What have you eaten today? (Low carb forum)

@Annb you have the patience of a saint! Keep going though I dont like to think of you being hungry. I dont know what would help and hope you find a way. Best wishes.
Today’s intake:
Breakfast: slice LivLife toast, butter, tea x2.
Lunch: tin mackerel, small avo, leaves, 2 cherry toms (last of h/g).
Supper: cheese & tomato 3 egg omelette but enjoying a blood orange gin & st atm.
 
Sometimes feels a bit like being a Guardian journo at an ERG fringe meeting being amongst you Ultras/Spartans. B= tea. Lunch = very cut down avocado and mackerel salad. Evening = mushroom, pepper and cheese omelette then new CCG - used chocologic so liked it. All planned, analysed, weighed as per. Not doing bg much good but tempted to feel I have a pass right now.

@Annb -- It's good to see your blood sugar levels have come down. Agree with @PenguinMum, I'm a little concerned about your eating so little. Are you taking any supplements? Keeping my fingers crossed that you'll be able to get an appointment soon.
@annabell1-- Hope your cold gets better soon.

Today ...

Breakfast: Two double decaffeinated espressos with cream and erythritol.

Lunch: A DD keto roll with mayonnaise and cheddar. A small bowl of homemade oxtail-vegetable soup. A bowl of homemade low-carb chocolate pudding with whipped cream.

Dinner: A small ribeye steak. Lamb's lettuce with a olive oil-balsamico-lime dressing and feta cheese. Half an avocado. One and half glasses of red wine.

Usual bacon, egg and cheese cafe lunch. Followed by 2 squares 85% chocolate

Dinner with 2 mystery forum members. Bunless bacon cheeseburger with mayo and grilled onions at Five Guys followed by Hotel Chocolat hot chocolate with the cocoa whip separate (i.e bigger portion).

Breakfast nut granola and tea.
Off to MrSlims medical appt. Took a while to find the right place. We had coffee and then got our hair cut. Am pleased with mine.
By Lunch time I was really hungry. Had two slices toasted pain kapnor with mashed avocado and smoked salmon. Thought about yoghurt, but had raspberries and cream, as less carbs. Tea to drink.
Pm apples collected, two barrowloads today and finished the tedious digging task. Just in time- the heavens opened. Started preparing apples to make jelly.
Dinner. Fish in light batter. Vegetable cakes and rösti, green beans. After still a bit peckish had several lumps of Cantal cheese. And cup of coffee with cream.
Jelly straining, but not coming out clear.
Might not continue with it.
Currently watching Fiji v Uruguay. Brilliant match so far.

I have plans to recreate the cocoa whip creation in the coming days. I'm not massively into chocolate or puddings, but if I can freeze a few of those it could be a quick go-to on those days when I need more calories.

For us, this evening, it was cold cuts from our fabulous Sunday roast pork.

Lunch: left over tuna melt and Mediterranean veggies followed by Greek yoghurt, raspberries and macadamia and coconut keto granola.
Mid afternoon: peanut phd bar and black coffee.
Dinner. Strange I ate with two mystery forum members too @Goonergal ;)! Bunless cheeseburger with mushrooms lettuce and tomato followed by 100% hot chocolate
 
Thanks. All very quick - bearing in mind entry and exit point nurse saying just relax was priceless.

Oh crikey I hadn’t realised it was directed so specifically. Yes I can imagine the relax part being difficult. Glad you’re one down now though.
 
CWC this morning, then brunch of 1/2 avocado, boiled egg, spoonful of mackerel pate.
Dinner with a couple of not so mystery forumites on a brief trip to London: Shame about the rain but otherwise smashing. 5 Guys bunless bacon cheeseburger with mushrooms and jalapeños then Hotel chocolate for @Goonergal ‘s delicious discovery of 100% hot chocolate with whipped chocolate cream. Expecting sky high bg afterwards but no. Great result! @DCUKMod I’ll be interested in your home made version of the cocoa whip.
@SlimLizzy I think my shoulder is RSI too - if I limit my phone tapping it is loads better.

I think I'm just going to try a well whipped double, or extra-thick double cream, with some cocoa in it. I'll likely do it in a couple of batches, in case it needs a touch of sweetener. I'll open freeze as many as make it to the freezer, then experiment defrosting them.

It'd usually be stabilised with icing sugar, so may end up a little over-whipped, but it'll be interesting.
 
What an unusual day.

B: was going to skip it, as usual. However, Mr B had to get up and more the car (long story due to v late after night shift and being unable to park in the usual spot. Anyway, to my surprise, moving the car 50 feet ended up with a 1.5 mile drive and returning home with a muffinless MacDonald’s breakfast for me, a muffined one for him, and him having BOTH coffees.
Funny when that happens.

Can't keep all the balls in the air at once. Am making Cider Apple Jelly, washing jars, drinking Vouvray and preparing dinnner.
Dinner might be late.

@Annb -- This must be frustrating to no end. Glad that your blood sugar levels are currently at decent levels. Based on what you have said, I really think it might be the high insulin levels (both natural and injected), which increases insulin resistance and make it so hard for you. The statin might furthermore add to the insulin resistance. Is there any way, you might have access to a medical professional, who has some experience with this?

As to the bitter lemon -- Use the juice and the rind of four lemons, plus the pith of one lemon. Add about 2 tablespoons of cinchona bark (available on Amazon), a little bit of citric acid and erythritol to taste (I use 7 tablespoons of erythritol), and tab water (about 0.7 liters). Heat, let come to a slight boil, and boil for about ten minutes. Strain the liquid, fill it in a bottle and let it cool. Mix the concentrate with carbonated water (I use one part bitter lemon concentrate and 10 parts carbonated water).

The lemon pith and the cinchona bark are responsible for the bitter taste, I not sure if they mix with a statin.

Just seen an add for Dr Almond stollen. Only 1.1 g carbs per 110g. It’s expensive, but I think I’m going to have to get some

Dr Almond products always seem to me to taste nice and keep bg controlled and you know I am no LC fanboy. I dislike stollen but I imagine it will be fine. I really liked the Christmas stars and crescents and the packs have a very long shelf life. Hope you enjoy it - I have only ever had 1 bite of stollen which I hated.

It is like a Schweppes bitter lemon concentrate, though with fewer carbs. (I tried the non-sugar commercial version, but didn't care for the aftertaste).

The recipe for tonic water is really similar, just without the lemon juice, rind, pith, and citric acid (in other words just cinchona bark and erythritol).
 
I just checked online for drug interactions to check quinine (as in the bitter lemon recipe) and there seems to be a little issue between Simvastatin and quinine, but nothing serious. However there were warnings about interactions between other drugs I am taking with each other, not with quinine. All the warning seem to be about hypoglycaemia - which isn't by any means what is happening with me. Anyway, I think I can safely add quinine to my diet, if I can get it anywhere.
 
Today I added some turmeric pepper and ghee to my chicken stock and been drinking it all day hoping to kick my cold in the butt so have it in my furnace so I can rest . I also have a temperature that's going up and down between 37.7 to 39c hopefully this settles it down as well. Have not had a cold for ages so it sucks. IMG_20191002_143227_006.jpeg
