What have you eaten today? (Low carb forum)

Hi all

Two meals today and not a trace of Elmlea in the flat :D

Lunch was some leftover lamb breast, a small piece of cheese and one pickled onion.

Dinner was slow cooked brisket - looked to be nice and fatty but a little disappointing, too dry so maybe I cooked it a little too long. Just had my first dessert in a while - small ramekin of whipped creamy cheese with 1 Hotel Chocolat 100% button broken into little pieces. Hit the spot.

Evenin’ All,

B: bovril and lc hot choc
L: forgot, then tidied up a stray sausage that Mr B had left lying about. Silly man.
D: a rather nice curry. Keema spices in mince, with one tablespoon of dhal and two tablespoons of goatsmilk yog with hot mango chutney stirred in. Rather oddto have a tomatoless keema, I thought, so next time will incorporate a bit of the red stuff.

It is mayhem here.
Mr B took the pack out early, before it got too hot.
So they have had the rest of the morning and all afternoon lazing about recovering their bounce.
We currently have a tooth clashing battle going on over who owns the footstool.
I predict tears before bedtime!

it got hot??? I've had the heating on!!

The day’s run away with me, i haven’t yet had dinner and I usually have it before 6. We’ve all had leftovers of various descriptions. Mine will be a tuna salad but I’m waiting for a couple of h/b eggs from the IP to go with it.
Lunch was leftover chicken soup then a lc custard. ( I’d also forgotten how good these are @shelley262 but I must say I prefer them made with Monkfruit rather than erythritol)
Then made an amazing discovery of a bit of a HC 100% cacao Easter egg in my wardrobe - I’d put it there to stop myself eating it all at once and then surprisingly forgot about it. It’s been demolished now.

Just had the steak, Brussels sprouts and broccoli spears. Steak was grilled (brushed with butter first), broccoli also brushed with butter and grilled, Brussels sprouts gently fried in the butte/beef fat mixture with orange juice, orange zest and some chili. About 1 tbsp soya sauce.
Chili was a bit hotter than I intended so that warmed me up considerably. It was very good.

The grocery boxes were delivered again, despite me asking the council to cancel them. Just took pasta and tinned tomatoes out, plus toilet rolls and soap. The rest didn't even get out of the box and I phoned to get No 2 son to pick it up on the way home from work. So that's it all gone - great!

Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and caramel carb killa bar.
Late Lunch: left over roast chicken and a couple of pickled onions followed by Greek yoghurt, lemon chia pudding and macadamia and coconut keto granola.
Dinner: ‘spaghetti’ carbonara made with Explore Cuisine edamame pasta followed by SF jelly, cream and LC chocolate granola.

Sooooo tired! We had a power cut from 00.13 to 01.24 - should have been okay but numerous burglar alarms going off kept us awake then, when the power finally came back on, one of the burglar alarms (don't know who's) wouldn't permanently turn off and intermittently blared out on and off for another four hours. Good job we couldn't work out where it was coming from..... finally gave up trying to sleep and got up to read - went back to bed when whoever it was had managed to fix their alarm (about 5am) then the dustbin men turned up at 7.30 so decided to get up to start the day and now I'm starving! FBG was 9.3!!! Might have a nap later.

Breakfast: usual omelette with carb free syrup
Lunch: Actimel drink and a bit of blue Costello cheese
Dinner: some h/m Minestrone from the freezer
What a horrible time you had with all that noise and disturbance. Did you have to have naps to recover? Hope you get a peaceful sleep tonight.

@Annb I suggest you try and source Neil’s bread flour and yeast from some small independent mills in Scotland or even N Ireland. I struggled to get wholemeal flour for the last couple of months and in the end found what I wanted from a mill in Eire which was shipped in less than a week. I used Kells in Kilkenny and bought the wholemeal soda bread mix. I know in England Doves Farm Organics do a bread box daily containing flour and yeast so might be worth a look. But equally there might well be Scottish mills that could use the business.
@PenguinMum some supermarkets are selling flour they bought wholesale to help ease shortages.

Our supermarkets don't appear to have done so. The problem must be arising because, during this lockdown, lots of people have turned to baking for themselves.

I have found a small flour mill in England that can supply strong white flour - couldn't find one in Scotland. Lots have wholemeal available, but no white - apart from this one. I e-mailed to find out details about their flour (fibre content, additives) and they were very helpful. I'm hoping to get just one smallish bag to test it for Neil and, if it's OK, I can get a larger amount.

Breakfast: 2x CWC, The last portion of nut granola, ham melt
CWC
Idea was to start clearing the mud from the barn, did have a go before and filled the barrow then realised I couldn't move it. So today shovelling clay out of the barrow into bucket before I could start.
Heavy tiring work, but once started on the barn, not as bad as expected, was able to clear a significant amount.
Lunch: galette filled with ham and cheese, lettuce, cucumber and coleslaw. Thought i was still hungry so had raspberries with yoghurt and cream. Then a second bowlful. Really didn't need them. Was feeling stuffed and dozed a little. Then got back to work.
Sorted out the salad bed. Then back to barn clearing. Managed to clear far enough to get the mower out and my bike. Both are ok. Cleared a bit more, while moving some tools managed to drop something heavy, didn't move fast enough and it caught two toes. It's good thing nobody was listening.
Dinner: after excessive eating lunchtime didnt need any, but had several cups of tea. Back to my garden. Some plants are already begining to recover. While I was working, a cuckoo landed in a tree nearby.
Tomorrow have a man coming to look at the drive and give advice, and or estimate.
Poured myself a glass of wine ages ago and haven't started it. Might not bother now.

Yesterday bed 6.6 FBG 7. No funny turns yesterday but Hubby has succumbed to a cold! Great, just what I need. My prescription was back so I nipped down to the Pharmacy to collect it and so much for the proclamation from Holyrood about lockdown continuing - High Street was busy, next to nowhere to park, not a mask in sight (apart from mine and the staff in the Pharmacy). Social distancing? Forget it! It's happening in quite a few places here.
@Goonergal, I have the same issue with Morrisons and meat but I get the meat from the local butcher now. This week I wanted mostly chicken so that wasn't an issue.
B. TAG and a slice of skinny bread toasted with a Dairylea triangle.
L. Nothing.
D. Remains of yesterday's chicken casserole with more sprouts and another bit of GF pastry. It did put me up to 7.2 at 1 hr but it came back down pretty quickly. Last 1/3 rd of the Skyr with a few raspberries.

@Chook I hope you get a better night tonight. That sounded pretty awful. @Annb - good looking steak and veggies. @SlimLizzy - I'm not surprised you were hungry after all that physical effort. Well done you I bagged and froze the last of the broth/chicken soup yesterday thankfully as I now have Hubby's cold! At least I know it is a cold as he's been totally isolated. He's feeling better so he assures me it's just a 24 hr thing. After the way I've been for weeks it is very mild.
Bed 7.3 FBG 6.3 but I've mostly been in the 7's today thanks to this cold.
B. TAG and a couple of slices of skinny bread - one with pate one with Dairyleea.
L. TAG and another couple of Dairylea.
D. Made Kung Po beef with mange tout, baby corn, green beans, yellow pepper and onion. Had it with cauliflower rice.
Couple of squares of 90%.

I was pretty annoyed today to discover we had an outbreak of Covid19 in Edinburgh back at the end of February which infected 25 people at a conference and no one saw fit to tell joe public it had happened. 25 out of 70 odd people is one heck of an infection rate and we should have been warned. It's developing by the hour what wasn't done. 8 out of the 25 are residents here so how many more were infected?

My neighbour who is shielded because she has COPD also receives these boxes. like you she doesn’t want or need them and is finding it very hard to stop them. It’s usually a case of either her or me spotting the delivery driver and asking him to take it away again. If we miss him it’s left on her doorstep and she doesn’t use half the stuff in it. It seems such a waste. It’s a lovely idea but Im sure there are many people who don’t actually need them.

I, too, have got a neighbour who can't stop these boxes arriving. She actually doesn't know why she gets them as she doesn't have anything wrong with her apart from being over 70 and has been getting stuff at the village shop and on my weekly Asda order since this all started.

I had a decent night's sleep and am feeling a lot better today - I still haven't found out whose alarm went off for most of Monday night/Tuesday morning and I'm not the only one whose upset. We have a WhatsApp group for the people who live in my road and several people posted about it, especially those who get up very early for work.

Meals....

Breakfast: usual omelette with carb free syrup
Lunch: usual Actimel drink and a bit of cheese
Dinner: mushrooms stuffed with pesto and mozzarella and a couple of falafels with salad

Morning all.

Posting early today having felt the need for a very early lunch break and already consumed my main meal. Rotisserie poussin in the air fryer. Used a chili oil, garlic and salt rub overnight and added some paprika just before cooking. Very good too.

Dinner will likely be either a mince based concoction or rollitos.

@Annb @Chook @DJC3 those boxes seem to be going to a lot of people who don’t need them - one of my sisters and a friend are in the same position. On a local news board there are reports of the parcels being delivered to the wrong people too.

Hi All
Despite bad fbg today I had small slice HiLo toast and lots of tea.
Lunch has just been mug of celery and brocolli with stock made from chicken carcass. Large chunk of cheese. Will test in 2 hours.
Supper will be a kind of chicken chorizo pepper and cherry tom stirfry but I will be checking bg carefully before as to whether I can have cauli rice as well.
The trouble is if I fast I am miserable so try to eat small amounts of safe things. Cant wait for my bg to get out of the 6s and 7s.
@Annb glad to hear you found some flour and hope it works out well.

That looks fab!

Today. we're on cold cuts, so not the most exciting in the world.

I saw the item about Covid19 being in Edinburgh in February a couple of evenings ago! That was just shameful - not letting people know and not following it up to any great extent. What was said yesterday was that most of the participants were from other countries and those countries were informed so that they could trace contacts. To my mind that isn't an excuse; it makes it even worse! And anyway, it wasn't only the people at the conference who would have been affected - what about contamination in the hotel itself, what about the staff?

We were also told that there was no coronavirus on the Island until late March, but that was clearly not the case. So many people seem to have gone down with it (or if not, then something very like) in early March or even late February. Of course, we couldn't expect to miss it - there are so many here working offshore, students travelling to and from the mainland, islanders going to Inverness or Glasgow for shopping. A very high proportion of islanders move around a lot, and then there are the medics who come as consultants to the Western Isles hospital from other hospitals all over the country. All that could be said was that, until mid-March nobody had tested positive to the virus, because there was no testing.

On a food note - I still have quite a lot of broccoli spears left to use up and will have them today with salmon. I'm intending to make a kind of Asian sauce to go over them. Breakfast was mashed up raspberries and the last of the cream in the big pot I had. Then a small mandarin orange. At the moment I have it in my mind to make some small spinakopita with cabbage leaves instead of filo pastry. I'll need to wait until Friday to see if I can get some spinach to do that though. I seem to spend a lot of my time imagining dishes that I could make these days. Probably not a great idea to be obsessed with food. But that's probably par for the course when one is trying not to eat too much.

I have been giving the grocery box food - other than tinned tomatoes (and pasta for Neil) to No 2 son for his family and they have been taking some out of it and taking the rest in for the food bank. Seems like a good way to use it, but I still wish they would stop delivering it.
