What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: salt, pepper and chilli pork belly slices with apple sauce, gravy, cauliflower, broccoli and carrots.

Breakfast kefir then scrambled eggs
Lunch hm LC hot cross bun buttered and served with some cheddar cheese
Dinner made a couple of lasagnes last week using my first ever hm LC pasta and put one in freezer to see how it did. I reheated it today and it was excellent - just as good as the one I ate last week. So I'm planning next week to make more hm LC pasta sheets for lots of lasagne portions( I'll also double up on the Bolognese) and freeze the extras. They are ideal when busy day as can be reheated and served with salad - perfect.

Lunch of L/C pizza base topped with sour cream, mozarella, salami, mushrooms and red pepper. DGF Dubai egg.
Dinner h/m venison meatballs in a garlicky sauce with green beans. L/c brownie for pud.

Can we have your lasagne recipe? I've never made lasagne in my life but it looks perfect for a meal on the bridge.

I'll have an evening meal shortly of various cheeses, olives, small peppers filled with cream cheese, too busy to cook today. :)

Full disclosure. Lunch was a portion of ***** at the seaside, and tea was a Cornish ******. Not low carb at all, but I didn't have a biosensor on to keep an eye on me. I won't make this a regular occurrence, as nice at it was.

I lied. Evening meal turned out to be a slice of LC toast with sucuk (Turkish garlic sausage) with a fried duck egg and two different cheeses. I had no idea it was going to be this when I headed to the kitchen. :hilarious:

I'm making lasagne in bulk next week. Apart from the hm LC panda golden flour pasta sheets I don't use a recipe but I will try to remember to write it down. It has three main processes which you assemble - slow cooking the Bolognese, hand making and rolling the pasta sheets and lastly mixing a simple cheese sauce. I aim to make four portions nexr time and freeze three. Reheating is simple but preparation requires time and is a bit faffy.

Lunch slice of hm LC seeded golden panda flour bread with ham and cheese.
Dinner found a pack of Sirloin steak with garlic butter in freezer from the M and S Valentine's day meal deal so defrosted it and used it today!
Sirloin steak, salad and mushrooms cooked in garlic butter.

Followed by portion of rhubarb and ginger cake.
 
A travelling day today so just black coffee as usual all morning.
Packed lunch of L/c roll filled with beef, Gouda and sauerkraut. Small pot of mixed nuts.
This afternoon a couple of sugar free Werthers while driving.
Dinner at home - quick and simple chicken stir fry with veg and Bare Naked noodles ( konjac flour) Montezuma’s AB and tea with lactofree milk to follow

To make up for yesterday, lunch today was (better) sausages with peas in an improved (simpler) onion gravy. And dinner was a courgetti bolognese. But I think I'd prefer @Rachox's version.
Indeed I prefer to slice and sauté my courgettes, or they go a bit soggy!
 
Yesterday - usual brunch, teatime half a small pork pie with English mustard, dinner steak with broccoli, cauliflower and sprouts, no chocolate as Mr. Outlier forgot! Does this mean double portions today. I suspect not.
