Bit wordyB: 1/2 avocado baked with an egg in it and a bit of grated cheese. Not impressed, it was bland and there was no texture difference between avo and egg so got v boring.
Lots of CWC throughout the morning
L: Tin of sardines. ACV with celery filled with cream cheese. Chia pud made with the soy almond yoghurt but wasn’t keen, won’t bother buying it again, it tastes quite artificial.
D: Roast lamb, creamed spinach roast cauli and kale. Lc Bounty bar to finish
Haven’t really enjoyed any of it today, no idea why. Need to look back on menus Ive enjoyed and remind myself of them.
Fantastic. I started off doing @SlimLizzy ’s recipe but had to change tack owing to missing ingredients, so had to go for plan b, the English muffin. Once done in the microwave I toasted the muffin (half) then added butter on top with a slice of cheddar cheese. Very nice. Have got one saved for the morning.There are many variations of Keto or low carb microwave bread out there. The recipe I used is actually a 2 minute version and I also added a little ground flax to up the fibre. There are some recipes that use coconut flour, this one calls for almond flour but ground almonds worked fine.

avocadoes =. profanities
Can I talk avocadoes: They perplex me. Like how I used to feel about bananas they have to be ‘just so’ not too soft not too hard. I couldnt eat one on its own. I dont think I dislike them but they are not something I really like. Because they are so healthy and good for my woe I buy a few every week but the way I used to tolerate them best was in a sandwich with prawns or bacon. Distant memories...
Glad its not just me. Avocadoes are a glorious colour. To me they are when perfect just on the right side of slimey. They dont taste of anything but they go with loads of things. But get a hard or blackened one whichcan be a lottery and its in the bin, for me anyone. But I respect their goodness! Should have started a thread, maybe I will.Yes I can completely understand that. I was exactly the same with bananas. I really hope the same thing isn’t happening with avocados now. It’s something about the texture isn’t it?
Okay. I am just catching up on the virtues of inulin. Looks useful.Like @ianpspurs I use inulin for a range of things but mainly in my morning coffee every day! I find it works for me, I know TMI! I also add it as part of the sweetners now to several recipies as it isnt as sweet as other sweetners but mixes well with others to bring overall sweetness down. Hope that helps

D: tin of salmon, 2 babybel, 50g mature cheddar and 3 cherry tomatoes
Spent the afternoon at an afternoon tea baby shower. Sandwiches, cakes and scones galore - not even a lettuce leaf in site so I just had coffee. However at the end when they said help yourself to the leftovers to take home, I filled my handbag with little tubs of clotted cream - that’s my dessert sorted for this week
Got a bag of sandwich size avo's on Friday, just about ready to go. Bit of salt and my black pepper, chilli flake mix on them for zing.Avocadoes are a glorious colour.

Glad the crumble worked but personally I could never, ever, eat desiccated coconut. The idea of baking the topping first then breaking it is a keeper though. Oh, and hold the ginger for me.Evening everyone. I'm afraid we ate far too much today, but planning to reign things from tomorrow. Feeling quite pleased with myself as I nailed the crumble and custard today. Thanks for the tip re the inulin @ianpspurs, it worked a treat. I actually baked the topping first on it's own and let it cool. I then broke it up into chunks to crumble on top of the pre cooked rhubarb before baking again. The result was a lovely chewy crisp topping! Ground almonds, desiccated coconut, ground flax, erythritol, ground ginger and melted butter. Sprinkled with inulin just before baking. Yum!
Breakfast: Coffee and cream
Brunch: LC pancakes, bacon, LC maple flavoured syrup. Almond milk cappuccino.
Afternoon: Coffee and cream
Dinner: Roast chicken, pigs in blankets, roast celeriac and swede, couple of baby carrots, buttered Swiss chard, drizzle of flax thickened gravy. LC rhubarb crumble with LC custard. Decaf coffee.
