Type 2s: What have you eaten today?

Yesterday strayed marginally off the keto! Asterisks denote non-keto ingredients. Not intending to make a habit of it, but.....

Brunch: small Greek yoghurt and a piece of cheese.

Dinner: slow-roasted oxtail in Guinness* with Brussels sprouts and cauliflower, 2 roast sweet chestnuts* leeks for onion flavour, teaspoon of English mustard* while non-diabetic spouse added pearl barley and carrots to his portion. My but that was good! And a glass of red wine.

I've made lumpy soup with the leftovers (apart from carrots and all but a few grains of pearl barley) and that's today's brunch. Dinner will be pork chop with sprouts and cauliflower. No wine for the next few days as I like to take a break from it between bottles. And a bottle lasts me 5 days.

Curry made with red pepper , one chilli pepper, onion and some curry powder , with 50g brown rice ,
Small natural yogurt with 4 small grapes

Will have chicken later with broccoli and turnip
 
Espresso, another espresso, a strong americano, 60g pot of cashews and a small banana mid morning.
bought a meal deal for lunch but options were limited so ended up with a chicken, bacon and lettuce sandwich, two hard boiled eggs and a bottle of water. Not ideal as I tend to avoid sandwiches these days unless I have low carb bread.
Tested before eating (2pm) and it was a bit low at 3.7.
After 60 mins, 4.4.
After 90 mins 4.9.
Got stuck in a meeting so next test was 180 mins and 5.8.
Then at 210 mins 5.6.
Do people have the occasional "weird day" or can someone's insulin sensitivity change after they'd lost a fair bit of weight (31kg in my case?)

Breakfast = 2 slices of toast with marg and jam followed by a 2 1/2 mile walk
meter reading 2 hrs on........................................5.2
Dinner = 2 x quarter pounder burgers, 3 x large bratwurst sausages, portion of shredded lettuce and a dollop of greek yoghurt followed by 1/2 hour on treadmill and a walk to town and back (3 miles)

Tea will be pasta with cheese sauce and bacon sprinkled on top.
Are you predibetic? If so, how can you eat all those things: pasta, toast, jam?
 
4 egg omelette with 5 small tomatoes and small onion , @ 5.9 before ,will update in 2 hours. , 5.4 two hours later

Quesadillas - with 3 eggs, 1/4 cup of cheddar, and a low carb wrap

2 x 1/4 burger + 1 serving of chaffle with mozarella

my treat for the day was 2 Dark chocolate digestive biscuits.

I wonder if I am eating too much! Was one of those days yesterday was craving carbs and am trying to lower carbs due to high blood sugar levels
 
Broke my fast this morning as I have had a migraine and need to take some tablets for it. So far today....

B - Slice corned beef, small portion of salted peanuts. 2 cream/unsweetened almond milk tea.
L - Chicken breast with Parma ham
L - Left over bolognaise with bean sprouts plus lots of green tea and water ;)
