What have you eaten today? (Low carb forum)

Evening everyone
B: Yes! Dark choc sea salt and almond nut bar with coffee
L: 4 slices of chicken, each filled with cheesy coleslaw, rolled up and wrapped in streaky bacon to make easy to hold and eat with 40g mature cheddar
Mid afternoon - 2 more coffee and 2 squares of green & blacks orange & almond chocolate
D: my new recipe of the week https://www.dietdoctor.com/recipes/keto-chicken-casserole currently in the oven cooking so will update with verdict. And a cheeky little vodka & diet tonic with a slice of lemon

Edited to add dinner was a hit - very tasty. Husbands first mouthful was followed with ‘mmmm has this got bacon in it?’ No dear it hasn’t but that’s actually a great idea to add next time So will be revisited with the addition of the bacon

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch at Patisserie Valerie: eggs Royale with mushrooms in place of brioche.
Mid afternoon: coffee with a dash of milk and banana Carb Killa bar.
Dinner: cold left over fritatta with cauliflower and broccoli salad, pork scratchings and coleslaw followed by SF jelly, cream and LC chocolate granola.
 
@SlimLizzy - you likely were coming down from a higher peak, but that's quite usual.

If you look up non-diabetic blood sugar profiles, you might be surprised.
thank you for replying. Am now retesting meals that produced an acceptable level @ two hours. Am a natural pessimist and kept thinking these are too good to be true. This time seems I may have been right.

@dunelm is your dish just ham hockwith egg and cheese on top? Ive got some shredded ham hock in the fridge. Not really enough to do much with but this looks perfect.
I was v hungry today too like many others here today, must be the blowy weather
B: A boiled egg with one of the microwave crackers and butter
L: leftover roast chicken with buttered brussel tops and parmesan. Bit of 100% choc and coffee afterwards.
D: crustless bacon & mushroom quiche with asparagus. Followed by Greek yogurt with a chopped strawberry, a few pumpkin seeds and grated 100% choc.
 
Evening everyone! Glad I've made it to the weekend! It's been one of those weeks.

Breakfast: Caramel & vanilla chia pudding with flaked almonds. Coffee with cream.
Mid morning: Black coffee for me. Almond milk cappuccino for Mr B.
Lunch: Leftover fathead pizza, salad.
Afternoon: Mr B had some hickory spiced nuts.
Dinner: Breakfast frittata - chipolata sausages, bacon, mushrooms and cherry tomatoes. Served with baby spinach. SF Jelly and cream. Decaf coffee and cream.
 
Liver does well also, so it’s liver, followed by chocolate pudding

And sardines (for the calcium)

Okay, who cab put together a meal which includes liver, cocoa and sardines?

I lined the ramekins with ghee to press the shredded ham hock to, cracked an egg into the middle and topped with cooked bacon.
cooked. At 180c for 20 minutes then did the cheese topping under the grill.

Good evening, you seem to have sent us the windy weather. Today was one of those days that start out mild and springlike, and 18 hours later the temps have dripped 40 degreesF with wind. Brrrrr.
Bfast 1/2 avocado, egg, decaf/soy/cream
Lunch large mug of chicken broth with large tbsp of butter melting in it
Made it to supper but back-ache-y for hours, ugh. Only had a short rehearsal, and that was ok. Could not have gone for a walk if you’d paid me!
Supper 2 cups baby spinach greens, 3 tall stalks celery, lc tortilla with an interesting chunk of swiss cheese to be rolled up. Frozen swiss expands if you thaw it very slowly in the microwave!
I want nuts but it’s past the deadline for supper ending.
 
@Contralto that is a beautiful memory! They say smell is the strongest memory maker....Such a simple recipe- the flour must caramelize?? , and such delicious results.
I am another with no off switch so have yet to bake with erythritol. May have to for my Valentines, which are traditionally heart shaped one-bowl pale yellow cake from ***** Farmer with red sugar baked on top. Maybe the men and dil get those as usual and I get an unsweetened lc almond cake something.
eta let’s make that censored cookbook “Francie Farmer” it’s funny, the censored word is not naughty in US (it’s my childhood name for the part of my anatomy I sit on; childish and sweet), and was an actual name when the book was compiled. Indeed a “oh baloney” type of exclamation is “oh my Aunt F**ny”.

Brilliant will give it a go will save us a fair bit prepared ghee quite pricey thank you

@shelley262 - I've made ghee once, on the stove top, with a limited success, but lots of folks make it in the IP's, sometimes on a slow cooker setting? There are loads and loads of recipes out there, but I wouldn't care to suggest one.

If you're a member of the Facebook, IP UK Group, then that's where I'd go.

I rather fancy setting it going and walking away, but then, I'm just terminally lazy!
