What have you eaten today? (Low carb forum)

Evening all

Today:

B: Two poached eggs with a knob of butter and avocado slices seasoned with black pepper, plus a wedge of Beenleigh Blue ewe's milk cheese.
Water to swallow tablets.
Espresso.

L: Salad using salmon fillets poached with black peppercorns, salad onions and lemon juice.
Lettuce, avocado, tomatoes, celery and sweet cicely, with olive oil plus a touch of lemon juice, lemon verbena and garlic, topped with toasted almonds.
Water to drink.
Skipped pud.

D: Seafood salad made with king prawns, mussels, lettuce, celery, Romano peppers, Welsh onions, Kalamata olives and mustard cress, with a dollop of aioli for dipping, topped with toasted sunflower seeds.
Water to swallow tablets.
 
Wednesday 13 September bed 6.3 FBG 6.6. Boys here for dinner and had requested roast chicken, baby carrots, broccoli, and potato fritters. Another run about day trying to get different family members to different places.

B. TAG and LC granola with sugar-free coconut milk and blackberries. Benecol dairy free.

L. A baby bel.

D. Took half of a chicken breast and stir-fried with cauliflower rice, a jumbo spring onion, broccoli, peas, tabasco, parmesan, parsley and a little double cream.

Finally a real cooking day, made enough for 3 days too. :)

Zuurkoolstamppot (cauliflower purée mixed with sauerkraut) a kind of German smoked sausage and some pieces of 'zuurkoolspek' (sauerkraut pork belly). Yes, this variety of pork belly is really named after the dish it's meant to go with. Not a fancy new selling strategy either, zuurkoolspek has been around for at least as long as my parents have lived. It's a brined piece of pork belly meant to be boiled. Frying after boiling is optional, so I had one slice boiled and soft enough to melt in your mouth, and two fried. Still don't know which I like better.

The stamppot turned out unusally good. I added a spoonful of mustard, and a spoonful of Branston pickles, and I think the last did the job of turning a good dish into an amazing one!
You don't exactly taste the pickles but there's much more flavour as a whole.
Also, I'm pretty sure this is the first time ever that someone had zuurkoolstamppot with Branston pickles, which makes me happy! :joyful:

I bought my only pot of Branston pickles almost a year ago on my holiday in the UK. The less I had left, the more frugal I used it lest the pot would be empty one day.
Happy to inform you that the stuff simply doesn't go off, I haven't even kept it in the fridge and it has been opened for almost a year!
Even happier to let you know that my neighbours down the road went to Scotland with their camper this summer and I boldly ordered more pickles. So there's 3 more pots of them in the larder, and the only reason to use it sparingly now is the carb content. :happy:

After last nights rain, and the recent hot weather, it was a real pleasure to take our dog for a walk this morning. I stepped up our pace a bit where I could.

Noon, coffee with whipped cream, frothed

2pm had my first taste of food namely boiled ham and crumbly Lancashire cheese, accompanied by a G&T

Had an early tea of 2 slices of back bacon, mushrooms, fried egg, and fried tomatoes.

Coffee with whipped cream, frothed.

2 squares of Lindt 90% dark chocolate.

Comes in just under 10g carbs.

The thing is, I bought the pot because whenever I'm in a foreign country (which isn't very often) I love buying unknown to me things.
So I bought this pot of very odd and very tasty brown stuff with no idea how it's typically used, I had no idea that it isn't usually added to dishes as they cook! :hilarious:

Don't worry, I've been eating marmite since I was 2 years old, ate it today as well. :hungry:
But there may be another holiday to the UK in about a year, I loved camping in your country and meeting friends last year so I want to come back!
Be sure I'll pester you with questions on what to buy when I'm there when the holiday gets closer!

Carb content for 15g is 5.4g :dummy1:, but I'm sure brushing chicken breasts, thighs or legs with Branston could work and not be too carby. There's a recipe on line where I'm sure some ingredients, ie dates and brown sugar could be substituted to massively lower the carb content.

You could pickle eggs at home and keep in the fridge for “ emergency” snack
 
Black coffee and water all morning.
L- 2 slices cold roast beef rolled around cheese slices and butter mayo.
D- Air fried duck leg. It was nice but didn’t fill me up so had an omelette for pudding!
@shelley262 I listened to Ben Bikman this morning and agree it was an excellent presentation. I was really interested in what he said about the ways in which the common diabetes meds act on the body.

I watched/listened to the presentation this afternoon too. I too thought the section on the various meds interesting, and put so simply. I'll likely watch at least that part again. I have also clicked to be notified when the next one (David Unwin) us publised on the 18th.

Unsurprisingly, we haven't eaten this evening yet, but it is going to be a mega omelette when the time comes.
 
I was hungry today so 3 meals
10ish boiled eggs and Edam crackers
1ish small amount of mince fried in butter.
5:30 air fried hogget chops. V tasty.
Still feeling good on carnivore but I’m losing weight which was not the intention. I assume it’ll level off at some point. BGs are much better which is cheering.
