What have you eaten today? (Low carb forum)

Congratulations, that’s fantastic.
Thank you. It’s been a strange month - lost a stone each month since August but this was my first half a stone month. Which is incredible but felt like took forever to get there. It’s made me realise I don’t want to keep being obsessed with the weight loss so the quicker I can get to target the sooner that can stop being something to focus on so much as I’ll be where I want to be
 
I also just cook for one. Agree about the cuts of meat - I'm sure the day will come when we're paying more for those too though. My food is more expensive on the whole because I ate rubbish all the time previously - however it's cheaper because I am not eating anything like the quantity I used to eat and not buying pastries, cake, chocolate, biscuits, crisps, breads etc.

I just broke my 24 hour fast with beef mince (15% fat fried in a big dollop of goose fat), half a tub of double cream, chilli flakes, cayenne pepper, garlic, celery and a small onion, topped with cheese on a bed of broccoli. I could only eat a 250g portion (quarter of the kilo pack) which amazed me because I would normally eat at least half of it in one go. I had two teaspoons of peanut butter for dessert.

I'm not looking for anything else either tonight - I'm really full. Honestly, this still amazes me.

Edit: It was actually a 750g pack, so I had even less than I thought.

I do it in the Instant Pot. It's so quick and so easy, and thick.

On ocassions I have rather overdone the heat (I love heat, but sometime I get it wrong!), I have stirred in great dollops of sour cream. Delicious

If you miss the red kidney beans in chilli, @shelley262 (I think) uses black olives to recreate that bit of texture, and I guess they also up the calorie count a bit, if weight loss isn't your goal.
 
I've been busy making my niece's 1st birthday cake today. Off topic, I know, but really quite proud of it. But oh my, how much sugar!?! This is the first time I've baked a non LC cake since Mr B's diagnosis. I had a tiny taste of the frosting and it was far too sweet for my taste these days. I also think banana cake will be far too sweet for me, but it was my sister-in-law's request! I've made some LC chocolate cupcakes to take along too, which are far less sweet. Definitely more my cup of tea and ideal for Mr B. Sadly, my attempt at LC frosting failed this evening (didn't grind my sweetener fine enough - an expensive mistake). Plan B is to make some choc ganache tomorrow morning, just hope I get time.
Breakfast: Mocha chia pudding with almonds. Usual coffee.
Lunch: Mr B went out with a friend for lunch (all the usual low carb breakfast items). I strayed on to the dark side today and made myself spaghetti carbonara (sorry...it's one of those desert island dishes). Diet Coke.
Dinner: Cheesy mushroom omelette with chicory, cherry toms. Half a LC choc cupcake, just to check, of course. Decaf coffee.

What a fabulous cake! You are very talented. How long did it take you to ice it? I’m sure your SIL and niece will be chuffed to bits with it.

Thank you! I baked the cakes this morning and let them cool. Then I made the buttercream and iced it this afternoon. The ears and features are all made from sugar paste. It is more simple than it looks honest! The main thing was worrying about running out of icing...I'd never get the same colour match again! :joyful:
 
The bread looks wonderful, but the cost £££ is this per loaf? Mix for six loaves? or ten?
That's the cost per loaf I'm afraid. There's a slight reduction in the per loaf price if you order more but not a huge amount. I never ate loads of bread but one of The things I missed was occasionally just being able to have a sandwich. There are the various high protein breads but most are close to 10g carbs per slice so I'd stick to one slice. This stuff the carbs are negligible but it tastes like the kind of bread I loved so to me it's worth it. I do intend to collect the ingredients and experiment to try To work out The mix. To be honest most of these ingredients are in my baking cupboard anyway.

Great cake and I agree it is a bit odd going back to the carbaholic baking world and itis sooo sweet. I had the job of grandson' s Star Wars cake and you are so right - you had to have enough icing but icingin grey and black didn't seem right. That was when I discovered you could buy long birthday candles and I immediately thought light sabres! Had to get the colours right though and patiently make candle holders that looked like light sabre handles - 2 day job icing that cake.
 
@ianpspurs if you promise not to brandish your haggis at me I will tell you oh sure, Tom Brady can do it again. Question is, will it be Sunday? And will he retire on laurels if he does? Why are you eliminating cream?
My 2 cents on the lc-is-cheaper- In my world, it’s the opposite pricing! Only the very cheapest cuts of our very limited selection of meats are affordable for many, and not often. Paycheck-to-paycheck families can better afford a sale on store brand canned ravioli than they can fresh lc pasta, any real cheese, and sauce ingredients. Canned veg very much cheaper than fresh. Flour, cornmeal, sugar for baking are all cheaper than meat (might be wrong on that). Cheap white bread to put your peanut butter on is much cheaper than anything with lc ingredients. And then you’re out of money anyway so a $.59 two-liter bottle of coke is much much cheaper than the equivalent dairy milk, and chips (crisps) are cheapest for snacks. And 90% chocolate?? Dream on. For myself, if I were a meat eater my grocery bill would skyrocket. As it is, the greens and celery and tomatoes and mushrooms and celeriac ($$$$$) are killing me! ....
Maybe Amazon has those piggy pop things. I think they’re “as seen on tv” brand, maybe. And congrats on your carnivory run!!!!
— random interesting taste discovery! This summer on vacation I was addicted to a particular brand and flavor of seltzer water. Came home, bought store brand same flavor. It tasted like swamp water. Gave the rest away. Just found a stray can, popped it, and lo and behold it tastes completely good. Is this a “sugar’s out of my system” change? Weird.
. @PenguinMum I hope plain old seltzer isn’t included! I’ll happily make any month fizz-free if I can have seltzer!
@jayney27 is there something special about unroasted vs roasted almonds as milk?

Bfast 1/2 avocado, “deconstructed deviled egg” (wasn’t that a food thing last year, deconstructed foods?), decaf/soy/cream
Morning into afternoon snack decaf with the rest of my pre-made cocoa. I don’t like the cacao powder I bought- it seems just to be alkali-processed cocoa, which I don’t at all care for. Back to Hershey’s! And it’s not a good drink even with coffee in it.
Lunch 4 celery, two bites of leftover cauli rice, much mixed cheese, Square 90% choc Rest of that beverage
Supper wilted spinach in olive oil, with more cauli rice, 1 egg and 2 whites nuked in, handful semi-slimy mushroom slices, 1 square 90% chocolate
Probably buttered yogurt for bedtime snack
 
Wow sounds exciting. I need to finish off all my stores of frozen low carb bread first and then consider making an order. Did you add extra bamboo fibre to th3 mix or are you planning making your own mix using the bamboo fibre and other ingredients? If you have a stab at the non pre mix version let us know how it works and the quantities of each you use. Using inulin with th3 yeast as the sugar also sounds a very interesting experiment that we’d love to hear about. Meanwhile could we have a slice of that bread please? Tasty Bread for us low carbers sometimes feels like trying to find the holy grail!
No , I bought the bamboo fibre mainly for "flouring" but I see it's an ingredient in their mix. I'm certainly going to buy the rest of the ingredients but I reckon it will take a bit of experimenting to get it right. Maybe I could become a Dr Hazel UK if I crack it?

I have a bit of a catch up again. @PenguinMum the bread toasts fine although I did it in my grill rather than the toaster. It made the seeds even more visible. I had 2 slices this morning, toasted , hot and with butter melting on them! I'm in heaven (shades of Fred Astaire there)
@Goonergal - congrats on surviving the carnivore month. I was thinking about you (still on a song theme) as hubby had the New Seekers going on Roxi and I found myself singing "Now the carnivore is over".
@jayney27 welcome back and @DJC3 so glad all your family made it through safely. We have a very slight covering this morning but it will be gone soon ( one of the advantages of living near the sea). Anyway, I think the last time I posted food wise was Tuesday.
Wednesday
Bed 7 FBG 6.7 - no idea why and I got I rise to 9.6! Came down again though. Must have your problem now @Chook.
B. Tassimo Americano grande with a dash of cream. That was it. I ended up with an unintentional OMAD as the pool reopened so I got No 2 to school then went back for No 1 & Mum to get them to swimming.
L. Nothing
D. My version of the DD fish and chips - cod loin cut into chunks and coated with my varying "crumb" coat. Today it was Almond flour, parmesan, black pepper, flax, sesame seeds, parsley. As crisp as ever. Served with veggie chips and homemade curry tartare sauce. A few berries and cream after.
Thursday
Bed 6.9 FBG 6.2 but still got a rise to 8.6 before it turned so better than yesterday. Back to the early school start. It's going really well. It's also Aqua Zumba day.
B. Tassimo Americano grande with a dash of cream. A couple of Tesco's chorizo and gouda rollitos and the herby cream cheese ball (Just 1) before heading off to Aqua. Arrived at Aqua to discover I'd forgotten my swimsuit! Not wanting to frighten everyone by wearing only aqua shoes I nipped back to reception to see if they had swimsuits for sale. They did but biggest was 2 sizes smaller than I wear. I know current suit is a bit loose so I gave it a go and it fits! Comfortably too.
L. Cheered by my drop in swimsuit size , skipped lunch and went back to cupboard clearing, tip visit etc.
D. Hubby made broth for him and the boys - I battered out a chicken breast and dressed it with yesterday's "crumb" , fried then topped with thinly sliced avocado, slice of gouda and melted under the grill. Served with veggie chips and a scoot of Nando's perinnaise. Few mixed berries and halo top.

I am slightly off the rails today - felt hungry so decided to have breakfast at 10am, so technically not IF today. However I swerved all temptations (not very strong, admittedly) to fall for carbs, and had chestnut mushrooms fried in butter, streaky bacon and cheese omelette. I'm extremely full now.

Lunch will be leftover beef mince with broccoli and haven't decided about dinner yet.
 
OK Friday - No early start as teachers have a meeting on Fridays. This early start is making a difference as he went in his line quite happily. No 2 was in bother for mountaineering again but his "buddy" has been fired for teaching him inappropriate language and he now has a more responsible buddy.
This was a rather expensive day. Last night the front door lock jammed. Took ages to get the door locked so we could go to bed and this morning we had no choice other than to get a locksmith. Thankfully they were here in 1 hour but the gear mechanism on the security bolts was a goner. Got the lock changed too. £230 later the door is functional again which I suppose is preferable to replacing the door. Got an online shop done for delivery today while this was on going. Collected boys from school at lunchtime and brought them back with them requesting yet more broth. Bed 7.4 FBG 7 - higher than usual but returning to normal during the day.
B. Tassimo Americano grande with a dash of cream. Got engrossed in the bread making.
L. Ended up eventually with 2 slices of the Dr Almond bread as you know already, one slice with chicken liver pate.
D. In between taking the boys home and going back home myself I nipped to Morrisons as Hubby decided he wanted liver and onions on Saturday. Back home and I decided I wanted fish again so I put together more crumb and had cod loin cut into chunks and coated with my varying crumb with veggie chips and a curry tartare sauce again. More berries and a tiny amount of halo top which was left.
Saturday
Chilly start and a slight smattering of snow - Now disappearing. Boys are staying tomorrow night so staying in to clean although why I do not know!
Bed better at 6.8 FBG 6.5 and no rise above 7.2.
B. Tassimo Americano grande with a dash of cream and 2 slices of that wonderful bread toasted with lurpack melting on it.
L. Nothing too busy and Hubby at the football.
D. Will be rose veal liver which I'll flour with bamboo fibre, with onion, bacon , fried egg and celeriac mash if I can be bothered ( wilted spinach if I can't ).
Will also be making fish fingers for the boys for tomorrow. It was going to be fish cakes but they "don't like fish cakes" so same mix but have to be finger shaped. And the want peas in the fish fingers ! Using cod and hake, mash and now peas. I'll freeze them in a silicon mould before dressing them. Quite glad to have the boys here Sunday through to Monday to get through the anniversary of brother's death.
