What have you eaten today? (Low carb forum)

Just wanted to post these pics to give you all a giggle. Since my type 2 diagnosis nearly 7 years ago, bearing in mind I have done the majority of my shopping at Tesco during those years. There is an announcement on my account saying:
“Save on what you buy the most and love the best” and then provided 6 coupons. I don’t think they have been studying too closely what I buy the most and love the best! I suppose the flowers and greetings cards might be low carb if I chose to eat them!

Naww, I remember it being a little bit scary when I was little too, I used to have a mother goose audio book tape and had to ffwd it when it came on as I didn't like the voice. "who's that trip trapping...."

Dad used to tell me it as well, hid down the side of the bed, popping up one eye close and other open bigger than the other, which ironically wasn't as scary, more silly, used to like it when he told it, but that tape... shudder.
My grandsons have always liked scary stories. There was another one that my mum used to tell me about scary Maggie coming up the stairs to get you. They would go into fits of giggles, and I got frequent requests for scary Maggie.
 
Busy day today so took opportunity to have just one meal although had small kefir with supplements before heading out. I also put beef and a few veggies in slow cooker
Only a black coffee while out and about but when back I put some ginger root and lemon in soda water to sip while finishing off making dinner
Dinner beef served with cauliflower mash and large glass of red wine then warmed a hm LC chocolate bun and served with a spoon of my latest batch of hm yoghurt - it's one made from a starter I've not tried before which has a good range of bifido bacteria. I also treated myself yesterday to a new yoghurt maker which has a lovely ceramic pot - my old one has a plastic one. I found the one I wanted a few weeks ago and waited till an Amazon warehouse deal so got for half price - it was a return but clearly hadn't been opened or used. I love a bargain and a new gadget - as do other regulars on this thread including @AndBreathe and @DJC3 to mention a few!
 
A very late evening meal (11 pm), which makes sense after the past two days.
I finally made my planned cauliflower dish with bacon and raclette cheese, turned out just as good as I imagined! :joyful:

Looks great! Just the sort of thing I like. Did you just mix the cheese in or put it on top and grill it?
Going back to your previous adventures which I thoroughly enjoyed ( I’m a couple of days behind), my Nextdoor neighbour sleeps in his sitting room with his motor bike. I don’t think there’d be room for another!

A bit later:
Greek yog with 4 blackberries, kefir and a few pumpkin seeds

Still really hungry so I had 2 slices of my home made low carb bread with butter and full fat soft cheese. Already thinking it might be best not to make that bread too often!

3pm Roast belly pork with creamy Parmesan cabbage and roast celeriac, plus one tiny roast carrot baton. Few glasses of wine. A bit later some h/m yoghurt with raspberries and seeds.
@jpscloud glad you enjoyed the Chaffles. They somehow seem more special than the ingredients or effort involved would have you believe I think. IMG_1708888023.747450.jpg

That crackling looks gorgeous! Yes totally agree, I crave fried junk food and they just hit that spot without setting off a binge. So grateful for the introduction to them!
 
Tuesday 13 February - bed 7.9 FBG 7.5. Still miles behind and was distracted by events, which have put me further behind! I was too busy trying to catch up on all the things I don't have time to do. It felt a bit l8ke the song - I'm busy doing nothing.

B. TAG and 2 slices of SRSLY toast with cheese and onion. Benecol dairy free.

L. A bit of crustless quiche

D. A Crimpit! I bought it at Christmas. I made the filling with a mix of stir-fried chicken breast, chopped peppers, spring onion, green beans, mushroom, and a sauce made with garlic, ginger, soy and chilli. The wrap is one of SRSLY low carb Mediterranean wraps.
I succumbed to a gin and soda!

Wednesday 14 February - bed 7.9 FBG 7.7. Why is it even when you don't have to get up early, your body still wakes you up at the crack of dawn!

B. TAG and 2 slices of SRSLY toast, one with cheese and onion, the other with chicken and sweetcorn. Benecol dairy free.

L. Nothing.

D. An aubergine parmigiana I had in the freezer. I'd had it there a bit too long, I'm afraid. It was edible - just! A scoop of Halo Top with raspberries.

A drive back & forward transporting to swimming training. That doesn't stop for holidays.

Thursday 15 February - bed 7.8 FBG 6.8.

B. TAG and 2 slices of SRSLY toast with tuna mayo. Benecol dairy free.

L. Nothing. Aqua day.

I mixed the bacon with the cauliflower after frying, and then fried the slices of raclette cheese in the frying pan and simply shoved it over the cauliflower on my plate, very lazy meal.

I had the same today, was sure I'd made a picture but apparently not. This time at 8:45 pm, so it looks like I'm back to eating at more or less sensible time after messing up any semblance of a biological clock I might have over the past few days. :joyful: .

Phew, very happy my neighbour doesn't share his bed with a motorcycle. If he did, I'd likely have opted for trying to make my bed. :hilarious:

edit: Oh, and I found someone who has some kefir grains for me, a distant friend who I mostly lost contact with. :)
She'll bring them on the 8th of march, along with a professional talk with neighbour and me. She knows about finances and legal stuff, and neighbour and I can use some advice.

MIA again….back to Sunday
Usual brekkie of slice LC toast, copious tea.
Lunch was bits of cheese..was meant to be scrambled eggs but three cracked eggs in a row were bloodied and fertilised which was a shock since they were Burford Browns!
Supper was chilli, ginger and lemon stirfried beef and red pepper matchsticks and shredded Pak Choi..very delish! Two glasses of Rose left over from Saturday.
Yesterday same brekkie.
Lunch was egg mayo on slice toast, big mug of tea.
Supper was lightly spiced chicken breast with cauli cheese.
Today same brekkie.
Lunch, have just made a big pot of leek & broccoli broth, maybe a chunk of cheese.
Supper will be chilli mini meatballs with cauli rice.
You're not the only one MIA! However, one of my many tasks was to trawl through M&S online as I had over £70 in vouchers needing spent before the end of the month. I'd been looking for new cushions but ended up getting them in Dunelm. I did end up with 3 tops but, in my trawl, I spotted the ideal mug for your "copious tea" Screenshot_20240224_161303.jpg

I ate about a third of it as a (very) late breakfast, will use the rest in some meal or other. :)

I forgot to put yesterdays thrown together meal in the freezer so I had it again tonight. Still tasty, but I don't think I trust it to last yet another day. No problem, the dogs love it and I think one of them has her 11th birthday tomorrow. So the dogs will have a proper doggy party with a celebratory meal tomorrow!
I had it with a small slice of a buttered low carb seedy bread I found in the German supermarket. And then I went to have another slice after dinner, very nice to have a different bread for a change!
Thanks for that @Antje77. I had no idea you could do that. I copied the URL for the post, pasted it into the CMT browser, and, as you rightly said, it recognised it as a recipe. I use my mobile to access the forum. @DJC3- it's now in my CMT.
 
Evening all

So far, my young French tarragon plants have weathered the Winter well and have put on some new growth, so used a few sprigs to stuff the bass for lunch. Spring is just around the corner .... we hope!

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed chestnut mushrooms and baby plum tomatoes, all seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Baked whole sea bass, belly stuffed with sprigs of tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears topped with a knob of butter.
A medley of baked cauliflower, leeks, onions, garlic and sweet red peppers.
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, chicory, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with walnut halves.
Water to wash down tablets.

I first saw and tasted tartiflette at a Continental Market which used to come to Stornoway a good few years ago now. One of the stallholders was making it on a hotplate, chopping everything together as it all cooked. The potatoes were pre cooked then onion, bacon and, lastly, cheese added. The smell was delicious and quite irresistable. That was my first taste and I made it in much the same way after that. Until potato went off the menu. Tried with celeriac but it just wasn't the same - not that I seem to be able to get celeriac here any more. Cauliflower is out for me and I really don't fancy the idea of swede or turnip. Could just do bacon, onion and cheese, I suppose, but it wouldn't be tartiflette.

These days the budget doesn't stretch to buying reblochon or raclette online - they cost more to send than the cheese costs. That's a bit of a downer in terms of tartiflette as well. Best our local supermarkets can do is, occasionally, stock Emmental or Gruyere, but not always. They pretty well always have Brie and sometimes Camembert but haven't tried actually cooking with either of them beyond baking the Camembert occasionally. So it's Cheddar most of the time.

Expecting to receive some Manchego in the post today or tomorrow though. It's pricey at £10 for 150 grams but I wanted to try it. Alistair tells me that it is sometimes available in Tescos, but not often. Never been there when Neil was looking. Don't suppose I'll buy it online again, but it's worth it to have a taste.

Food today will be slices of chicken breast with slices of mushroom in a cream sauce and braised cabbage and chorizo on the side. One meal again today. Worked out quite well yesterday even though I was feeling pretty grotty with this darned infection.

I Love Manchego, a tasty nutty flavour & lately Tesco has had it in their Clubcard £6 for 2, as opposed to £4. I hope you enjoy yours, Annb, as that is pricey. I hope you get over your infection speedily, at least you'll have a treat to look forward to.

Planned dinner is stuffed mushrooms today, followed by, funnily enough, some Manchego & Ossau Iraty, my 2 for £6!!

Just checked the price of Ossau Iraty online. A bit better priced than the manchego at £8.66 for 200g. Postage to be added, of course. I could ask Neil to look for that in Tesco as well. The price you got it for seems to be a bargain.
