Type 2s: What have you eaten today?

No breakfast

Lunch = bacon, eggs, mushrooms cooked in butter

Snack = brazil nuts

Dinner = salmon with pesto dressing, vegetable "couscous" (ie very ginrly chopped veg, stir fried), and roccoli, followed by a handful of raspberries with double cream. Yum.

High readings this morning until I ate lunch, then they came down a lot. 6.2 reading 2 hours after dinner which I was pleased with

We went to breakfast at a restaurant


where the 'seniors' special' was

two eggs, bacon, hash browns

and toast for $2.99.
'Sounds good,' my wife said.


'But I don't want the eggs..'


'Then, I'll have to charge you $3.49

because you're ordering a la carte,'
the waitress warned her.



'You mean I'd have to pay for

not taking the eggs?'

my wife asked incredulously.


'YES!' stated the waitress..


'I'll take the special then,' my wife said..


'How do you want your eggs?'
the waitress asked.



'Raw and in the shell,' my wife replied.

She took the two eggs home

and baked a cake.

The weekend wasn't all good - had a chicken burger @ The Harvester - filled up on the salad bar and didn't eat the bread... Yum

I finished off a Pie Minister Pie one the boys left. YUM! Vey bad for me, but so tasty!

Sunday I made a beef stew with ox cheek - We went to see Star Wars Saturday night and I left the stew cooking for about 5 hours. Came back to fab smelling house!

Sunday we had the stew, chips for the boys and the OH and I had celeriac chips. NUM!

Today is a low calorie day - breakfast of coffee, no lunch and fish for tonight's supper.

S. Coffee & cream
D. Slow cooked shin of beef, veges, broth mix, red lentils, 1 dumpling!!!

D: 3 x chicken drumsticks, broccoli, cauliflour, cheese sauce, pepsi max

Today

B: coffee n cream

L: chicken drumstick, creamy broccoli

D: chicken breast stuffed with sour cream and cheese, wrapped in bacon, broccoli and cauliflour with cheese sauce, pepsi max

S: 3 x coffee n cream, ham, mayo
 
Yesterday I had a minced pork omelet, cauliflower and sweet potato curry for lunch and 250g broad beans for dinner. Today I had the ubiquitous omelet, two tins of sardines in tomato sauce made into a Thai-style salad and I'm planning on 5 pints of lager for dinner
 
Well, last night we had Mackerel with celeriac wedges and mixed roasted veggies - baby onions, red pepper, broccoli & courgettes.

This morning's breakfast is coffee and walnuts

Tonight it'll be the very last of the beef stew with celeriac wedges and another load of roasted mixed veggies. Maybe even a glass of red too!

Ok all you good people. I wonder if you can help me with some specifics.
For ME at least meal size almost matters most. I was hoping you could be more specific on approx. how many veg you eat for instance. If you were to put it in a measuring cup about how many cups or fractions of cups would your veg be? Also about how many oz of protein? Then approx. how much fat do you add to veg or protein? Do you gob it or drizzle it?
Pictures would be great but not sure how easy that is for those technically challenged such as myself.
