. You are always welcome too to join in and share your food on any day. I've been doing it for almost 6 years now with a few gaps for personal reasons and consequent lack of time but I do find it helps me to stay accountable!I
@PenguinMum so pleased you enjoyed your Spanish holiday and were able to find low carb food that you liked and felt like a treat too - I've seen on the news how warm it has been in Southern Spain. I'm not keen on very hot weather but it's been chilly here until today!
Today's food
10ish small portion of kefir
1ish fried a mushroom and two eggs in olive oil and served on low carb toast followed by a few squares of 100% chocolate
3ish slice of toasted low carb fruit loaf
5ish steak, local asparagus and mushrooms with glass of red wine you it's Monday and I usually abstain but it's a bank holiday! Good excuse for this month with three bank holidays..... Pudding L c Blondie with yoghurt.
 
Can I ask how people find the seriously low carb stuff? I see they do bread, pizza, buns etc. I usually just avoid these but it would be nice to have options.

Hi and btw good to see you on this friendly thread. I buy seriously low carb rolls and also their fruit loaf. I buy enough to get free postage and then split it into portions and freeze. It's easy to toast from frozen or get a roll out night before and stick it in fridge ready for following day. I don't think it's same as bread but it's reasonable and I really enjoy the toasted fruit bread.
For my usual low carb bread though I usually buy Hilo from Sainsburys as it's more substantial but slightly higher carb. I also split this then freeze and toast from frozen.
If you like wraps or rotis s I'd recommend

A friend has also successfully used one of the DGF wraps as a pizza base and I'm going to experiment using one as a quiche base if get time in a few days.
Hope you find some stuff you like. I've been doing low carb for 6 years now and it's so good that there are some reasonable less processed alternatives out there.
Edit not everyone can tolerate some of the low carb breads as many are not gluten free but the deliciously guilt free wraps are gluten free which is a plus for the gluten intolerant in our community

D. I had 1/3rd of a Fulfil bar, and it made me feel queasy. Much later, I had a toastie - 2 slices of SRSLY, M&S spiced ham, Emmental cheese slice.
The ever favourite CC little chocolate pot.

I feel better after a lot of water. Back on the school runs tomorrow.

I'm a fan of SRSLY products. I use their bread, artisan seeded rolls, fruit loaf, tortilla wraps, pizza bases, and pickle.

Like @shelley262, I keep the bakery products in the freezer and remove them as I need them.

The bread I have for toast mostly, but it is nice for sandwiches too. Today, I used it for a toastie. It is my favourite out of all the LC breads I've tried. I don't like their large rolls, but I do like the artisan seeded version - burgers - and another use is tuna melts.

Pizza bases and the tortilla wraps I separate with greaseproof before freezing. I prefer to make up my own pizza. The tortilla I've used as a wrap, stuffed as a quesadilla, and I intend to try it cut into triangles and fried to have with a curry.

I'm a long-term user of their products, and I really like them.

It's still cold here as well, @maglil55. Finally got a delivery of heating oil, so we could turn the heating on again, but I'm still not going to put it up to more than 16.

BG is 7.5, so I guess I got the insulin more or less right this time. Just heard I am to expect a couple of visitors tomorrow afternoon. Need to make some low carb scones or something - one of them is T2 and is trying to eat low carb but does bring her own oat cakes with her. Her choice, of course, so I shall just have something suitable and give her a choice. Early afternoon job, I think - my cleaner will be here tomorrow morning.
 
Quick and easy experimental meal today.
I wanted to make something with cabbage, blue cheese, and minced meat, but the only cabbages the supermarket had were both expensive and very small, and I didn't want cabbage that badly.

But I already bought the other ingredients so I went with what I had.

Onions, leek, minced meat and garlic.
Added strong Danish Blue, some leftover cream cheese, and the last of a piece ouf hard Gouda, grated. (Ouch, had circuit training again yesterday and it turned out we trained all the muscles you use for grating cheese. :hilarious: )
Lazy seasoning with a herbs stock cube (melted in some water) and black pepper.

Very tasty!

Also enough for at least 3 days, or I can use it as part of another dish if I like. :)

Hi everyone. Very late posting today. My brand new computer froze! Finally got my son to help me sort it. No pensioners lunch today, we never have one on a bank holiday. But I've had what I call a 'picky' day. Pick at this and pick at that. I haven't had what I call a proper meal if you know what I mean so I can't really list anything. Maybe tomorrow I'll be better. :depressed:
 
B- 2 fried eggs and 2 Coop Irresistible pork chipolatas ( 1.1 g carbs for the pair)
L- took a packed lunch to the park with granddaughters, I had most of a packet of M&S rollitos. DGF cake.
D- Needed to be child-friendly and hungry-husband-friendly, so spaghetti & meatballs ( bareNaked noodles instead of spaghetti for me). Last year’s tomatoes from the freezer made the sauce. Couple of glasses of wine IMG_2393.jpg

Sounds like these could be good to try - I didn’t spot the tortilla wraps but the thought of chicken fajitas might lure me in.

It’s great to know they freeze well too. I’ll check out deliciously gluten free too.

That’s a great tip on how to freeze tortillas, and also might look more at the artisan rolls.. would love to use them for a breakfast bun

That’s settled, two decent reviews.. I think my first order might be bread, tortillas, artisan rolls and maybe a cheeky fruit loaf

Started OK, late Brunch was cold poached pork fat removed before cooking, three baby plum tomatoes, shredded Chinese Leaves, three small chunks of mango for Brunchsome Polish Marshmallow Wafers containing fruit jelly pieces, half a small bottle of tomato and carrot juice, ALDI Small Pack of Chicken Bites,(seasoned whole chicken, small pack sushi, half a bag of ready to eat rocket, spinach and watercress. A small chilled Late Light, (contains sugar). Tea was two packets of Batchelor's Tomato Soup in a large bowl mixed with boiling water and some skimmed milk. Weak tea with skimmed milk. Finished off the Marshmallow Wafers :(. Tomorrow is another day, I have got some fresh salads, avacado, low fat polish cottage cheese, tomato puree, low fructose fresh fruit, dried beans and plain rice cakes to top on the lean meat, fish and veg I in my Fridge Freezer.
