What have you eaten today? (Low carb forum)

This wings look really interesting @Brunneria , for a quick nosh.

This morning, I put my 2ltrs of yoghurt (fermented overnight) into the fridge to cool, before I decide if I'll strain it or not, I've now just put a ham hock on to make stock, and then soup. I knew the hock was "generous", but it's huge.

Now, if you know a crowd of people who fancy some ham based soup, send them around. My OH is away for a couple of days, so there's no way even I'll get through it all, so I feel a freezer reshuffle coming on.
 
Re the Tescos wings, have been trying to work out why they were so delicious.
The little sauce packet was cheesy but nothing special, and probably won't even bother with it next time (I bought 2 packs)
But I think the magic was in this combo of ingredients
Mild Cheddar Cheese (Milk), Spring Onion, Spices, Onion Powder, Salt, Garlic Powder, Chilli, Oregano, Sunflower Oil, Cumin.

Maybe it just comes down to the high quantity of umami flavours in there...?

So when I make it up myself, I am going to use a dry mix of onion powder, salt, pepper, garlic, chilli, oregano and cumin, then when I want to use it, I will mix it into a paste with grated cheese and a little oil, and then rub it over the wings before airfrying them.

Another day trying to adjust to what the combination of new meds, with fun side effects, existing problems and limited LC likes means for food and exercise - at least for 6 weeks. B = tea. L = avocado and mackerel salad, smaller these days and includes a spring onion. New CCB. (5.0 before and 4.5 after - highly; unlikely) Ev = 2 fried eggs and Haloumi chips (actually Milky's Hallum) with 15 gms reduced sugar tommy k. Will joints pay for the hallum?

Evening all.

Eating a bit all over the place today partly due to work schedule and partly due to a bit of stress.

Scheduled 2 hour meeting from 12-2pm coupled with morning peckishness led to brunch around 10 of bacon, eggs and cheese.

Late afternoon 85% chocolate (a bit too much of it) then dinner of slow cooked short rib (slow cookers were made for days like this) followed by almond butter and cream.

@Brunneria are the chicken wings very spicy? They sound very tempting.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: Babybels with cauliflower and broccoli salad followed by Greek yoghurt, raspberries and macadamia and coconut keto granola.
Mid afternoon: coconut chia pudding and black coffee.
Dinner: Chicken supreme with mixed veggies followed by SF jelly, cream and LC chocolate granola.

BG was high when I eventually checked it this morning - I'd slept in and then had to sort out my bedroom (ie clearing the floor/making the bed before my floor cleaning lady came, which she didn't after all). So it was 8.30 before I checked. Decided that I needed to have more ramen at about noon to keep BG down. Ended up at 1.30 at 5.4. Ramen is very good for that.

This evening I had some smoked haddock cooked with some veggies in a cream sauce. Lovely! I'd managed to get undyed smoked haddock at a local smokehouse - last 2 in the shop. One to eat and one in the freezer. Only had about half of it. Not much carb but probably quite a few calories in the cream. Haven't checked BG yet.

I have lots of stuff still piled on my bed and I'm a bit unwilling to put it all back on the floor only to lift it all again tomorrow. Why do I have lots of stuff on the floor? Lots of quilts and blankets in poly bags for which I am seeking a home. Too much "stuff" in this house. I might just sleep in my big, comfortable chair in the kitchen. Trouble is, the kitchen is where the food is, so I might just be tempted in the middle of the night.
 
I think I'm just going to try a well whipped double, or extra-thick double cream, with some cocoa in it. I'll likely do it in a couple of batches, in case it needs a touch of sweetener. I'll open freeze as many as make it to the freezer, then experiment defrosting them.

It'd usually be stabilised with icing sugar, so may end up a little over-whipped, but it'll be interesting.

I wonder if it’ll collapse when defrosted? I experimented with freezing cream in portions for my coffee at one time but it wasn’t very successful. Good luck x
 
Dr Almond products always seem to me to taste nice and keep bg controlled and you know I am no LC fanboy. I dislike stollen but I imagine it will be fine. I really liked the Christmas stars and crescents and the packs have a very long shelf life. Hope you enjoy it - I have only ever has 1 bite of stollen which I hated.

I agree the Dr Almond products I’ve tried have been good. I love stollen so this would be a real Christmas treat if it lives up to expectations.

I'm a funny old sort, in that if I'm having something out of the freezer, like frozen berries, I tend to eat them frozen. If I pour dream over still frozen berries, they become coated in a layer of frozen cream, which I quite like.

It if doesn't work out, I'll just have to think again.

I'd be interested to hear how HC handle it. I guess it's helped by their CO2 whipped cream moussers.

D: more freezer clear out - wasn’t sure what it was as the writing had rubbed off but turned out to be a pork curry. Had it with more spinach. Then a bit of cheese and few almonds. Glass of red.
@annabell1 I hope the turmeric tea helps you feel better soon.

The other week when I happened to be outside HC in Brum waiting for it to open, I witnessed the cocoa whip making process. They mix it each morning in a bowl (plain whipping cream with cocoa and a little sugar) and then transfer it to the ice-cream-maker-like machine that produces the nice swirly effect. No freezers involved.

@annabell1 There is probably a good reason for that. Was using very small red cider apples and treating them as if they were crabapples, However the juice, although a lovely pink, would not strain clear and had little discernable flavour. So the experiment was abandoned.
@DJC3 too much mouse use makes mine worse. I have therefore adjusted to using the mouse in either hand.
@ianpspurs agree with you, sometimes find it hard to believe people can live on so little. Makes me feel a bit greedy.

Breakfast, nut granola and tea. Am finding I don't want a cooked breakfast atm. But am getting hungry and needing early lunch.
Coffee.
Lunch: really hungry so had 2 large spoonfuls of peanut butter while eggs boiled and bread thawed. 2 slices pain kapnor, ham, coleslaw, boiled egg, baby lettuce and spring onion. Water and tea
Tea and more tea.
Glass of wine. Lovely sunny evening, took a few minutes to enjoy it.
Dinner, last minute change of plan as chicken not completely thawed. We had pasta. White for him, 20 wholemeal penne for me. Both served with smoked bacon, leek and peas. Poured cream over and added finely chopped blue cheese then stirred until it was all melted. Delicious. Another glass of wine. Had natural yoghurt pot and raspberries after.
Thought I had finished picking up the apples. but had missed three.
Cider Apple jelly experiment failed. Binned it.
 
Lunch yesterday: Grilled flat head fillets, salad.
Dinner: Curried beef, veggies.
Breakfast: Cheese and mushroom omelette, bacon, tomatoes.

Drinks: Black coffee / tea no sugary stuff, water.

Did the online shop earlier, flat brisket was on special so got four pieces to either marinate or dry salt.

The total fire ban has been extended to later in the month, I need my permit back for the block.
 
Hello All since the weather turned I have been eating a bit more and it is showing in my FBG. Also I have developed a dangerous habit of eating a spoon of peanut butter if and when I fancy and that needs to stop.
Yesterday: slice LivLife toast, butter, tea x2.
Lunch: half carton chicken soup, small plate egg mayo with lettuce.
Supper: roasted aubergine chunks, half red onion, 2 toms speinkled with EVO and dried Italian herbs. One of my favourite suppers. Large scoop Oppo salted caramel, last in freezer.
Note to self: that is waaaytoo much food!!

today I was a bit hungry I slept in till midday I think my body needed the extra sleep still have a cold but a tad better I had some homemade yoghurt so had a couple tablespoon with strawberries and blueberries some pumpkin seeds and a squirt of honey not a lot of honey though, and a black coffee. the weather is beautiful today but this cold has wiped me still so I am watching TV. about 3pm I had some more of my chicken turmeric broth. I also pulled out a chicken thigh and wings. about 4:30 pm decided to get dinner ready but my chicken was still frozen a quick look up how to cook frozen chicken and I still cooked them but made sure I cooked them longer then I would normally do. I had some baby potatoes that were in a microwave container with butter and parsley that a friend who popped over on Saturday brought with her but never used them for dinner she left them. I didn't want to eat them but I sometimes hate wasting food so I nuked them in the microwave there was 6 baby tats in the microwave container but I only had one. so dinner was a chicken thigh with lemon paprika and garlic served with one baby potato with some butter and sour cream and baby spinach and rocket salad. I got full half way though my meal and normally I stop eating but I realised sometimes I feel full by the time I put everything away I want to eat again as I am hungry again so I made sure I finished it off as although I felt full I realised when I stop eating then 20 minutes later I try and found food so I decided to eat it all and I am glad I did as I am actually feeling comfortable full oh I also had a handful of nuts during the day and lots of water.
