What have you eaten today? (Low carb forum)

Breakfast 2xCWC, nut granola, 2 eggs scrambled with butter.

Shopping trip on my bike. 9 kilometre each way. Prefer the back roads route even if it is slightly longer. It did seem very crowded in the supermarket. What happened to only 25 people in the store? Lockdown officially ends on Monday, but really it is already gone.

Lunch. Avocado, tomato, cheese and basil with lettuce and radish. 2 glasses of water and cup of tea.

Afternoon was wasted tidying the garden. Rumbling thunder turned into a deluge which has destroyed the drive we had laid in February, washed away much of my vegetable garden, flooded the barn ( where all the tools, ride on mower etc are kept)

Am grateful it didn't make the final couple of centimetres to get into the house, but when i look at the mess. Have no idea where to start clearing up.

Pulled myself together. Made tea.

Dinner: pork chop, already cooked, with cauliflower rice, green beans and onion gravy, also from yesterday. Water and wine.

Comfort food. Made myself a KC chocolate mug cake. Had it with raspberries and cream.

That's truly devastating. What a mess to have to clear up - and no hubby to help. At least, if there is more heavy rain, as has been suggested already, sandbags around your doors would keep at least your feet dry. I don't know where I would start trying to clear that lot up but perhaps it can be left until later in the year, when there is less chance of it happening again, and you could take your time over doing what you can. So sorry that you have to deal with it on your own.
 
Just had what I hope is my only meal for the day. It was a kind of breakfast bake - bacon, onions, black pudding and mushrooms baked for a while with some butter and then eggs whisked up and poured over the top and baked again. A bit like a frittata but ratio of egg to filling was much lower. I had half and kept the other half for tomorrow's breakfast. Shouldn't need anything else today but I do have some chicken wings in the fridge, just in case.

I've ordered some things that might do as a snack on the internet - they are said to be low carb - one is a peanut and chocolate thing - the only way I can think it might be low carb is by containing some kind of sweetener, which will make it inedible for me, but we shall see, If I'm to keep low carbing I need to find something that will replace the carby comfort foods I have been drifting towards recently. Weighed myself for the first time in ages today - gained a few pounds and am approaching 16 stone again. It has to stop!

Evening all.

@SlimLizzy sending hugs and hope the weather calms down.
@maglil55 glad the Morrison’s order worked out. I walked to my nearest branch and found them a bit lacking in the meat department. The butcher’s counter did manage to retrieve some lamb ribs from the back and I also found a suitably fatty bit of brisket. Steak was pretty much out but also picked up pork belly strips, 20% fat mince, a poussin and some chicken wings.

Another OMAD today, although definitely hungrier than the past few days. Just demolished an enormous pile of oxtail. Delicious and absolutely stuffed.
 
I think I might just use that recipe as a basis too next time I have a piece of smoked haddock. :hungry: I usually have broccoli or mixed green veggies, but never thought to cook it with peppers.

I think it’s quite a forgiving recipe, so probably any veg you have in the fridge would do - I used an onion, pepper and courgette, and provided they’re all chopped to a similar size I’m sure it would all be good.
 
Evening all. As it’s Sunday I decided to have breakfast/ brunch, a lot earlier than usual. BLT using a LoDough wrap and lots of H/m mayo.
Early afternoon snack of a packet of M&S Dried Serrano ham crisps with a glass of dry white wine having completed lots of lawn mowing and path weeding.
Dinner: IP roast chicken ( Skin finished off in airfryer - superb) with a single pig in blanket, roast broccoli stem and buttered cabbage. A lc custard to follow using the last little bit of Monkfruit sweetener. I’m annoyed I suggested the rest of the family try these - now they are all addicted too!
Nearly forgot, red wine with the chicken. Hopefully nothing else today.

Breakfast half slice of lc seeded bread The livlife one from Waitrose toasted and served with bacon and egg
Lunch cheese and celery sticks
Dinner roast beef, roast celeriac and Worcestershire asparagus with glass of dry red wine followed by lc lemon mousse and a few local strawberries
Had a lovely Zoom virtual coffee meet up with friends and we are hoping we may be able to do a real outdoors socially distance meet up next month - crossing fingers.
Planning a zoom meet up with youngest and his oh and dog tomorrow pm when go On a caring visit to eldest son. Good to see faces rather than just talk on the phone.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and Jaffa Quake Carb Killa bar (I’m missing my Sunday Jaffa Cake!:()
Late Lunch: 2 x Babybels followed by Greek yoghurt, lemon chia pudding and low carb vanilla and raspberry granola.
Dinner: roast chicken, one tiny roast spud, mixed veg and gravy made from meat juices thickened with flax seed followed by SF jelly, cream and LC chocolate granola.
 
A load of mushrooms in the fridge cried out to be made into soup so that was lunch.
An afternoon of stupid mindless snacking followed: Montezumas absolute black ( about 15g) a handful of almonds and something else, can’t remember what though.

It was very nice. 2 glasses dry white then the other half of the Montezuma’s 30g chocolate bar.
Quiz night tonight. We’ve lost the last 2 so hope to fare better this time.

@Annb It happened so quickly. Probably by the time realised sandbags might be needed , too late to make them . Did make some today though, when it thundered threats only again. This time though, mercifully, just a few drops of rain. MrSlim has emailed the man who did the drive to come and assess for repair. So am feeling lot better now. Have managed to clear along the front of the house. Tomorrow will be trying to dry out any tools that got wet.

No smoked Haddock here either. Have some nondescript white fish in the freezer that needs cheering up. Think this sauce might do the job nicely.
Perhaps adding a little smoked mackerel to the nondescript white fish will do the trick of adding that special smoked flavour!

I make something like that with smoked mackerel but don't use any cream. A little tomato puree added to the veg and a touch of stock (veg or chicken) makes it a bit more "juicy".

Edited to add:
Smoked mackerel has a strong flavour and can stand up to quite a strongly flavoured sauce - often I also use curry spices or chili.

The rest of the ingredients are staple/guinea-pig food in my household. I think I'll use a pack of this square pressed frozen fish my mother fed the cats on their birthdays. It's cheap and easy, and you won't see it in this recipe, the squareness being what usually holds me off :)
Tomato puree sounds like a good addition too, especially as I have an opened can that needs to be used!

Should work well with any white fish - especially "non-descript" white, frozen fish. That sounds like a good use for it.

Breakfast: 2 x CWC, nut granola, ham melt. Finding these very convenient and tasty.
Mid morning.. One slice toast with blue cheese CW .
Lunch.
Galette, ( somehow, mistakenly thought galette is low carb, it's actually low gluten suitable for grandaughter 2) with smoked salmon and cream cheese. Lettuce and a rescued radish. Water and tea.
Dinner: half a frozen mousakka. Brocolli and green beans. Wine and water.
Later, several pieces of cheese.

I just did a google search, no smoked haddock or cod in the Netherlands :( . The recipe looks very good!

I can't get smoked haddock either - except the horrible bright yellow dyed stuff. Don't suppose the smoked mackerel is any better really, but for some reason, I do buy it. I'm intending to try to smoke my own (supermarket quality) white fish in a biscuit tin, but don't have access to any wood shavings either - apart from some willow branches that Neil has cut down and I'm not sure they will be suitable. So I'm ordering wood chips (oak) from Amazon. Trouble is, they won't arrive until the end of the month. That's a long wait for someone as impatient as me.

If this works, I might try smoking with heather, or even peat. That's easily come by here, but I'd need to figure out the process first.
 
@SlimLizzy @Antje77 and @Annb I think smoked haddock must be a peculiarly British thing - shame, it’s lovely and quite versatile but I think this recipe would be perfectly nice with any non-descript firm textured white fish. The sauce is very flavoursome.
@SlimLizzy I hadn’t read your post yesterday, what a horrible position to be in all in your own. I hope the waters have died down now and the driveway can be put to rights without too much effort.
