What have you eaten today? (Low carb forum)

B: ff greek yoghurt with seeds and half a pear
L: cold salmon, salad and coleslaw. 2 bites hubby's pizza
While dinner cooking 1 glass white wine and soda, 1 pack smoky bacon flavour pork puffs.
D: tescos frozen cauliflower cheese (first such I've tried, was quite good will buy again) 2 rashers bacon, 1 slice ham. Chocolate ice cream - hubby served it so more than I usually have.
Got late night hunger, 1 sq 85% chocolate didn't sort it so 20g cheese as well

Morning all. It's ribs today (remembered to get them out of the freezer at 3.30am!). Have plenty of veg togo with them so no excuses today. For tea a tin of tuns with mayo and spring onion. Going to try Tescos frozen cauli cheese too, haven't seen that before. I get an awful lot of ideas and support from this group, so a big thank you to you all. :p

Hi All back from Estepona and a perfect week with family, lovely weather, great food and Ribera del Duero (the only red wine I will now drink). The cost of eating out or just having coffee was so much less than what you would expect. Similarly fresh food in supermarket much cheaper than here. Ate grilled sole on the bone 5 nights and Turbot fillets once. Other night we bbqd meat and accompanied salad. Wore a Libre and though choices were good the portions were large and we had lunch out 3 days after finding a great beach bar. Some great succulent olives offered everywhere. Need to get used to eating less!
Sat evening we got back exhausted and ordered Indian t/a and I had cauli bhajee and Tandoori King Prawns, couple glasses Rose.
Sunday brekkie slice LC toast (while I was away I had slice of Sesame Ryvita I took with me) and lots of tea (took English tea bags with me also).
Lunch was 3 buttery scrambled eggs.
Supper was half a bag of scampi with cauli cheese.
Agree with @samcham the Sainsbury’s frozen cauli cheese is great, tried the Asda one once and was so inferior though their 4 portion packs of cauli rice are great.
today same brekkie.
Lunch (after doing big shop) was egg mayo with lettuce, one tomato and bit of cucumber.
Supper tonight will Bolognese on green beans with Parmesan on top.
I am doing a 36 hour fast at the moment and I deffo think I will get some of the Sains Cauli cheese in for my refeeding, it really is just supierior! I will try the cauli rice you recommend from Asda as been looking for a nice one!

Well done you doing a 36 hour fast. I wish I could fast even one meal a day because I need a reset!
today usual brekkie of slice LC toast and copious tea.
lunch was egg mayo on top of shredded lettuce.
supper will be baked chicken breast with cauli cheese.

I am feeling so ill since I got covid in Feb, I can't seem to shake a cold, lost my voice, earache, general fatigue and I looked into it and fasting can be used to help reset! Here's hoping, but i will eat if I feel really really weird or starving!!

Just been told that the visitors I was told were coming this afternoon (so I've made low carb cheese scones) won't be here until 6.30 at the earliest. They will need fed. Luckily I still have some of the Kerelan chicken ready to go. Just need to make some cauli rice to go with it. It's a bit spicy, which will suit one of them, but not sure about the other - plenty of yoghurt to go with it if needed. Or I do have some courgetti bolognese in the freezer, if needed.

Breakfast was some smoked salmon. I had intended to make an omelette with it but ran out of time, so just picked at the salmon and then, later, a couple of Jacobs crackers with Dairylea cheese. BG has ended up too high, so just took a correction dose to get it under control.

Finally got around to making low carb scones (almond and coconut). I have been telling myself I would do it for months now - can't purchase low carb products because they have things in them that I can't take. I have always had a problem with almond but I thought it would be worth trying again to see if I can tolerate it now. I can't! Very ill and painful headache to go with it. Managed, eventually, to keep some paracetemol down though and the headache improved and then the nausea eased off, so I'm more or less normal now. Gives me a bit over an hour before my guests arrive.

Looking in the middle of Lidl, at the Taste of America, they had these. Not having a sweet tooth and being gluten free, they will not be entering my life, but at 8.6gr carb, per piece, someone might find the handy.

Well, that was a bit of a wash out. Three arrived, instead of two. Not a problem. But they didn't arrive until 6.55 and one immediately said she had to leave again at 7.30 to get home for her delivery from Tesco. Two had already had their evening meal and one had had her main meal at lunchtime. One had brought a supermarket cake with her. Time for a quick chat, no time for anything to eat or drink and they were off again. I did tell them about the low carb scones and the effect they'd had on me and the T2 one offered to take them off my hands. So they went away bearing scones and the cake.

I've just had my Kerelan chicken with cauliflower rice - quite a large portion and it was very good. Had some yoghurt with it this time to cool it down a bit. Courgetti Bolognese will be reheated in a day or so.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: bolognese with sliced sautéed courgettes sprinkled with grated cheddar.

B: ff greek with seeds, a quarter of a pear and 1 sq 85% chocolate chopped and 4 almonds chopped
L: we visited a National Trust property and I know from experience there is absolutely nothing like carb in their cafes so took a box with 2 slices ham, 30g cheese and 2 hard boiled eggs (didn't need the latter So they came home ready for tomorrow). Did have 2 bites of hubbys coffee cake.
D: side salad with an egg scramble using up 2 rashers of bacon and some leftover cauliflower cheese. Very tasty.
Chocolate ice cream

B- cheesy scrambled eggs.
L- At the park with the girls again, so another packed lunch: DGF wrap filled with egg&cress and a slice of ham, then a Babybell cheese.
My car was due a service today, brakes had been making a noise and it seems I’ve worn right through front and back ones. Set me back over £1000 in all. Came home and ate nearly half a jar of almond butter. Annoyed with myself now.
D- Garam masala chicken with salad and a DGF wrap quickly fried in the coconut oil and spices left in the pan. Perfect lc chapati.

Frustrating when you’d gone to so much trouble. At least you have “ planned overs” now.

Tuesday 2 May bed 7.9 FBG 7.5. @IBEX82 - that's one of the artisan rolls

Back on the school runs. It was a bit of an effort to drag myself out this morning, but I got there.

B. TAG and 2 slices of SRSLY toast with a new thing, Tesco Ploughman's Pate. Really tasty.

L. 1/2 avocado with prawn cocktail. 8 almonds.

D. Yet another of M&S incoming from the summer range, a buffalo chicken burger. Quite spicy.
I had the burger on a SRSLY artisan roll with Emmental cheese slice, lettuce, and tomato. Plate looks a bit messy, but I'd already started putting the lettuce and tomato on it.

Morning all. Beautiful day here hope it is where you are. Enjoyed the ribs and fried veg yesterday so I'm going to have chipolatas with fried veg today and gravy (which is blended veg with half a stock cube and a bit of skinny tomato sauce in some bone broth). I have some pink salmon mixed with mayo and chopped beetroot for tea. Have a nice day everyone. :)
