What have you eaten today? (Low carb forum)

Lunch was scrambled eggs on small sourdough toast. I'm not quite sure why it "spikes" so high, up to 8.6. Maybe because it's quite dense. And for dinner I had a home made chicken Jalfrezi, with some Basmati rice fried with onions, mushrooms and green beans. I posted a picture because it was very nice.

Coffee and unsweetened almond milk x 2
Cottage Cheese
Avocado and balsamic
1 Small Plaice coconut oill
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: kedgeree made with cauliflower rice.

B- Black coffee x3
L- Made a batch of Scotch Eggs using M&S Heritage Gold sausages and pork panko. Had one with salad. DGF ginger blondie.
D- Pheasant casserole with Tenderstem broccoli followed by another DGF ginger Blondie.

Usual brunch. Teatime 2 dy crackers and a small piece of goat cheese. Dinner was pork rashers grilled to crunchiness, with cauliflower and broccoli, followed by 4 squares of Monte's

Was your hot cross bun a Panda Pantry bake? I’ve just received the pack and am hoping to bake tomorrow.
Yes it was they are wonderful - hope you enjoy baking them. Most important thing like other Panda Bakes is that you need to weigh amounts carefully -_especially the wet ingredients. I grated a whole cooking Apple but have frozen much of it to use in the future.
I'm going to watch his Facebook live at 2 tomorrow as he's making low carb pasta so I have plans to try the golden pasta tomorrow - will hopefully roll it out for lasagne sheets

I’ll be interested to see how your pasta turns out, Im not sure I’d have the patience to make it. I’m really looking forward to the h/c buns though - I miss them.

Lunch cheese and M and S seeded crackers and hm LC hot cross bun.
This afternoon I watched a Panda Pantry live low carb high protein pasta demonstration and made my very first pasta plus rolled it into lasagne sheets. It was fun and a real success - very easy to work with. Assembly photo below shows the two lasagnes I was putting together on the kitchen surface and also ,in the foreground, one of my home made rolled out low carb lasagne sheets on my airer as I've got limited surfaces so stored the sheets as I rolled them on my clothes airer! One lasagne was cooked for dinner and one popped into freezer

Dinner a portion of the delicious lasagne served with some kimchi and micro greens - delicious could not taste the difference from high carb pasta. Much better too than the commercial dried low carb pasta.

Edit just rolling worked really well didn't use a pasta machine

Today I had black coffee until lunchtime, then went out for lunch at a new ( to us) restaurant. We had a selection of small plates- olives, lomo ( fatty cured pork), a fried oyster, sliced roast pork with crispy skin, kale and broccoli with garlic confit. All delicious and we’ll be going back.
Dinner was a hake steak with green beans dressed in olive oil.

B- yoghurt and blueberries
L- h/m scotch egg and an airfried chicken thigh. A Panda Pantry hot cross bun with butter. The whole kitchen smells divine with all the spices and orange zest.
D- m&S ‘just 3 ingredients’ burger in L/c roll with bacon and cheese. Mixed salad. DGF brownie.
