Going on the ingredients and baking instructions I baked as follows (my sister in Texas uses ground flax meal and water to replace eggs - 1tbs ground flax meal to 3 tbs water, mix and pop in the fridge for 15 minutes).
75g sugar free coconut flakes
15g almond flour
10g flax seed flour
50g butter, melted
3 replacement eggs
1/4 tsp salt
3 tsp stevia
1 teaspoon of vanilla extract (if you like)
Mix dry ingredients, add the vanilla extract
Then mix in the 3 replacement eggs
Now mix in the melted butter
I put into 12 silicone muffin cases and put in the oven at 160C fan for 15 minutes but found that not to be enough.
So, put back in for another 10 minutes then checked, put back in, turned oven off and opened the door a bit.
They taste fine and I suppose would benefit from a bit of melted 100% chocolate but didn’t do that.

Sounds great (aside from the mushrooms - I’m allergic) and glad your FBG is improving.What my butcher calls a 'mixed grill' - little bit of lamb, little bit of steak, little bit of pork and a couple of his best sausages - with mushrooms fried in butter and garlic then finished with a splodge of double cream.. Followed by vanilla chia pudding

Quite hungry today. Lunch was M&S Serrano ham and manchego cheese rollitos. Didn’t quite hit the spot so followed up with a bag of their pork crackling and 2 mini pots of Philadelphia. Dinner was Arbroath kippers with butter. Delicious.
Off to a double Pilates session shortly - hopefully back before snow arrives.
