Type 2s: What have you eaten today?

Microwave Peanut Butter Cookie
1 - 2 Tbsps peanut butter
1 Tbsp Almond Milk
1 tsp stevia. [ I used no sugar syrup ] had no stevia
1 Tbsp ground oats.
1 egg white
Mix all together / pour onto a plate / microwave for about 1 minute
I had to this a few times before I got it right but tastes ok. Good luck let me know how you get on.:)
Thanks very much - will have to see where I can get stevia from.
 
Monday 21st March.

Morning:-

Fasting Blood Glucose:- 6.7 millimoles per litre.

1 Deep Pan Double Cheeseburger Pizza, with ground beef, grated mozzarella cheese, flavouring, finely chopped onion and complex carbohydrate in the dough base.

2 mugs of coffee, with 1 5 ml spoon of instant coffee granules, 3 Hermasetas mini artificial sweeteners, and 1 level 5 ml spoon of Nido Milk Powder.

10 glasses of tap water.

2:40 pm:- Blood glucose reading:- 6.1 millimoles per litre.

Lixisenatide 20 mcg and Metformin Hydrochloride complied by at approximately 10-11 am.
 
Been a bad day.
Crunch nut corn flakes and milk.
Packet of crisps, large.
Fried mushrooms in lowfat spray, added straight to wok noodles, mixed in sweet chillie sauce.
can diet Dr peppers cup of milk.
 
Greek yogurt for brekkie, turkey sandwich (granary) for lunch and Salmon, small new potatoes, broccoli, green beans and watercress sauce for tea.
 
B 1 poached egg and 1 slice of burgen bread
L Stew and veg left from last night
S a few mixed nuts / 1 pear
D Peanut butter mug cake and added 1 piece of Moser Roth dark choc 85% [ from Aldi]
shredded it in the mixture and microwaved
for 90 mins left to cool then sliced in two and buttered / 1pkt of pork scratchings
BG reading 2 hrs after dinner 5.4 Happy with this as it was a bit of a mixture today.

Unfortunately I am a smoker as well (hand rolled about 12 - 15 a day). The good news is I don't think the smokes are lifting your BG's. The bad news is I think the pizza bases are

B - almond milk smoothie with kale & flax seed
S - one dark chocolate digestive
L - tinned mackerel fillets in tomato sauce with rocket, beetroot, cucumber & tomato salad; apple & almond milk & oatmeal
S - easy peeler (think I've been having too many of these)
D - courgetti, pesto & chickpeas, apple; still hungry so going to have 2 fish fingers

D: pasta carbonara - no carb pasta , spirallised courgette and squash , 4 rashers of bacon and 2 eggs. Recipe still needs perfecting but only 25 g of carbs incl 2 slices of livlong bread
 
B: 120g Greek style yogurt (8 carbs). Blood sugar 4.9 before, 6.4 two hours later (including a 3 mile walk).

L: Turkey sandwich (estimated at 30 carbs). 6.3 before, 7.9 two hours later.

T: Cottage pie, cauliflower cheese, carrots & peas and a plum (42.5 carbs). 5.8 before.

Breakfast was tea with skim milk no sugar and a digestive biscuit. Lunch was 2 rashers of bacon and 1/4 tin sausages and spaghetti. Snack of half a packet of ready salted French fries. Now off for a mile walk before my chocolate feast with my girl guides at 6pm. Dinner is yet to be decided.

D: an attempt at making risotto with konjac rice . It was nice but not enormously rissottoey. May add cream cheese next time but included red cabbage courgette and bacon with Parmesan. 14 g carb 8.8 before 8.9 2 hours after

HI LaurenMoffitt, In the post I put microwave for 90 mins it should have read microwaved for 90 seconds sorry about that.
2tablespoons of peanut butter and 1 egg beat together in a mug, I added a piece of choc shredded as you can see. When beaten place in microwave for 90 seconds and hey presto there you have your cake. Eat hot or cold I butter it or some people put berries and cream on however you like it, hope you enjoy.:)
