What have you eaten today? (Low carb forum)

B- egg on cheese on LC toast.
L- Salad with tin of mackerel and a hard boiled egg. A few handfuls of blackberries picked on our morning dog walk.
D-M&S ‘just 3 ingredients’ meatballs with a smidge of their Everything sauce and fresh basil on courgette ribbons. 4 sq Montezuma’s AB

Breakfast: Chocolate Surreal with strawberries and coconut milk washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: bacon roll, low carb with sugar free ketchup.

Marmite and cheese on LC toast for breakfast.
Out all day, picnic lunch included small ham salad LC sandwich, LC sausage roll and LC rhubarb upside down cake.
Dinner ranch steak with 2 grilled mushrooms and sauerkraut.
 
Breakfast kefir and some seeds and nuts followed by roasted garden tomatoes on LC toast
Lunch ham and tomato open sandwich on one slice of LC bread
Dinner salmon and garden beans followed by a few garden berries and yoghurt.
 
Breakfast: Chocolate Surreal with strawberries and coconut milk washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: strawberry and halloumi salad with lemon and balsamic dressing.

Breakfast kefir and low carb granola followed by a slice of LC toast with almond butter
Lunch open sandwich on one slice of LC bread with ham and tomato followed by a few berries
Dinner chicken curry served with fresh coriander and mint raita followed by half a chocolate muffin.
 
First meal was lunch: bacon grilled mushroom and egg. Choc chia pudding and fresh raspberries.
Dinner: air fried duck breast, steamed broccoli, grilled aubergine and tomato slices, more grilled mushrooms ( we had a big box, past their best before date and looking very sad) Rhubarb crumble (made without sugar or sweetener but dessicated coconut added to the panda flour crumble mix to add a little sweetness)

@DJC3 good idea with coconut - I also find adding a few chopped nuts and some cinnamon adds sweetness. Also have you tried concentrated monk fruit drops? I sometimes use just a few drops to take edge off the sharpness in rhubarb if not using any sweetness in the crumble mix. I've also used a few drops of monk fruit when making ice cream lollipops without using granulated\powdered sweetener. It's very sweet so you just need a tiny bit.

Breakfast garden tomatoes slowly roasted in olive oil served on LC toast
Lunch LC open sandwich with ham and sliced cooked organic beetroot followed by a few berries and yoghurt.
Lots of meal prep today. Yesterday I made home cooked tomato sauce using some garden tomatoes and then slow cooked it as a Bolognese with additions of 500g each of beef and pork mince and some extra veggies - then cooled and refrigerated until today. Made low carb cheese sauce and then Panda Flour golden pasta which I rolled out into eight rectangles for the lasagnes. Put together four lasagnes, added beans and chilli to a portion of Bolognese and then froze all except one lasagne. Also made a small LC quiche with leftover LC pastry had in fridge that's now in fridge for tomorrow.
1786902433885.jpg Tonight's dinner was one of the lasagnes cooked and shared with husband and served with green salad from garden and a bean salad I put together - as used the kidney beans in a mixed beans can I had for the chilli con carne.

Also just had half a LC chocolate muffin with a mug of decaffeinated coffee.
Edit to add that I am eating more different pulses, which are not low carb, to previously. I often eat hummus which I don't react to and have now added other beans. I'm keeping portions low but the spoon of mixed bean salad had little impact - ate about two hours ago. I do rinse any cans of beans many times to reduce the starch a bit. It's clearly an individual reaction but small portions of beans are now in my repertoire.

I’ve not tried the monkfruit drops, thanks for the tip. I like the tartness of rhubarb but there are things I’d like to be sweeter but am wary of too much powdered sweetener. Good idea for ice cream too. Where do you buy it?

Bit of an odd brunch as I was due out and hadn’t realised the time- handful of walnuts, hard boiled egg and a few spoonfuls of choc chia pud.
Dinner was slow roast pork belly with crispy crackling, broccoli, roast aubergine and broccoli stalks.
The last of the rhubarb crumble with cream to follow.
I was given a load of heritage tomatoes from a neighbour’s garden. I’ve eaten a few and they are delicious but BG is hinting I should ease off a bit!

Holland and Barrett it's a pure via liquid sweetener secret is only a tiny amount. Monk fruit is intensely sweet so great as really don't need much at all. Lasts for ages.

Dinner hm LC veggie quiche with garden salad, some beetroot and mixed bean salad. Followed by half a LC lemon muffin, a few berries and spoon of cream.

B- scrambled egg and L/c brioche
L- salad followed by l/c scone topped with cream cheese and blackberries.
D- the rest of the pork belly joint - crackling crisped up nicely in the airfrier. Locally grown green veg. Choc chia pud and more blackberries.
