@DJC3 meant to add (but sooo many posts to read) when I read the details of your Lebanese/ Turkish meal reminded me of another of dear departed MIL comments. Part way across a road she announced to FIL "I really like that Lesbian bread" and walked on while he choked.

@BibaBee -- Having all these appointments can't be easy for someone suffering from anxiety like your husband. Now that his blood sugars are lower and stable, there hopefully shouldn't be any new damage.
@maglil55 -- Great that your brother got the all clear on his checkup. Wonderful news.

Just eaten some amazing caramel - best yet - lots of inulin and butter. Really easy to make. Just walk the dogs and it appears in the fridge. Very proud of myself - a real talent:angelic:

Ive said it before and I’ll say it again - I want a Mrs P!

I agree with @ianpspurs on the inulin (as you know I'm a big fan of it for creme brulee). The Lankanto classic monkfruit also makes a really good caramel. I used it during the summer when I made low carb sticky toffee pudding for everyone. It's one of Caroline Ketchum's recipes but I did adjust it a little. I used black treacle instead of syrup substitute as it was just 2 teaspoons in the cake and for the carbaholics I added chopped rum soaked dates and raisins to the mix. I had a little cake bar for myself minus the dates/raisins. The caramel to pour on and cook into it at the end , the monkfruit was more what I was after. Monkfruit melts very easily - I used 1/4 cup lakanto monkfruit classic (golden works too) and 3 tablespoons each butter and double cream. Very easy melt the monkfruit on a low heat stirring all the time (it goes liquid very easily). Once liquid add the butter and keep stirring until the butter melts then add the cream and keep stirring for another 2 or 3 mins. You can bring the heat up until it's almost boiling but don't let it boil. Inulin is less sweet but this is bloomin' good for sticky toffee pudding

okra. Cigarette smoke, old, new, and permeating a room, wafting from a balcony, etc etc. That I have so many chronic diseases. That I take so very many meds. Being cold. Anything too loud, but specifically non-classical music and the television.
@Kingmidas that is exactly how I’ve felt for a couple of weeks, and today I don’t! I hope it lasts for both of us. Those fries look amazingly good, will try that one someday for sure!
@Rachox I read “raw ham”.....
@Emma_369 congrats on the fast!!! Yeah, blue cheese on a starving sense of smell... how about nice cheddar for the stroganoff? Ah ok I see you’ve found a good version.

My (delicious to me but borrrinnnng to others lol) food day:
Bfast 1/2 avocado, egg, pine nuts, decaf/soy/cream
Lunch in a hurry celery, cherry tomatoes, almond butter on the lc tortilla.
Take mom on an errand for me- sewing store for elastic. Won’t take her there again! She spent the whole time fretting about how she could find no knitting supplies. I reassured her several times that I’d find her own supplies in her room, but as she can’t remember for 7 seconds, I finally goaded her with “better get a move on if we want coffee!” Greased lightning magic!
Starbucks, decaf w half n half. They don’t have cream.
Supper bowl of greens, some mushrooms, cherry tomatoes, and trying to decide if I want sardines or swiss cheese now. Had fish last night. Cheese it is!
My new pan of bread just came out of the oven. I forgot to turn the oven temp back when I put the batter in, so it may be quite solid, phooey! Might have to try a piece while it’s hot...I used a king’s ransom in warm sweet spices, so it had BETTER taste like either gingerbread or pumpkin pie this time!
My caramel fairy only makes choc chip cookies....

It’s sugary. See screenshot from their website - they have great nutritional detail for the whole menu. This one is the vanilla yoghurt.

The Saj is allegedly how our Home Secretary (who is desperate to be PM) refers to himself. I don't think you have an equivalent office of state. The mind boggles as to how POTUS refers to himself.

Yikes - thanks for that. Guess I'll stick to safe stuff. Nando's won over Five Guys because they have Halloumi.
Last time we were in that neck of the woods we all went to TGI'S but that didn't work for me at all and the service was awful.

After being sent a copy of the What Have You Eaten Today by @shelley262, thank you, I began by making flax crackers. I then came across this recipe and made some in the microwave. On spreading out on baking paper, I scored mine to make into mouth sized snack portions. I checked after 2 minutes and gave them a total of 3 minutes. Small amount but very pleasing results.

Better Than Crisp Bread Flax Cracker
2 Tbsp flax seed meal
2 Tbsp water
spices to taste (optional)

In a bowl, mix flax seed meal with water and spices (I use a fork). Let rest 2-3 minutes.

On a piece of parchment, press and gently spread the mixture with a fork, until the shape desired (usually a 4" X 8" cracker, but can be round or other shapes as well). Microwave for 2.5 minutes or until cracker is solid.

Let cool.

Top with cream cheese, taco dip or anything you might be hankering for.

Makes one cracker.

Tips: I reuse parchment paper to make more crackers.

The crackers store beautifully when loosely bagged, so you can make some for the road.

Sounds good. We can't get that combo to work for bread but crackers may work for me. Would obviously work for the fibre element.

It's closer to solid but becomes runny again as soon as heat gets at it. I kept it in a Kilner jar in the fridge for about 3 weeks and it was fine (it got used - it hadn't gone off).
The good thing was the carbaholics had no idea this was an adapted recipe. In fact , a few said it was the best sticky toffee pudding they'd ever had. Having said that if they'd only had shop bought any home made should be better. It was the same with the low carb black forest gateaux - they hadn't a clue.

Just been out on the “French Toast run”, which is what happens in the American south when snow, sleet, freezing rain, or “wintry mix” are forecast. So the store was a zoo, but I got my chicken to make poor snurfle-y hubby some chicken soup tomorrow when ain’t nobody goin’ nowhere. Now would be a good time to have bought an IP... but that long simmering smells sooo good!
As I was picking out onions, I realized that those might make the stock problematic for me, even if they are discarded. Does the sugar from the onion leach into the liquid as it all cooks? Notice I am a very poor chemist!

I've just had one Aldi halloumi chip. I think it must be an acquired taste that I haven't acquired yet. Even the dogs turned their noses up of a taster.

Today...

Slept in until gone 10am eeek :eek:. Its been many years since I've slept in that late.

Brunch: eggs, bacon, sausages, mushrooms and.... baked beans (after all the chat about them on this thread I just couldn't resist). BGs before 6.7, BGs two hours after 6.5!!

Dinner: Aldi chicken breast fillets (two of 'em) in peri peri sauce, lettuce, three cherry tomatoes and a few spring onions. Chicken dish was okay-ish but probably won't bother with it again - basically it was just spicy hot with no other proper flavour. One halloumi chip - which (to me) tasted like swimming pools smell. Not the most successful dinner I've eaten.

Pudding: Greek yoghurt, crushed pecan nuts, couple of raspberries and chia seeds

Drinks: Morning: black decaff coffee, Afternoons: still mineral water, Dinner and evening: red wine and still mineral water +but not at the same time!!!

Evening all.
Breakfast - usual peanut & chocolate protein bar with a cuppa
Mid morning - black coffee
Lunch - 3 Lincolnshire sausages (1.3g carb each), 3 rashers thick cut smoked bacon, 2 grilled tomatoes, a handful of mushrooms and a fried egg
Mid afternoon - I had the best idea ever (well, an idea I’m sure people have had before and nowhere near as clever as actual inventions) but I took 2 squares of 85% dark chocolate and then spread peanut butter over the top of them so eating it tasted like a Reeses peanut butter cups which were my favourite pre-diagnosis chocolate so I don’t have the words to explain how excited I am at replacing it with a diabetic friendly version.
Dinner - husband is out at present having a ‘couple’ of guinesses which usually equates to about 6 :rolleyes: but has informed me he’s bringing takeaway home from the local Indian so my order of chicken madras and garlic fried mutton tikka has been placed with him. Now I can’t have rice or naan I feel I’m justified in having two lots of meat :angelic: I will also try a gin with diet lemonade - Xmas revealed that when people can no longer buy you chocolates they resort to buying you alcohol so I have a decent collection of miniature gins to try

i think you are right... maybe its a seasonal (thing after having had so much cheese over Christmas). Normally I love cheese and I've got a good selection in the fridge but none of them appeal to me at the moment.
