Gah! I went to bed last night feeling 'not right' and have woken up this morning full of cold. I don't get colds very often but they usually hit me hard leaving me with chest infections and, on one occasion, pneumonia - so instead of my planned fast I will be treating myself like a delicate little flower until all danger of secondary infections is past. (Can you tell that I HATE getting ill??)
So today....
Breakfast: A whole avocado with a squeeze of fresh lime juice (this combination raised my BG by 2.1 units at 2 hours!!!
Lunch: 30g mixed nuts (mix includes Brazil nuts, almonds, pecans, walnuts, hazelnuts)
Dinner: Prawns, mussels, clams casserole thing (from Iceland) with konjac spaghetti.
For the meatballs?..... followed by a mad dash to Ikea.
@Goonergal can a trip to IKEA ever be a mad dash?

Today was a rough one, nine and a half hours of work left me frazzled. Ended up doing OMAD but probably not the best...
Breakfast: CWC as always
Lunch: Small chicken salad with some cheese, had to leave some because I didn't notice the mould...
Dinner: Peperami around an hour after the late lunch
Got hit hard with the nostalgia and regret as the boss brought in some burgers and fries along with some garlic bread with cheese and watching him and my workmates eating and having to refuse it all slightly broke my heart. Set off my anxiety about my condition and WOE again even though I really loved my salad besides the cheese but still with it being early days this hit me like a sledgehammer.
No, I didn’t add any extra liquid. It turned out a bit more like a biscuit but was OK. Next time I will soak the chia seeds in a dash of water first and then add all the other ingredients. Once I have it right, I want to then add seeds to make a more wholesome 90 second bun.@dunelm did you add extra liquid for the chia seeds, or was it fine without. Sounds very tasty!
I buy mine in Holland & Barratt “Slim Pasta” when they have their penny sale on (buy one, get another for a penny). I get slim pasta, noodles, rice (I do prefer cauliflower rice though and noodles made from courgettes but the Konjak is very convenient).I need to try the Konjac spaghetti. Not sure where to get it from.

Most supermarkets now sell Konjac products - look out for “zero noodles” , “bare naked noodles” that sort of thing. You can even get it on Amazon if you don’t fancy shopping.

They taste of whatever you mix with them really. Just open the packet, drop into a strainer, rinse with cold water and stir into whatever you are making.
