What have you eaten today? (Low carb forum)

The sprouted whole wheat flour saga continues. First, here's the link to the recipe for the well risen bread.

Must admit I didn't much fancy adding normal whole wheat and white flour to the mix even if THM maintained it was still "on plan". Why compound what seems to be an already high carb count. Anyway, it seems this sprouted wheat flour is low GI which could be the reason they're saying it keeps BGs stable. But how many of us were told to focus on low GI and discovered it meant diddly squat in terms of BG spikes.
I've had a really good rake on the internet and the ingredients she recommends would have to be imported from the USA (so you're fine @zauberflot). Vital wheat gluten we can get on Amazon. Different make but the reviews are good. SAF yeast we can get the blue tin on Amazon which has good reviews but not the red instant yeast. That would be another import job and I cant say I fancy paying £48 for yeast.
So I can live with the blue SAF yeast and the other vital wheat gluten. The main problem is the sprouted whole wheat flour. Sprouted Buckwheat and sprouted spelt is pretty easy to source. Sprouted whole wheat - the one that seems to exist here is Rude Health but finding it in stock is another matter. I've emailed one health food store whose web site said it was temporarily out of stock and have since found another supplier who is taking orders for dispatch after 25 January but you have to buy a box of 5. I'm loath to buy 5 if I find it does spike me.
I'm stuck a bit then. I've put the SAF yeast and the VWG into an Amazon basket and will patiently wait for a reply on the sprouted wheat.
Meantime I'll go backwards to have a look at pastry!
 
Oh my gosh @maglil55 that dauphinoise (I’d call it “scalloped not-potatoes”) is something Mr ZF would eat too and call it good! And possibly the roasties too. Congrats on cupboarding! And the being ruthless in the kitchen supplies. I’ll ship you ingredients for bread!

Well. Big whoop. I just cut and peeled a celeriac (?) and it was no more fuss than an equal sized potato. Chopped up and why not boil up for mashed faux potatoes? Try for lunch tomorrow. Or maybe set aside for roasting; tastier sounding right now.
Everybody’s seeing Mary Queen of Scots... would people who don’t remember their history enjoy it?

Re this sprouted bread. If you can find Ezekiel 4:9 bread you could give that a try before turning yourself inside out getting ingredients. I seem to remember that all it has in it for carbs is the sprouts. And precious few other ingredients besides sprouts. They also make buns and either bagels or english muffins. Same recipe.

and celeriac, i gave that a go a few weeks back, first effort ok..wonderr if i didn't cook it long enough i wasn't a fan but missus liked it.
2nd time it tasted a lot more potatoe like.
and agree on peeling..a bit like peeling a pineapple, but not much worse then peeling most large veg.

And @dunelm , rolls love fantastic...simple to do
( yes it really is that hard for me in the kitchen, if it ain't frying or microwaving...:wacky: )
 
Breakfast:Homemade granola and hi lo toast with butter
Lunch: Chicken satay sticks, ham, cherry tomatoes, peppers, cucumber and cheese stuffed peppers. Chocolate and raspberry cafloutis with small spoonful of Judes flat white coffee ice cream.
Dinner: Lamb and mushroom casserole, sprouts, peas, roasted celeriac, carrots and sweet potato.
Snacks: 85% lindt chocolate and nuts
 
Evening all. I’ve gleaned some good ideas already this evening. @Chook I’ve saved that stew recipe, its perfect weather for it, snow has settled here in the last hour or 2. Quite a surprise when I looked out the back just now.
@Spl@ your chicken and leek thing is inspired. That’s definitely one to try.

B: just tea with almond milk and coffee&cream.

L: M&S orkney crab and prawn cocktail with a flaxseed roll. This is a Hemsley and Hemsley recipe and was very good. ( used sf maple syrup) Around 2.5 carbs each bun.
Followed by 2squares Green&Blacks. Too carby for me usually but it was a well meant and thoughtful gift so decided I would just eke it out.

D: Courgetti and bolognese with pud of Greek yogurt and raspberries

I do both chunks and chips I often buy 2 whole celeriacs chop then open freeze chunks and chips and then bag so can take handful out at a time. I always cook from frozen. I use chunks not just for roasties but also pop into casseroles, curries and soup they add a good thickness to the mix or boil some for mash. A very versatile and tasty veg. I also use swede in this way but it’s a stronger flavour and not liked by OH!
Got to agree with your OH @shelley262. Still remember my mum trying to 'disguise' it along with turnip in mash. Yuk! The only two veg I don't like...oh and broad beans so that's not a bad total! Went over to sister in laws for dinner recently and she was doing the same thing disguising the turnip in carrot for my young nephews. She seemed really annoyed when I wouldn't have some and saw through it:banghead::banghead::banghead:
 
Lunch - real meat feast with a chicken quarter and a portion of ‘ribs of fire’ off the hot counter at Morrison’s. You’re meant to get 10 mini ribs but the woman behind the counter must have been feeling generous as there was 18 in the bag!! I greedily ate 14 of them along with the chicken

January carnivory continues, enjoyable but increasingly fancying nuts and or dessert other than plain dollops of cream. Last few days will be challenging but doing wonderful things for BG levels and the weight that had started creeping back on is coming back off so worth persevering.

Weekend walking also catching up with me. While walking / exercising I don’t get hungry at all - makes fasting very easy - but 2 or 3 days later hunger seems to strike, so 3 meals for me today.

Late breakfast was M&S Serrano ham and manchego cheese rollitos.

Lunch was at Nando’s - have built up loads of reward meals so the plain half chicken (they let me have 2 legs) was free and followed by one of the M&S little 40g pots of clotted cream. Store had obviously over ordered and they were on offer at less than half price as expiry date of today.

Dinner was a Diet Doctor breakfast sandwich.

Finally feeling full.
 
Hi all some wonderful looking bread on this thread today! I’ve had a worrying day today as heard first thing that our youngest’s dog was poorly with a bad cough but luckily vet not too concerned as it’s a standard case of viral kennel cough very common I gather and very infectious. We are on call for next few days as he can’t mix with other dogs for a while so may need to help out. Playing it by ear but felt stressed today it’s amazing how pets affect you even when not yours you become very very fond of them. I’m just happy that it’s nothing worse thankfully.
Breakfast mushrooms and egg with one small slice of Lidl roll toasted
Lunch tin of mackerel in olive oil with ACV served with 2 lc crackers and handful of nuts
Dinner salmon in lemon butter, celeriac chips and asparagus followed by lc raspberry mousse.
Hope snow doesn’t settle this evening it’s so cold.

You’re doing brilliantly @Goonergal i know I couldn’t do what you’ve done this month. I think that during the most lowering month of the year having to cut back on treats makes it harder - I always find it easier on sunny hot days! Well done x
 
Sunday was a bit of a carb fail - the reason being ... daughter and I went on my birthday present experience - which was sushi school! Rather obviously there was a LOT of rice involved, but the session started with a demo on cutting salmon with a scarily sharp knife ... and we then got to eat the salmon with avocado so that bit was ok lol ...

So today

Breakfast - 1 slice toast with sweet freedom choc spread, tea

Lunch - cold chicken and ham with olives, feta stuffed peppers, celery, pecans and mexicana cheese.

Dinner - roast lamb with long stemmed purple sprouting broccoli and celeriac fries

Extra piece of cheese to snack on this afternoon and one biscuit with my coffee at a training course I was on this morning.

Evening all. No snow here yet bit like March really. @Chook stew looks promising - I would love the radishes but is erith (can't bring myself to type it) really needed and stewing beef is not usually to my taste. @DJC3 Hemsley flaxseed rolls/bread freezes and toasts well.
Breakfast: Tea - 3 pint mugs; Lunch: 2 x poached egg on smashed avocado atop livlife toast ; 2 x 1.5 pints Tea without which I would have been starving still; Late afternoon: Tea: Evening meal: Meaty bone stew - couldn't face all the fat so picked some meat off with mashed swede, celeriac and greens bubble and squeak impersonator; tea
Starting to find I can't eat the same types of fat I could even 6 months ago. Not health/cholesterol related just starting to recoil at the thought - anyone else had that? Who knew Meghan thingy was and avocado toast whisperer?
 
Greek yog and double cream at 5 am.

Just had tuna cucumber and lettuce all mashed up with 2 tblspoons of full fat mayo. Hmmmm.

Chicken and leeks tonight I think. Chicken fried then add chilli and peanut butter. Yum. Stir fry chopped leeks in some butter/olive oil till just cooked.

Ah! was it you who first posted the Hemsley rolls? I couldn’t remember, but thank you, they are great and so simple.
Sorry to hear fat is becoming a problem for you. I’ve always been a bit like that ( hence chicken and fish skin shudders) Mr C will happily eat the fat on a lamb chop but I never could.
