What have you eaten today? (Low carb forum)

11ish fried a few garden tomatoes with one slice of bacon and one egg with one slice of LC toast (still got a couple of Hey lo low carb bread loaves in freezer - I freeze in slices separated by piece of kitchen towel so can toast one slice from frozen easily-- and I'm enjoying it ) plus small glass of kefir
1ish sauerkraut and small piece of vintage cheddar followed by the last 6 home grown raspberries with yoghurt then four squares of 90% chocolate
5ish salmon with lemon butter and a spoon of garden peas with glass of dry white wine followed by LC Blondie.
 
Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Mushroom and spinach frittata made with eggs, extra mature Cheddar, leeks, double cream and thyme.
Salad using chicory, sweet cicely, celery, mint, Kalamata olives and salad onions, dressed with an olive oil, garlic and balsamic vinaigrette, topped with roasted macadamia nuts.
Water to drink.
Skipped pudding.

D: Seafood salad made with brown shrimps, king prawns, lettuce, baby plum toms, celery, Halkidiki olives and Welsh onions dressed with home-made mayonnaise, topped with toasted sunflower and pumpkin seeds.
Water to swallow tablets.

B: A 90 second bread but played with recipe so ok-ish, with cheese

An incident in the morning upset me and I allowed it to let me emotionally eat and binge, the worst since diagnosis in 2019. Wearing a libre so topped out at 15.5, my highest ever, not proud.

D: 1 sausage slow cooked with cauliflower and swede
8pm 1 glass red.
 
Evening all.

9.30am had breakfast of streaky bacon, cut into julienne and fried till crispy, added a mixture of 2 eggs, cream and seasoning, then scrambled.

Coffee with double cream

2pm had a packet of pork scratchings. Didn't have a G&T today, hubby has a knee replacement op a week tomorrow and he's now refraining from alcohol, I kept him company.

5pm Aberdeen Angus beef mince made into a burger with a knob of Castillo blue cream cheese in the middle, served with a handful of lettuce and celery, and a teaspoon of salad cream.

2 squares of 90% dark chocolate

Peel from an eating apple (35g)

Only 8g carbs today.

@maglil55 my jabs were 2 weeks apart, it was the covid one which knocked me for 6. Had to look on my NHS app to see what type it was : Comirnaty. Never heard of it! Hope you get the Pfizer one. @Antje77 hope you are feeling less wrung out now. It only lasted a day with me. Glad you are also over the effects @PenguinMum , good to see you back.
@JenniferM55 I’m so glad you had a cramp free night, fingers crossed the electrolytes as recommended by @shelley262 are helping. Cramp is horrible.
Todays food started with goats milk kefir which is fast becoming my best drink of the day.
Black coffee, Aquafit class then quick lunch of scrambled eggs on SRSLY toast and a slice of garden apple to follow.
Out again, handful of almonds around 4pm.
Dinner was haddock with pork panko crumb fried in lard, with garlicky greens. 20g Montezuma’s Absolute black buttons to follow.

Cominarty is the "new" name for the Pfizer jabs.

I was involved in the vaccine programme when it changed, so every patient receiving it had to have yet another piece of paper to read.

Sometimes life happens, tomorrow is a new day!

Very odd day, both diabetes and food wise.
Applied a new sensor yesterday to start today, it didn't work. Phoned Abbott and had to give it two hours before giving up on the sensor. Plus an hour to warm up the new one and the old one left me with 4 hours without a sensor.
I felt adventurous and stubborn so I decided to dose for and eat my first (low carb) meal without doing a fingerprick now I didn't have a working sensor. Very cheap way to feel like you're living an adventurous life! I might even make a habit of it on sensor change days, I liked it. :joyful:

I had a sound plan for a healthy low carb meal with sauerkraut and cauliflower mash.
But then I went to the neighbours-in-the-garden to ask to borrow their live mouse traps again (there's a mouse in my car still)...
Anyway, I've eaten a large meaty spicy snack thing (low carb), a miniature 'kaassoufflé' (small but not low carb), and two bitterballen (also small but not low carb) with a rather random amount of insulin while using a still warming up and uncalibrated sensor which kept shouting I was low (not true).

The bottle of rum on their table may or may not have influenced my choices.
No regrets, and it wasn't that many carbs, social stuff is important too (and so are kaassoufflé's).
 
Morning all. Went out for lunch with son and granddaughter and ordered sausage and mash with veg. Asked if I could forgo the mash and have extra veg and they were happy to oblige. When it came it consisted of 3 sausages and a heap of cabbage and a very small jug of gravy. It did not look appetising at all! Anyway for tea had a tin of salmon mixed with mayo and acv and that was appetising. Have a great day folks. :)

Will be away from this weekend on holiday for next week or so. Will be interesting to see how many low carb options are on offer at the Croatian Island hotel where we have a half board deal. It gets good reviews 're a wide choice of food supposedly but will report back when home again. Forecast a bit mixed but I'm determined to make the most with some exploration and hopefully sea swimming - my favourite.

Here, the hot, sunny June and wet July produced a bumper crop of wild blackberries; perfect for rounding off a packed lunch on the hoof. What's more, the berries were ripe and ready for picking earlier than usual. Numbers are beginning to dwindle now though and it looks as though the season is set to end shortly.

Today:

Water to swallow tablet.
Double espresso.

L: Packed lunch made with leftover mushroom and spinach frittata.
Lettuce, Romano peppers, celery sticks and baby plum tomatoes with a dollop of home-made mayonnaise for dipping.
Almonds and hazelnuts.
Water to drink.
Wild blackberries picked on the hoof to round off lunch.

D: Smoked salmon and cream cheese salad made with chicory, vine tomatoes, lemon verbena, Kalamata olives and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted pine nuts.
Water to swallow tablets.

So I had yesterdays planned meal today, again with a spoonful of Branston pickles mixed in the mash, and again it was very, very good!
I had a very decadent version of zuurkoolstamppot with sausage and pork belly done in three different ways: zuurkoolspek boiled, zuurkoolspek boiled and fried, and two paper-thin rashers of bacon. :hungry:

Enough left for two more days too. :)

Morning all. Yesterday went to son's house and we cooked bacon, egg and sausages thrown in. Also some tinned tomatoes. Was shocked to read 7.3g carbs in half a tin tomatoes! That was lunch cos I fasted till then. Tea was salmon, mayo and acv, very delicious. Think that's my favourite dish. Have a great holiday @shelley262. I'm going away for the weekend so won't be posting till perhaps Tuesday. Have a lovely weekend folks :)
