What have you eaten today? (Low carb forum)

Question, mainly for @DCUKMod and @maglil55 but thoughts from others welcome.

Have just taken a rolled lamb breast (no bone) out of the freezer for tomorrow. Normally would slow roast in the oven or use slow cook function on the IP. However, wondering about using the rotisserie function on the air fryer. I’d lower the temperature and probably need to extend the max cooking time on that setting (1 hour) by running more than one cycle. Do you think that approach would work?

@Brunneria Dont think I can manage a 30k cycle ride looking for unknown brand of cheese thing. Although it does sound delicious. Last shopping trip was 18k. Very tiring. Probably need to go again BEFORE lockdown ends and the roads fill up with scary lorries etc again.

Finding my days busy as ever.
Yesterday’s food was slice LivLife toast, butter, lots of tea.
Lunch was a very thin slice of sourdough toast piled high with Camembert.
Supper was chicken, chorizo, red pepper and tomato sauce with brocolli and Pasta for Mr PM
Today same breakfast. Lunch will be egg mayo with Little Gem leaves.
Supper will be Linda McCartney sausages and brocolli for me. Sausage mash and beans for Mr PM.

It is a wide terracotta dish (about 4inches across, filled with a cheese mix. Have had three, with chorizo, stilton, and... um... ham? You just bake, and it comes our all melty and brown on top.

honestly, can’t remember the brand or the name, sorry.

I eat then with a spoon, but I think they are supposed to be fonduey, or spread on carbs. :)
I have 2 of these little dishes in my cupboard and I wondered where they had come from - now I remember. I seem to remember using the contents with some toasted wholemeal bread. I think it was with bacon or ham. I only had one - Tom had the other. Never saw them again.

Yes. Before I got past the 1st line I was thinking I'd spit roast it. I agree it's a case of keep an eye on it and do in cycles.
 
Evening all. Rest day today - no walk. Hoping to make the most of the promised warmer weather over the next few days.

Two meals today. Lunch was a mix of leftovers - small amount of poussin from yesterday, crisped up pieces of leftover pork belly from a couple of days ago, chunk of carnivore stuffing from yesterday, a small piece of cheese and a pickled onion.

Dinner was beef short rib - pressure cooked in the IP and delicious. Getting the hang of this now. Still feeling slightly peckish so may grab a piece of cheese to finish off.

@Goonergal - I'd definitely agree with @maglil55 on the lamb. Give it a whirl.

Literally, all you have to lose is a piece of meat, but I really do doubt that'll happen. The AF really does lend itself to fattier stuff, for very obvious reasons.

For your spatchocked chicken yesterday, you could likely have also used the kebab skewers and frame and cooked it that way. It'd likely be very quick.

@Annb @Brunneria have 2 of those little terracotta dishes too. Can’t remember what was in them but like you I think it was something gooey to dip crusty bread into. ( they are saucers for houseplants now)
@maglil55 I’m really glad you got to speak to a doctor and felt ok for most of the day. By the way where did you buy the Lakanto Monkfruit ? I know it was you who first put me into it, and it’s not via Amazon. ( yes I decided the same as you - can’t have too many lc custards!)
Today I had black coffee, tea and soda water with lime this morning and throughout the day.
Lunch was / tuna muffin melts with salad. Then DGF brownie with cream.
Dinner: IP beef stroganoff with broccoli and spinach, then a lump of cheddar and 2 glasses red wine.
@shelley262 must be a relief to get the shower fixed. I always have showers these days, can’t actually remember the last time I had a bath!
 
Been busy in the kitchen today!
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and birthday cake phd bar.
Late Lunch: 2 x Babybels followed by LC brownie, coffee chia pudding and LC chocolate granola.
Dinner: low carb broccoli and cauliflower cheese with mixed veg followed by SF jelly, cream and raspberry and vanilla low carb granola.
I adapted my low carb chocolate granola as I can’t get the red berry paleo granola from Waitrose at the moment.

I see Lakanto have added loads more to the range since I last looked. The sugar free chocolate drops could be useful for baking.

@SlimLizzy - I'm not surprised Mr Slim is finding it busy. It's the same here. You'd never guess there is a lockdown (although I haven't been out in quite a few days).

Bed 5.5 FBG 6.2. Today has been another up and down day so I've stuck to rest, plenty fluid and paracetamol as ordered. I did see on the lunchtime news (BBC) a guy in Bristol and a lady in London who were very like me. Not tested, doctors reckoned it was likely they'd had the virus but they too were relapsing- the effects were coming in waves. Same symptoms I've had. The lady in particular looked like I feel! It reassured me a bit but I hope I don't get a third wave! At least the doctors were confident they were not infectious and it was just the body repairing itself.
B. TAG and a couple of Dairylea (felt a bit queasy).
L. Had a thing I got in my butcher delivery. It's minced pork, cheese inside and wrapped in bacon. I felt better so I air fried it and had with a scrambled egg.
D. Chicken breast with a mix of peppers, beans, tomato. That was it but I'm considering chia pudding later.
 
Hi all
Wonderful news my shower was replaced this morning wonderful and all done whilst adopting social distancing plus gave him his own wipes etc! Had one before dinner rain shower setting wonderful.
Breakfast one slice bacon,egg and half a chaffle - not well toasted I was busy rushing to get shower room ready and burnt the first chaffle but then was over cautious so it was still a bit cold! The burnt chaffle set off smoke alarm and very acrid smoke!
Lunch cheese and lcseeded crackers
Dinner lasagne using chaffles as fake pasta with salad followed by OPPO ice cream

I'm not sure - still very tired and keep falling asleep. Legs, shoulders and neck extremely sore and stiff. Not really hungry. But my chest feels better than in the last weeks. Also feeling unwilling to do much, although I did step outside today and I collapsed several cardboard boxes to go into the compost collection and that knocked me out for a bit. I keep forcing myself to get up from my chair and do something (anything) but have to keep sitting down again. Is that still the virus hanging on? Or is it just old age/laziness? Pretty sure it's on the way out anyway.

I had really intended to have some smoked mackerel and salad for my evening meal but couldn't be bothered.
