What have you eaten today? (Low carb forum)

Our Lidl sometimes has vacuum packed, cooked schweinhaxe on sale, on the Taste of Bavaria” weeks.

They sometimes sell them here as well. I bought one once, huge disappointment. :( Completely different than the juicy dripping thing I bought that time in Germany.
Have just boiled the life out of 2 boiled eggs, forgot they were on till I read a posting that said 2 boiled eggs!
The forum is such a useful place for all kinds of things!

MIA again….back to Sunday
Usual brekkie of slice LC toast, copious tea.
Lunch was bits of cheese..was meant to be scrambled eggs but three cracked eggs in a row were bloodied and fertilised which was a shock since they were Burford Browns!
Supper was chilli, ginger and lemon stirfried beef and red pepper matchsticks and shredded Pak Choi..very delish! Two glasses of Rose left over from Saturday.
Yesterday same brekkie.
Lunch was egg mayo on slice toast, big mug of tea.
Supper was lightly spiced chicken breast with cauli cheese.
Today same brekkie.
Lunch, have just made a big pot of leek & broccoli broth, maybe a chunk of cheese.
Supper will be chilli mini meatballs with cauli rice.
 
Mid morning brunch after taking car in and also after my experimental bake using whole cooked lemons that had been cooked with rhubarb yesterday.
Kefir then One slice of bacon, one egg and a few mushrooms followed one of my new cakes which I warmed with rhubarb delicious a sponge pudding texture. @DJC3 I'd recommend liquidizing whole cooked lemons( after carefully depipping them!) The blended pulp looks like lemon curd! Just added the pulp to my usual lc cake recipe and also added a teaspoon of ginger. Most now in freezer to be eaten warmed as lc puddings over next few weeks

Dinner hm chilli with slice of LC garlic bread.
Out tomorrow and going out both for an early lunch and dinner after a matinee performance by the CBSO. I've been involved in choice and already know what I'll probably choose. It's always good to check out menus ahead if possible. Hopefully I'll remember to take photos to post - may be the morning after if late back!

This is my recipe I used to make it a lot but have started again - made a successful chocolate batch a couple of weeks ago. You will need to experiment with sweetner amount some people prefer sweeter or less - you know what you like so you can reduce or increase sweetner to suit your own preference. Also type of sweetner has to be one for baking that has a one for one sweetness ie one spoon of sweetener the same as one spoon of sugar. Some are much more concentrated!

Low Carb cakes – to make 12 cakes

Ingredients:


4oz butter ( take out night before baking if its cold or a few hours before planning to bake - makes it easier to beat)

3oz of Cream cheese – full fat ( take out of fridge a few hours before baking)

4oz of Erythritol or your preferred sweetener

4oz of Almond flour or I use Ground Almonds ( ive increased this to 6oz where flavourings are wet such as lemon or melted chocolate or coffee)

3 eggs at room temperature – separated yolks in one bowl and the whites in a different bowl for beating

Teaspoon of baking Powder

Flavourings choices of:

Zest and juice of one lemon (I experimented today with success using a cooked whole lemon pureed by a blender – gives a powerful lemon flavour)

Or for chocolate I use 2oz of cocoa I’ve also used 100% chocolate melted ( about 50 grams)

Or ginger/ cinnamon – 1 teaspoon

Or two shots of expresso/ made up instant coffee cooled

Pre heat the oven to 180 fan or equivalent

Prepare a 12 cupcake baking tray with paper cases in. ( I found some cases called muffin cases and they are bigger than a basic cup cake case so hold more)

Method

  • I start beating the egg whites until stiff and put to one side
  • Beat the butter, cheese and erythritol/ sweetener together until soft
  • Add the Almond flour, baking powder, chosen flavouring and egg yolks and whisk into the creamed mix
  • Fold in the beaten egg whites
  • Divide into the 12 cases and put in oven for 30 mins
Hope it goes well - low carb baking can be tempermental but with lovely ingredients like these even if a bit flat they usually taste lovely!
 
Hi everyone, lunch out yesterday and kept it as low carb as I could but very poor menu for low carbers. Back to intermittent fasting today so "breakfast" at 3pm was flat mushrooms with mozzarella and fried courgette, strong black coffee, followed by avocado baby leaf salad with lime juice and apple cider vinegar dressing and a sprinkle of black sesame seeds. I've just had a mug of home made asparagus soup and in a bit I'm going to have some hard boiled eggs with butter. Dessert will be greek yogurt with kefir and a few strawberries with a sprinkle of chia seeds.

My eating window closes at 8pm so I may have another low carb snack if I need one, as there's quite a calorie deficit today. I would normally use a fair bit of olive oil but I'm increasingly worried about the quality of oils including olive oil and avocado oil having heard a bit about food mafias. I may have a few more eggs to bump up calories and avoid too much hunger. I think there are some more beef slices in the freezer so that's a possibility too. I'll have matcha green tea when I relocate upstairs for the night.

While my back was turned yesterday the kefir was trying to climb out of the jar! I think it was a bit overfermented, it tasted strong but ok, but was very bubbly. I threw this batch out (sorry I know that's wasteful) but kept a few of the grains to start a new batch. That is currently floating to the top and there may be another escape attempt if I don't watch it!

Edit: I said strawberries, it was actually raspberries! Also included a big dollop of full fat soft cheese, so it was like eton mess without the merangue, very nice.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a H&B protein bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: tuna melts with cauliflower, broccoli and Brussels.

Our butcher has far more pork hocks than ham hocks because their cured meats are prepared elsewhere.

I know you buy larger "lots" of meats. I wonder if the butcher you buy those from might be able to help.

A pork hock from the butcher is about £3.50, with ham a few pennies more, so cheap as celeriac chips. :)

I buy pork from a local pig farmer so I’ll check with him next time I order. Good idea.

My food today - black coffee all morning.
Lunch- 2 bacon rashers and a chaffle ( 1 beaten egg and a handful of grated cheese). Having not bought myself a kitchen gadget for at least 2 weeks I spotted this Lakeland mini waffle maker recently. Perfect for my tiny kitchen and to appease my gadget addiction.
Yoghurt with raspberries and seeds
Dinner- airfried pork chop with broccoli and spring greens, followed by a very runny Brie and some nuts. 1 glass red.

I forgot to put yesterdays thrown together meal in the freezer so I had it again tonight. Still tasty, but I don't think I trust it to last yet another day. No problem, the dogs love it and I think one of them has her 11th birthday tomorrow. So the dogs will have a proper doggy party with a celebratory meal tomorrow!
I had it with a small slice of a buttered low carb seedy bread I found in the German supermarket. And then I went to have another slice after dinner, very nice to have a different bread for a change!

Evening all

Today:

B: Two poached eggs smothered with butter and avocado, seasoned with a good grinding of black pepper plus remaining Gorwydd Caerphilly.
Water to swallow tablet.
Espresso.

L: Salmon fillets baked with cauliflower, mushrooms, double cream and lemon verbena.
Steamed asparagus spears and French beans topped with a knob of butter
Water to drink.
Skipped pud.

D Seafood salad using tiger prawns, brown shrimps, lettuce, baby plum tomatoes, celery, Romano peppers, cucumber, Halkidiki olives, salad onions and mustard cress, dressed with an olive oil, balsamic and garlic vinaigrette, topped with roasted macadamia nuts.
Water to wash down tablets.

Not crispy-crispy but crispyish. Likely having to do with spending time in one of those things to keep warm. I'm minded to reheat it in the oven tomorrow, skin side up, and see what happens. :)

How do you usually add recipes from the internet to your CMT?
I allowed the website to install the extension, which added an icon next to my Google search bar.
When I see a recipe I like, I click the icon, which transfers the recipe to my CMT but leaves out all the unnecessary chatter you usually see on recipe websites.

Dinner, local shrimp cooked in garlic butter, cauliflower and black bean salad
Also made a zucchini bread,( more like cake really but that’s the given title), ready for some breakfasts and snacks as I needed to finish the bag of almond flour. We only have a couple of weeks left in this winter sunshine.

D Leftover sausage in a Ketochef roll with salad and coleslaw
 
Neil has an electric grill in pieces sitting on the hob. It is one out of the loft and it had a thorough clean yesterday prior to taking photos to put it onto the local "buy/swap/sell" site, along with the one I have been trialling in the kitchen, which also received a good steam clean, ready to go. We've decided that we don't want either of them. However, when he switched off the big, commercial one, it blew the circuit breaker and Neil decided that there must be some water inside, after the very thorough steaming it got, so he has take the bottom off and is exposing it to the warmish air in the kitchen. Unfortunately, he chose to leave it all on top of the hob. That resgtricted my choice of breakfast.

Breakfast, then was a kind of sloppy joe using RyVita as a base, ragout on top and Dairylea cheese slices on top of that, all heated and melted together in the microwave. It was fine, but as usual when carbohydrates are involved, I'm still hungry so I doubt if I'll last out the rest of the day without food.

I have a piece of salmon in the fridge, so will keep that in mind if I do need to eat later.
