What have you eaten today? (Low carb forum)

It being Easter Sunday, and a day when we move from one holiday home to another, gave me excuses to eat a whole hot cross bun for breakfast.
It didn't go well. High bg rise, and for a long time. Maybe some was stress but who am I kidding? Only me :bag:

L: 2 scrambled eggs with salad and cheese. Still hungry so a nut bar.
Within an hour huge migraine so slept 2 hours. I wish I could work out trigger patterns

Dog walk cleared head.

D: 3 roast chicken thighs and green beans. 2 sqs 85%. Glass white wine
 
Evening meal was shawarma with onions, some endive by way of salad on top, garlic sauce, and runner beans with a knob of butter and salt on the side.
Not a common combination but I had shawarma and runner beans so why not?
I had my neighbour over for food and drinks so I forgot to make a picture, but tomorrow will be the same meal so I'll get another chance. :joyful:

I had kefir late afternoon but forgot that the first meal of the day always needs more insulin so it sent me to 8 from low 5's.
I like the kefir but I'm not sure I like it enough to try to dose for so maybe I'll give my grains to someone else.

Loving your neighbour news updates. Sounds like a wonderful equal relationship.

Very equal, definitely a good 'un, but a relationship apart from friendship with a bit more touching than usual is very unlikely to happen.
We've finished the work on the fence today, followed with a beer at a fire, and a very clear talk about expectations and feelings. We agreed that what we're doing is somewhat confusing, and potentially dangerous to a friendship worth more than whatever else is going on. He won't fall in love with me, I'm dangerously close to falling in love with him but thankfully not there yet. Fingers crossed it stays that way, not in love but finding joy in eachother, both mentally and physical is not a bad place to be at all. Especially not if you talk it all out before problems even start to arise because you're both aware of a friendship looking to become one of those rare for life things.

My apologies for off topingly rambling on about my neighbour, this just is a nicely hidden corner of the internet, populated with people who are friends in a way.
 
Didn't have a second meal today. The breakfast was pretty well enough to last me but I did feel a little peckish at about 21:00 so had a small piece of Port Salut. That will keep me going until morning.

I wrote the above last night but seem to have forgotten to post it. It did keep me going quite satisfactorily until this morning. So far I've had tea and sometime soon will cook a couple of sausages and some eggs. I'm no longer planning for a second meal. If I do get hungry this evening, I will have a hard boiled egg.

Don't worry about chatting about your neighbour Antje. Everyone here wants you to be happy and it sounds as though your comfortable relationship with your neighbour is helping that to happen. You are both approaching things in a very sensible manner which, we hope, will lead to a long-lasting happy time.
 
Morning all. Spent most of the day with my daughter-in-law who has come to stay for a few days on her way back home from a business trip to Italy. We went to a Turkish restaurant and I had a sort of minced beef dish. Today is a mystery till I get there. I've just had some watermelon for bf, trying to eat clean.Getting old and being diabetic is no fun at all! Have a happy Easter Monday folks. :joyful:

I've been reading up on carnivore diets and, while I intend to give it a try (having seen the fantastic result of my friend following it), I suspect that it may not be a long term option for me. I will try, though for as much of a month as I can manage and see what happens, then will try to reintroduce vegetables into my diet. I don't see me managing to go without dairy products nor can I get hold of grass fed products, or bones to make bone broth, so the attempt will not be ideal. My home made sausage should be OK, I think but I can see that processed meat (ham and bacon) could be an issue. Have to think a bit more about that. I'm already missing the few vegetables that I did eat and it's only day 2!


I think carnivore does stretch to eggs and dairy and seafood of course (but with very little lactose like butter and cheese) I also think ham and bacon are ok as long as the ingredients don't include honey or maple or just straight sugar!

Purist carnivores apparently won't even put pepper on their food as it's a plant! But I think if you go as carnivore as you can, while maybe including low carb vegetables etc. sometimes you would be getting into ketosis which is desirable for fat burning.

For me trying to aim for carnivore is really simplifying things (I know I keep going off the rails but I hope if I find the right level I'll be less tempted to) - I don't have to worry about putting meals together, just how to season and cook whatever I'm having. I miss potatoes and chips, and find that pork puffs/pork crackling fill that gap.

I can't afford the grass fed meats, so I buy the supermarket stuff, but if it's in your budget there are farms you can visit which also do mail-order deliveries but I believe even then you can claim your beef is grass-fed if they are pastured some of the time and may be fed grass pellets or other things part of the time too.

I don't place a lot of faith in food labels any more - it's ridiculous how regulations can be swerved and I think a lot of things aren't even caught. Remember the horse meat scandal? I doubt that and other food crime can be completely stamped out or even detected, but hopefully we'll avoid most of it by eating whole meat cuts and fresh mince, avoiding the processed stuff.
 
Brunch small kefir then fried two eggs and served on LC toast. Then a small DGF LC chocolate egg
Unexpected lovely day here so got out gardening and also prepared next fence panels for painting tomorrow so crossing fingers dry weather so can get on with it. Also put me more in mood for a cold salad meal- snap @IanBish
I had left overs from yesterday's roast meal with a salad plus a spoon of sauerkraut. For pudding had LC not carrot cake with decaffeinated coffee

@shelley262 I've had to put my kefir grains in the freezer, I can't keep up with them!

@IanBish, do you have a recipe for the home made marie rose sauce? That looks amazing!
 
Had a couple of hard boiled eggs late afternoon - obviously the sausage and scrambled egg wasn't enough to last me all day.

I had vegetables in the fridge which I'm not going to be using so I decided to cook them before they went off. Made ratatouille - quite a large amount, plus one large courgette which I sliced and fried in butter, plus some green beans which I microwaved and poured melted butter over. These are going in to the freezer tonight. There are still some leeks, spring onions, cabbage, onions, swede and tomatoes to be prepped for the freezer, but I'll do those tomorrow.

Kefir grains feel a bit like having small pets at times you have to keep feeding and they keep growing! I've going to start a regular system of fridge resting periods (nap times!) To help me manage them. I love kefir though and mix a small amount with wild fish oil and really do feel it's improving our health and especially OH. So am keeping on with it to make sure there is enough ready for our daily dose......
