What have you eaten today? (Low carb forum)

Just black coffee first thing then off to volunteer as marshal for Parkrun, which meant I basically stood in the rain for 2 hrs.
Back home wet and hungry, had beef and mustard sandwich in Heylo seedy bread. I like this bread although it doesn’t have such clean ingredients as the Low Carb Food Co. I don’t like the other Heylo products I’ve tried however ( the granola and flatbreads).
Dinner was slow cooked beef shin with onions and mushrooms, served with airfried veg. DGF brownie and cream.
Forgot photos today.
 
Breakfast kefir then bacon and egg
Lunch cheese, celery and LC seeded crackers followed by a few berries with yoghurt.
Dinner usual hm chicken curry served with chopped coriander and half a seriously low carb protein wrap that I'd reheated by frying briefly with a smidge of butter. they're tasty but prefer my hm LC naan - but short of time to make them this week. Maybe next week.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: house special curry from local Chinese takeaway with three prawn crackers, I didn’t eat all of the sauce (!) and blood sugar behaved itself :)

B- Greek yoghurt with seeds and blueberries
L- Couple of boiled eggs
D- Beef blade joint ( never tried this before but will definitely have again) covered in foil and cooked in a very low oven on sliced onions. ( gravy made by liquidising the onions with the collected meat juices) Cauli cheese, green beans with garlic butter and almonds. Rainbow chard, spoonful of horseradish. DGF coffee&walnut cake with a cup of tea afterwards.

Mid afternoon: coffee shop cappuccino and another carb killa bar.
Dinner: my version of @DJC3 ’s quiche made with sliced corned beef for the ‘case’. I lightly fried chopped red onion, mushrooms, sweet peppers and baby tomatoes, added them to the ‘cases’ before adding eggs, cottage cheese and grated mature cheddar on top. Serve with broccoli, green beans and carrots.

I made two small quiches and photographed them before serving as I was not sure I would get a neat portion out to serve, however I did!

PS thanks for the idea DJC3, it was delicious!

Breakfast - 2 boiled eggs mashed up in a cup with butter (nursery eggs) washed down with half a grenade bar and a cup of earl grey tea

Dinner - mixed olives, avocado, salmon and a garlicky/prawn cocktail. Kefir with mixed chia & flaxseeds topped with raspberries & blueberries. Large glass of Diet Pepsi with lime

They look fantastic, the added sauteed veg was a great addition.
 
Away for a few days, breakfast was a hurriedly grabbed chunk of cheddar and handful of almonds.
Packed lunch eaten on the train was a cheese and marmite sandwich in Heylo bread.
Dinner at a nearby bistro - feta, courgette and pepper frittata to start then steak and salad. 2 glasses wine.
(Too embarrassed to take a photo)
 
Frittata night - cooked six eggs with mushrooms, tomatoes, last of chicken, chorizo, garlic, chilli flakes and topped with lots of vintage cheddar cheese grated and browned to finish under the grill.

Had a slice with coleslaw for dinner - some left in fridge for lunch tomorrow
