What have you eaten today? (Low carb forum)

In other news, I saw this and thought of you @Antje77 . So many Branston options, AND it is Branston's 100th birthday.

I still have almost three pots left, thanks to my neighbour, which will easily last me until my next trip to the UK in october next year. :happy:
Haven't looked at the dates, but I finished my last pot a year after opening and it still tasted fine, so I'm pretty sure it simply doesn't go off, like, ever.

I just went and looked at our jar, which has been open for longer than a year. Nothing untoward there - no mould, no vile smells.

The cheese monster (MrB) always has several chutneys and pickles open at any given time. I can't recall when we last had to ditch any.
 
I wish I could post a warning to those of a nervous disposition about my photo. It was a slow roast breast of lamb and I got the shock of my life when I took it out of the oven to find this ghoulish grimace where all the ribs had come through! That was dinner, with swede and carrots cooked underneath the meat and creamy parmesan cabbage in the side.
Lunch was SRSLY roll filled with ham and cheese. 1 Sq Lindt 90%
Breakfast- goats milk kefir and black coffee ( not together)

@Rachox have you tried the keto fitness club bread? I prefer the SRSLY stuff but If I remember rightly the KFC rolls were more similar to the Low Carb Co. ones.

@shelley262 and @jessj thank you for the tip off re the Olina crackers. I used to make crackers a lot but I don’t often have the oven on these days ( today was an exception) so pre-made suits me better and is probably cheaper in the long run.

@Antje77 I’ve used erythritol since being unable to get the golden monkfruit which I prefer. Erythritol has a sort of cold aftertaste I’m not too keen on and I find you need a lot less than recipes state. IMG_3590.jpg

So far I've simply sent my friend everyone's recommendations on sweeteners for baking, but your hilarious meal deserves sending her a link to your post to go with your tips! :hilarious: :hilarious: :hilarious:

A question from my friend, who loves baking:
My friend and her family have a relatively newly diagnosed T2 over for dinner every friday. The T2 friend has recently discovered the effects of low carb eating with the help of my friend. :)

I've never used sweeteners myself, so that's one thing I can't advise her on.
So what's everyone's sweetener of choice for baking? (She doesn't have dogs so that's not an issue.)
I use stevia pellets. That sweetens up everything while baking or making nut butter chocolate....
 
Breakfast: 2 RyVita with cheddar cheese melted onto them.

2nd meal: will be more of the brisket with leeks and some passata. I have had the passata in the cupboard for a long time but decided to use it because Neil needs another glass, wide necked bottle for his h/m soya milk. Only used about 1/3 of it so will have to find uses for the rest.

Must put the sliced brisket into thin gravy to store in the freezer. I'll just make up a basic beef stock (Knorr stockpot) to store the packs of beef and then make something a bit more tasty and nutritious when I come to use them.
 
B - Nothing
L - Mini roast dinner with broccoli, chicken breast a very very small (size of a marble) stuffing ball. 2 roasted tinned potatoes again the size of a marble and homemade Yorkshire pud. 2 hours later bg had gone down, 3 hours stayed the same. Went on the spin bike for 10 mins after.
Snack - Pepperami, Dillon organic flax seed bread with peanut butter. The bread as a treat and it doesn't tend to spike its like rye bread ;)
 
Breakfast fried some mushrooms with one slice of bacon and egg with one slice of LC bread
No lunch today as busy.
Dinner early about 4ish cold roast chicken with sauerkraut and kimchi and glass of dry white wine followed by low carb lemon cake warmed and served with yoghurt.
Our Grand dog Cooper is coming to stay for a few days we are picking him up tomorrow morning so will be a lot more hiking over the next week.
 
B: yoghurt seeds, blackberries
L: some leftover bolognaise mince with a bit of cheese
D: roast chicken, cabbage, buttered leeks, carrot and swede mush, green beans.
Tried a baked chocolate coconut custard pudding. Served with cream and chopped hazelnuts. Guests ate it, but wasn't quite to my taste. Might leave out the cocoa powder next time and serve it warm.

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and a vine tomato, garnished with flat-leaf parsley and seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine
Baked whole sea bass, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears smothered with butter.
A medley of baked broccoli, red onions, leeks and sweet red peppers with garlic woodland mushrooms.
Water to drink.
Raspberries and Greek full-fat yoghurt.
Four squares, Montezuma's Absolute Black 100% chocolate.

D: Salad made with anchovy fillets, eggs, avocado, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of aioli for dipping, topped with walnut halves.
Water to swallow tablets.
 
Bit of a bitty day today - my husband appears to have lost his appetite and it's throwing me way out of kilter. It didn't help that Tesco didn't deliver during the 9.10am slot, by the time it got to 11.30am I'm furious! Felt so stupid when I realised I'd booked an 9-10pm slot :oops: Still Tesco weren't completely blameless, they hadn't delivered my Gordons Gin tipple (it's on offer) and sent a bottle of caramel liqueur which of course I hadn't ordered, plus a bottle Famous Grouse (also on offer) still has it's security tag on :eek:

Anyway, made a batch of 4 sweet chaffles, it's a new recipe for me using mayo instead of cheese, also using lupin flour instead of almond flour. They worked out 2.4g carbs for the 4. Ate the 4 over the morning with some keto maple syrup and butter. They were very close to real waffles.

Lunch; homemade chicken and veg soup which I made a couple of days ago, adding a nice drop of double cream into the mixture.

Dinner: strawberries and cream

4 squares of 90% Lindt chocolate

Carbs for the day 20.6g.

This evenings dinner was a lot less horrifying than yesterday as we ate out! Pre theatre meal of chicken breast with bacon and avocado coleslaw and salad. 2 cups of tea with milk during the show.
Earlier in the day I had a cheese omelette then far too many snacks: nuts, toasted coconut flakes, cheese, slice of prepacked roast beef. I think that’s it. IMG_3595.jpg
