What have you eaten today? (Low carb forum)

Lots of lovely pics of delicious food!:)

Dismantled the row of tomatoes, the harvest is now stewing in a slow cooker with sauteed onion, garlic, and oregano. I'll be making little portions of the sauce to store in the freezer, the contents will no doubt turn into a non-pasta sauce with mince, or adding to veg soups, over the coming months. Hopefully the little portions will help with balancing carbs as Tomatoes can be carby.

Managed to get to 2pm on only carbonated water except for a coffee with cream at 10am.

G&T

5pm (ish) had a butterfly-ed salmon steak with cream sauce, sauteed cauli rice in butter.

Was a bit greedy with the Lindt 90% chocolate, I had 4 squares tonight :oops:. All within my 20g of carbs per day.

I hadn’t thought of putting them in a slow cooker, great idea, thank you. I had a bucket of tomatoes recently that a granddaughter requested I make tomato pasta sauce with. The slow cooker would have been a much better idea.

My wife & I cooked (nay blagged.) it together after a visit to a fishmonger selling fresh in Appledore...
A massive piece of fish ("smoothound.) of which we cooked half in a French/meditarenian hybrid LC sauce from scratch with samphire on the side..
A sort of "chowder?"

Staying in an air B&B on the coast with a well equipped gas kitchen. (I'm used to/ brought up with this..) we have electric & halogen hob at home.. :banghead:

Loving getting back into cooking on gass..

lovely forest walk on way to Lidl.
l: 4 hm lc seed crackers with a little coleslaw and 2 chicken thighs.
spent the afternoon alternating between baking and cementing! The cementing yesterday seemed to raise my bg even though most of it was done sitting down. Today that and the carby baking meant I was up to 10 a few times.
walked to our local brewery, had one white wine. Nibbled on cheddar and olives. Walked home again. Bg back to 5 for a while.

I didn't actually eat any of the baking, just tasting, but still libre shows me it was too much for me

Friday 15 September - bed 7.2 FBG 6.4. I wondered if having 2 little chocolate pots yesterday would make a difference to the BGs. Regrettably, it did nothing very much, but they are tiny. Today has been even more confusing. Hubby woke me as he thought I had slept in for the school run, we're both convinced it's Saturday (especially when son wanted to get his shopping), and it's pouring rain (but the garden needs it).

B. TAG and LC granola with sugar-free coconut milk and blackberries. Benecol dairy free.

L. A bit crustless quiche when I got back from shopping.

D. Hubby wanted mac & cheese. I found a SRSLY pizza base, so I had a cheese and tomato pizza . CC little chocolate pot with raspberries (just one today).

Doesn't look like you'll need the pen on the left either for this meal.
Did need a correction dose after overtreating a basal hypo on the extensive walks earlier. Also needed to be competent to drive back to "base camp."

Swept aside wallet & gadgets on a dining table in a 2 story rented cottage... I'm more accustomed to a coffee table in a bungalow for my D stuff .... though we do dine in a conservatory in our own home.. we're on a holiday, (vacation.) living off our whits at the S/W coastline.

Got some fresh crab for tomorrow, also....
You just have to know where to look for the bargains that suit the diet. A fair price straight off the catch..

edit: And yes, those basal hypos on holiday activities can be very interesting.
I'm expecting some of those in the upcoming week (not holiday but work, on a sailing ship).

Cooked in a slow cooker only because I can't trust myself not to burn the sauce :oops:
 
Bacon and eggs for breakfast.

2nd meal: more duck breast with cabbage and sour cherries (the cherries are dried but they rehydrate in the cabbage juices).

BG dropped last evening so I had to eat a digestive biscuit to stop the drop. BG dropped again twice during the night (gave up and came through to the kitchen after the 2nd time). I ended up settling into the big chair by 2.30 am and slept off and on there until I finally forced myself to get up and ready for the day at 9.30.
 
Made great progress with the task of painting the garden fence, I've now got two whole sides painted (twice) and half of the third side with a single coat. Today's task was particularly horrific (for me anyway) I had to move the compost heap that was tucked away in a corner, not kidding there were some of the biggest spiders I've ever seen, including some that would jump from plant to plant in order to create their huge webs. Feel really guilty though destroying their many nests :oops: so it hasn't been all that an enjoyable day. It will be great tomorrow because I hope to finish (fence paint willing).

Keeping busy does work for stretching a fast. Same as yesterday I broke my fast, baring the coffee and G&T at around 2pm with some cold roast chicken.

Dinner was smoked salmon with cream cheese. A sausage that was leftover from serving my husband bangers and mash called my name, a nice tasty fillip.

Strawberries and cream.

Carbs consumed for the day = 11.5g.
 
Back to reality and my normal foods! I notice I’ve become an ‘Oracle’, how did that happen?! :joyful:


Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa.
Dinner: avocado with prawns and coleslaw.

Evening all

Today:

B: Two poached eggs and scallops topped with chopped, flat-leaf parsley, asparagus spears with a knob of butter, all seasoned with black pepper.
Water to swallow tablets.
Espresso.

L: Aperitif: dry white wine
Tuna steaks rolled in finely chopped celery and oregano, baked with sweet red peppers and aubergines, moistened with double cream and topped with grated Cheddar cheese.
Steamed runner beans with a knob of butter.
Salad using lettuce, Romano peppers, vine tomatoes, Welsh onions, mint and Kalamata olives, dressed with an olive oil, garlic and balsamic vinaigrette and topped with roasted macadamia nuts.
Water to drink.
Skipped pud.
Two squares, Montezuma's Absolute Black 100% chocolate.

D: Seafood salad made with tiger prawns and crab, rocket, avocado, cucumber, salad burnet, baby plum tomatoes, salad onions and Halkidiki olives with home-made aioli for dipping and topped with toasted pistachios.
 
Woke at 04:00 in a very vivid and sad dream. Tried going back to sleep but the images kept coming back. Ended up getting up a cup of tea and realised I was hungry so
06:00 3 eggs scrambled, cwc
07:00 back to sleep for just over an hour and woke all disoriented.

09:00 yoga, followed by quick cup of tea then a walk to local church and a climb up its Bell Tower

L: 3 chicken thighs

D: 2 beefburgers with cheese. First in a lettuce wrap with coleslaw. Second on its own with camembert. 2 cc chocolate pots... you are a bad influence @maglil55 !! :p :p
 
Breakfast two boiled eggs and one keto buttered roll
Lunch a few garden berries with yoghurt and a couple of squares of 90% chocolate
Early tea lamb curry and LC roti
Just now youngest son and my dil came to collect Cooper and we had some cheese and LC seeded crackers and a small red wine. They were on way back from a food festival so didn't want a full meal just a snack! As a present they bought us some amazing Welsh smoked salmon which I will really look forward to. I've sent them back with garden tomatoes and some basil.
 
Late posting this evening as I’ve been watching the Strictly start. It’s definitely autumn now, Bake off soon too
10:30 small amount of steak left from yesterdays dinner, cold with fried eggs.
1:30 packet of Awfully posh pork puffs. I don’t think I was hungry but I just wanted the crunch.
5:30 sort of beef stroganoff, I cooked onions and mushrooms separately and mixed them with Paul’s portion. Mine was just strips of frying steak marinated in butter mayo mixed with hot paprika. Then fried and a dollop of sour cream added.
