What have you eaten today? (Low carb forum)

No idea what it all means but hope it was delicious.
I had usual slice HiLo toast and generous butter, lots of tea.
Didnt plan any lunch but came in from gardening and snacked on two cold sausages left over from the breakfastof the men of the house.
We are half an hour away from roast chicken, ashed pots, mashed celeriac, tenderstem brocolli, mushrooms and baked beans (OH has to gave them on top of mash). Pud if anyone wants is mixed berries, yogurt, ice cream or jelly.
Can I talk avocadoes: They perplex me. Like how I used to feel about bananas they have to be ‘just so’ not too soft not too hard. I couldnt eat one on its own. I dont think I dislike them but they are not something I really like. Because they are so healthy and good for my woe I buy a few every week but the way I used to tolerate them best was in a sandwich with prawns or bacon. Distant memories...
 
B: 1/2 avocado baked with an egg in it and a bit of grated cheese. Not impressed, it was bland and there was no texture difference between avo and egg so got v boring.
Lots of CWC throughout the morning
L: Tin of sardines. ACV with celery filled with cream cheese. Chia pud made with the soy almond yoghurt but wasn’t keen, won’t bother buying it again, it tastes quite artificial.
D: Roast lamb, creamed spinach roast cauli and kale. Lc Bounty bar to finish
Haven’t really enjoyed any of it today, no idea why. Need to look back on menus Ive enjoyed and remind myself of them.

There are many variations of Keto or low carb microwave bread out there. The recipe I used is actually a 2 minute version and I also added a little ground flax to up the fibre. There are some recipes that use coconut flour, this one calls for almond flour but ground almonds worked fine.

@zauberflote has been perfecting her own tweaked version too.
Fantastic. I started off doing @SlimLizzy ’s recipe but had to change tack owing to missing ingredients, so had to go for plan b, the English muffin. Once done in the microwave I toasted the muffin (half) then added butter on top with a slice of cheddar cheese. Very nice. Have got one saved for the morning.

Yes I can completely understand that. I was exactly the same with bananas. I really hope the same thing isn’t happening with avocados now. It’s something about the texture isn’t it?

Glad its not just me. Avocadoes are a glorious colour. To me they are when perfect just on the right side of slimey. They dont taste of anything but they go with loads of things. But get a hard or blackened one whichcan be a lottery and its in the bin, for me anyone. But I respect their goodness! Should have started a thread, maybe I will.
 
Like @ianpspurs I use inulin for a range of things but mainly in my morning coffee every day! I find it works for me, I know TMI! I also add it as part of the sweetners now to several recipies as it isnt as sweet as other sweetners but mixes well with others to bring overall sweetness down. Hope that helps
Okay. I am just catching up on the virtues of inulin. Looks useful.
 
Evening all. Posting early as got my HBA1c bloods tomorrow and just in case they throw in a sneaky cholesterol test with it so fasting from now.
B : just coffee after an unexplained high (for me) fbg
L : pork chop, 2 pigs in blankets, broccoli, green beans, sprouts and a drizzle of gravy followed by 2 squares of green & blacks orange and almond chocolate
D: tin of salmon, 2 babybel, 50g mature cheddar and 3 cherry tomatoes

Spent the afternoon at an afternoon tea baby shower. Sandwiches, cakes and scones galore - not even a lettuce leaf in site so I just had coffee. However at the end when they said help yourself to the leftovers to take home, I filled my handbag with little tubs of clotted cream - that’s my dessert sorted for this week :angelic:
Good luck with bloods tomorrow always worth fasting for in case!
 
Avocadoes are a glorious colour.
Got a bag of sandwich size avo's on Friday, just about ready to go. Bit of salt and my black pepper, chilli flake mix on them for zing.

Loved the sun today - watched a talk a few days ago about benefits of UVA sunlight including lowering of bgs. Cholesterol etc so made sure I made the most of our rationed supply of it by getting out there! If interested see
Breakfast one Waitrose 1 lc pork sausage and I egg
Lunch mixed nuts, lc seeded crispbreads with half tin of salmon followed by 10 100% cocoa buttons
Dinner steak with mushroom sauce and half cooked tomato with glass of red wine followed by sf jelly and yoghurt.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: rolled lamb breast joint roasted with garlic and rosemary, two small pieces of roast parsnip, mixed veg and gravy thickened with flax, followed by SF jelly, cream and LC chocolate granola.
Mid afternoon: mint Carb Killa bar and black coffee.
Tea at ILs: cold meat, cheese and salad buffet followed by one Jaffa cake.

have to confess to night time stress related eating: 3am five florentines checked BG about three hours later when i got up, was only 5.3 amazed.

lunch, just a cup of tea,
dinner: cottage pie with cabbage followed by LC crumble with cream, both from yesterday.
so far no wine, just water.
Had a lovely day out, visiting relatives in wales, beautiful countryside, spring flowers and a warm welcome, what could be nicer?
can anyone see the image?

@shelley262 I ate 2 squares Green and Blacks orange and almond Dark Chocolate; Pot roast beef (slow cooked in the IP) and home grown purple sprouting broccoli plus 1 year frozen blackberry and apple crumble with double cream. Had a filter coffee from the French vanilla coffee man and a latte from Waitrose and partners (that was my favourite acronym)
 
Evening everyone. I'm afraid we ate far too much today, but planning to reign things from tomorrow. Feeling quite pleased with myself as I nailed the crumble and custard today. Thanks for the tip re the inulin @ianpspurs, it worked a treat. I actually baked the topping first on it's own and let it cool. I then broke it up into chunks to crumble on top of the pre cooked rhubarb before baking again. The result was a lovely chewy crisp topping! Ground almonds, desiccated coconut, ground flax, erythritol, ground ginger and melted butter. Sprinkled with inulin just before baking. Yum! :hungry:

Breakfast: Coffee and cream
Brunch: LC pancakes, bacon, LC maple flavoured syrup. Almond milk cappuccino.
Afternoon: Coffee and cream
Dinner: Roast chicken, pigs in blankets, roast celeriac and swede, couple of baby carrots, buttered Swiss chard, drizzle of flax thickened gravy. LC rhubarb crumble with LC custard. Decaf coffee.

Glad the crumble worked but personally I could never, ever, eat desiccated coconut. The idea of baking the topping first then breaking it is a keeper though. Oh, and hold the ginger for me.
