What have you eaten today? (Low carb forum)

I completely agree with this.

I have been through a couple of bouts of severe depression since diagnosis - I'm not saying they were caused completely by what I ate (or didn't eat) but it certainly contributed to them in a big way. It took me a long while to identify what I thought was wrong for me in what I was eating but eventually I made some changes that made me feel better about myself and life in general - although, TBH, the changes weren't necessarily the best for controlling my diabetes but sometimes there has to be a compromise for our mental well-being.
 
Aw @SlimLizzy I'm sorry you're so down in the dumps. Do you think the simple fact of moving has anything to do with it? 13 years ago we moved from our hometown, 100 miles down the road, same state, for Mr ZF job. I was deeply depressed for a year and a half, and didn't see it at the time.
@Chook stinky dogs I missed, which joint are you replacing? Or is it the appointment that's being replaced? (Pardon my obtuseness!!) Glad your test was negative-- poor Mr C to have to do it again...

Today will be weird. DIL asked me to come an hour earlier than planned to watch DGS, so my schedule went haywire.
Bfast avocado, crunchy/lumpy pecan butter, scrambled eggs (poor timing for having unwittingly run out of pre-boiled eggs!), square of Lindt 90% on the road. Another square while baby naps. The flax crisps will have to wait til I get back home!

Supper to be wilted spinach/hm dressing, some protein-- had sardines last night so maybe tuna tonight? And flax crisps.
 
So, a couple of rashers of bacon for breakfast (I was hungry, so didn't skip) and 1/4 of a pack of sandwich chicken for lunch. All interspersed with 60g of pork crunch, and a couple of crafty pork scratchings.

Evening meal was a first: cod and cauli rice kedgeree. I couldn't find curry powder so ended up using chilli powder (which doesn't work as well) but on the whole, it was a quick, easy and enjoyable meal. My son's here, so he had the same, but with regular rice.

I'm getting thoroughly confused with the different kinds of pork things you seem to have in the UK. It's almost worse than the different names you have for different meals; dinner, supper, tea...
Scratchings, crackling and now crunch...
Can someone help me out? I love pork things but google gives me the same result for all of them :bookworm:
 
Crackling (the skin on a roast pork joint that goes crisp and hard and crunchy. Often eaten hot)

(Did you even notice I had gone?)

been staying with relatives, who are extremely tolerant of my carnivory.

Bs: scram egg with herring roe, or nothing.
Ls: lumps of cheese or pan fried chicken livers in cream and garlic.
Ds: roast lamb, pork chop, chicken breasts with pate, belly pork

then today, back on the road, I stopped at a motorway services with M&S, and had prawn cocktail and chicken breast in herbs. Tonight will be mexican mince.
 
@DJC3 im growing mixed salad leaves, lettuces, range of herbs and a variety of lower sugar tomatoes- don’t know all names but a mix of Black Russian, green, yellow and orange tomatoes they have lots of flavour not too sweet and mixed with dash of lemon juice, basil leaves (grown from seed indoors and put out about a month ago) and lashings of olive oil and pepper they don’t seem to impact my bgs!
@maglil55 wonder if you are celebrating opening of pools soon I saw the announcement and thought of you. I’m loving my swims they limit no’s and it’s lane swimming so I’m finding it more enjoyable than pre lockdown. Showers not allowed but small price to pay for pleasure of being back.
Breakfast early morning swim must admit felt like eating a food breakfast when got back but stuck to coffee with cream as hectic and Zoom PPG meeting scheduled for 10 so got to lunch without giving in but have eaten more today since ending the fast.
Lunch smoked salmon with scrambled eggs on one slice of buttered HiLo low carb toast followed by one square of 100% with peppermint oil
Mid pm after quick walk in sunshine DGF caramel brownie
Dinner pork chop, stuffed mushrooms, coleslaw and celeriac chips followed by a few garden berries cream and SF jelly.
Know rain forecast for Tomorrow but going out to water my tomatoes they are in pots close to house so dry out quickly.

@Chook glad your test was negative but poor Mr Chook! Good luck with the fast. I’ve only got past 48 hours once - just couldn’t hack anything longer.

OMAD today and just trying to work out whether I’m actually still hungry or just a bit dehydrated after a 22.2 mile walk in the sun. Really enjoyed it and crossed a major item off my canal walking bucket list - walking through the 1.7 mile long Netherton Tunnel.

Dinner was at Five Guys - bunless bacon cheeseburger with an extra patty and some grilled onions.
 
Lovely weather today following part of the Thames path in rural Oxfordshire. Was delightful and 18,500 steps.
B: ff greek with seeds and blueberries
Pub lunch. Ham hock terrine ploughmans minus the bread and pickle and with extra salad. Just as well I ordered without the bread as hubbys cheese one came with 4, yes 4 hot rolls!
D: scrambled eggs and ham, with salad. One square 90% spread with clotted cream (well it needs eating up before we go home!:p)

I feel your pain. On a good day I can avoid all the bad stuff, on a bad day its all I want. I cope by having little bits e.g. one falafel, 2 bites of hubbys pudding but not every meal or every day. Body seems to cope and being a little bit bad is way better than being bad all the time. I've been struggling with dining out. Burger with no bun or steak is already boring and I'm only 6 months since dx.

This recipe for PORK SCRATCHINGS uses this ingredient which clearly says PORK FOR CRACKLING. I copied the picture from the recipe in your link!
However, those scratchings look similar to my favourites sold prepackaged in the supermarket :)

Ah, my supermarket sells these as well, but they disappear all at once when I open the bag, so I try to avoid them :)

By now I'm pretty sure it is almost as confusing for natives as it is for me, thank you so much for the (somewhat) clarifying links, @Brunneria !

Anyway, I had roast veggies (broccoli, carrots and bell pepper) with camembert from the oven. I forgot who posted this genius dish a while back, but thanks again! It was very good!
 
@Chook hugs for stinky dogs and poor Mr C’s inconclusive test. Good luck with the fast and thanks for the salt tip - I was adding a pinch of salt and a slice of lemon. I drank mostly fizzy water from my Soda stream which I love. I think I just reached that point you mentioned happening at 5 days but mine was an awful lot sooner! We’ll see how tomorrow goes after another 30hrs.
@shelley262 all that home grown salad sounds delicious. We tried growing beans ( we got 3 beans) and tomatoes but only got a handful which fell off before they ripened ( they’re on the windowsill now) we don’t seem to have green fingers.

@SlimLizzy I hope you’re feeling a bit better about things today and have decided how to tackle the future. I completely agree with @DCUKMod that deciding what you want to do and accepting that decision is the first step forward. I do feel for you though and I think it affects us all from time to time.
@Rachox hope you are still sleeping well and recovering.
OMAD for me today at lunchtime - a large substantial salad containing pretty much everything I had in the fridge. A bit of leftover roast chicken, 1/2 avocado, Hb egg, roast beef, cheese, plus leaves and h/m ranch dressing. It’s doing the trick and I’m not hungry yet. Will see how tomorrow goes.

Scratchings definitely will break your teeth
Crunch may break your teeth but can be sucked until soft

@shelley262 - not celebrating yet as it was another "depends" on her utterly confusing rules. Call me cynical but I and many others think it was to distract from keeping Aberdeen locked down when there is no increase in hospital cases and only 2 in ICU in the wholevof Scotland. There's been no notification from the club yet so it's a wait and see. @Chook - poor Mr C. I really don't fancy the sound of that test. @PenguinMum - it really is dreadful and we've had 5/6 years of this. She's still MIA since she was told it was her little darling that started everything but he's still about so I don't know who is ferrying him in. He attacked grandson again in the afternoon line and grandson retaliated. Shame as he'd earned almost all his Certificate stars and retaliation cost him. The mantra is Words not Hands. On finding out how he came to be in close proximity, turns out That Child forced his was to the front where grandson likes to be. We have now tried a different ploy and asked him where his friends are? Back of queue. That makes sense as they will want the really naughty boys at the front so they can be watched and good boys they trust at the back. You could see the wheels turning over.

@SlimLizzy - I feel your pain. I am going through a can't be bothered phase. As simple as possible. Today I had a longing for a bag of chip shop chips with chip shop sauce. I didn't because the longing was for the first new potato chips cooked in fresh beef dripping! It wouldn't happen so I'd be disappointed. Time to give myself a shake and start cooking again.
 
Recovery from foot surgery is going ok, note to self though it’s better to feel a bit spaced out on the stronger painkillers than being alert but in pain on just paracetamol :(
Anyway food today:
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Late morning: black coffee and cookie dough carb killa bar
Late Lunch: pork scratchings followed by Greek yoghurt, blackberries and vanilla and raspberry LC granola.
Dinner: cheddar and cherry tomato omelette followed by DGF brownie, cream and LC chocolate granola.
 
So is the crackling also called crackling when you buy it prepackaged in the bag? Pretty sure this is the one I prefer :)

No.... when its cold its called pork scratchings.

I agree about the meal names but, as an ex chippy owner, the biggest confusion was the myriad names this little group of islands have for bread rolls!
 
Brunch - few slices of ham and egg roll with mug of earl grey and double cream.

Dinner - chicken with brussel sprouts and a few carrots. SF jelly and double cream.

Met up with a couple of friends this evening for a catch-up - we were lucky to get a table in an alcove before entering the restaurant come bar part of the hotel so there were only the 3 of us in a huge area of the hotel so were able to social distance from everyone else very easily.
