What have you eaten today? (Low carb forum)

Breakfast kefir then scrambled eggs
Lunch hm LC roll with cheese and celery ( made some Panda Flour ones this morning, photo below of baking) and a couple of squares of 100% chocolate

Dinner pork cutlet with cauliflower mash, a few roasted pieces of parsnips and carrots and mushrooms in a cream sauce. A bit too much tbh I'm not used to big portions so couldn't finish it all - delicious though!

Your bbq looks and sounds fab @Antje77 I’m envious.
Today’s main meal was roast topside ( done in airfryer on dehydrate setting. I thoroughly recommend this method) cauli cheese, sprouts and tenderstem broccoli. I made rice pudding for the family but I had chocolate chia pud.
For brunch I had L/c Welsh cakes ( panda flour again) topped with cream cheese.

Breakfast - kefir drink, 3 egg cheese omlette washed down with mug of earl grey and 1 square lindt 90%

Dinner - Aldi pilal prawn cocktail, 2 chicken breasts in a mushroom & cream sauce then some yoghurt kefir with flax and chia seeds mixed through topped with raspberries & blueberries and finally another 1 square of lindt 90% dark chocolate and of course large glass of aldi cola x zero sugar. I am sitting here just now thinking about having a few walnuts also ...

@Annb I am thinking of you and I hope you are doing ok, take good care of and look after yourself x
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: same as yesterday (new pic!)

Welcome to the thread - great sounding menu today. Which sausages do you buy? Waitrose 1 free range sausages are one of my favourites - very low carb but still tasty. The New M&S just few Ingredients ones are really good too and even lower carbs.
 
Coffee and unsweetened almond milk x 2
Cottage Cheese and tomato
Roast Chicken Coleslaw
 
Black coffee until lunch out with a friend. I had what the menu called ‘eggs and hash’: poached eggs, hollandaise sauce, rocket, gochujang and hash browns. They swapped the hash browns for 2 big mushrooms at my request and added bacon. it was fab.
Dinner was a cheese omelette with veg leftover from yesterday. Yoghurt and blueberries to follow ( not frozen this time @shelley262 but I agree that is a quick and enjoyable pud.)

Hi when you bake your cakes what type of low carb sugars do you use and is it like for like. Most of the low carb sugars I have look quite high when reading the back of pack. Thanks.

As I now buy Panda Pantry low carb flour, I'm a regular subscriber but for clarity have no affiliation to them, and use their recipes and mixes as they work for me ( sometimes make small changes like additional spices but generally stick to panda recipes or mixes). So I use their same sweetener blend of erythritol and stevia if not using their cake mix.
You can also buy this mix of sweeteners from other places. I've always found low carb baking a challenge as it's a bit like chemistry getting it all right in right amounts. Re carbs and sweeteners the carbs in sugar alcohols are not digestible so shouldn't affect your blood sugars - they don't mine.
Panda Pantry also do some small sample cake mixes where you could try how the flour and sweeteners worked for you - like this one which I add extra coffee and cinnamon to:

L- cheese, olives and nuts.
D- lamb tikka masala ( made with leftover cooked lamb I’d frozen and a tub of curry sauce I’d made double quantities of and also frozen) cauli rice, sauerkraut. Montezuma’s AB
