What have you eaten today? (Low carb forum)

Hey - they look fab - what is the recipe please for the chocolate and nut one?


Carbs per 50g portion 3.5g approx., (not including anything added like yoghurt or cream)


Ingredients:


25g coconut oil melted

1 tbsp unsweetened cocoa powder

1 tbsp granulated sweetener of choice, I used Xylitol but note this is poisonous to pets.

1/2 tsp cinnamon

200 g unsweetened desiccated or shredded coconut

50 g pumpkin seeds

50 g sunflower seeds

100 g mixed nuts corsely chopped

50 g whole flaxseeds

10 Hotel Chocolate 100% buttons corsely chopped


Instructions:


1. Melt the coconut oil in a glass bowl then stir the sweetener, cinnamon and cocoa powder into it.

2. In a large baking tray, mix all the seeds, nuts, coconut and chocolate pieces together.

3. Pour the chocolate coconut oil over the chocolate, coconut, seed and nut mix then stir well so all the granola is coated with the chocolate coconut oil.

4. Bake at 180C/ 350F/gas mark 6 for 24 minutes top oven, until crispy and brown. The mixture burns VERY easily, so set the timer and turn the mixture every 4 minutes.

5. Serve with Greek yoghurt and berries or with cream or sprinkle over ice cream (Oppo of course )

6. Store in the fridge.
 
Great going on the weight loss @Sugarlisa. @DJC3 topside looks good. Close enough to rare for me to try. Slept until 6.26 but new sensor still exceptionally delinquent. Score draw. B= Assam TWAMIS: Dockey CWCSFCS which ran into L: Beef sandwich - finishing off sliced beef and SB loaf; ok EM: Mackerel and avocado salad +Vits. Red wine. Comfortable with the food. A little more satiated recently but unconvinced about LCHF for overall health. Red wine, statins and vits as a compromise. Patchy behaviour of Swipey’s really unhelpful.

Great looking menu today @JFWinstone did you sauté the kale? Have you tried kale crisps?
Today I had coffee all morning.
Lunch was mixed olives, salami and cheese. DGF ginger cake snd more coffee afterwards.
Dinner: finally got to eat the sous vide topside with a heap of garlicky greens. I’m never cooking topside any other way now, it was perfect. Followed by a spoonful of the boozy strawberries leftover from the gin infusion I made earlier this year. Cream and grated chocolate on top made a fine pudding.
@DCUKMod made an orange and vanilla vodka infusion sous vide today as a present for someone. Had to QC a bit obviously - gorgeous.

Maybe watch the pasta. I found it didn't matter what colour it was, it was tricky for me. You're doing really well!
 

How many weeks did you have the topside in the bath, DJC?

The infusions are such a revelation, aren't they? I've had such fun with them. So glad you're enjoying your new toy.

I didn’t enjoy it I should of stuck to veg and left over chicken for last night lol

I musts admit, I tend to think of things like pasta and rice as being carriers of the delicious stuff. In other words, they are most often bland with the sauce, curry, chilli or whatever being where all the flavour is.

A long time in, I van get away with some rice, but I just don't have pasta any more and I don't miss it one bit.
 
11:30 a small chumk of cheese
1pm some lovely brie with truffle bought at our local farm shop while out hand delivering cards. Was expensive but oh so tasty. Had 3 cherry tomatoes and 6 olives with it. A piece of spice cake with cream and blueberries. Have sliced and frozen the rest.
6pm yesterday's roast chicken and buttered leeks reheated in cream. Boys had the leftover stuffing refried in butter as a side.

The infusions are such a revelation, aren't they? I've had such fun with them. So glad you're enjoying your new toy.

I think it was around 6-7 hrs for the 1 kg topside. I realise I need to keep a little notebook handy to jot down temp and timings so I can remember for next time. It was a revelation though, I’ve always found topside tough, I’ve no idea why it’s sometimes sold as a roasting joint.
As for the infusions - yes, really good fun. Thanks for insisting I buy this gadget!

@Mrs T 123 - Morrison’s order was all present and correct. I’m a Diet Coke person rather than Pepsi Max and mine all arrived

TMAD for me - becoming standard.

Lunch was leftover beef from the weekend, a couple of small bits of cheese and 3 of the small Asda sugarless pickled onions.
Dinner - very late for me as had a quick post-work jaunt to return some stuff to IKEA. Of course ended up having a little look round too, but no purchases. Soaked on the way home so was more than ready for the air fried Poussin coated with chilli oil.

Anyway, to comply with the thread:

It was my turn to cook tonight, as MrB should have been playing golf, but the course was closed due to a lot of standing water, from recent rain.

In my typically lazy style, we had beef shin, with garlic, red wine and a vegetable clear up, so carrots, swede, savoy baggage, a ginageroud parsnip and potato for MrB. Meat browned, then a chopped onion, in chilli oil, then the pan deglazed with red wine. I brown in a frying pan, as browning in the IP risks my forearms being burn (shorty here).

Everything in the IP with some beef stock and the remains of the remains of a bottle of red and a glug of home made (slow time, that one) chilli sherry. Salt and pepper, then hit the Meat button, and get on with other things (in my case, dead heading)

When time to eat, rejoice in the Keep Warm function and serve.

When we have a farmhouse-style casserole such as this, we usually have it in bowls.

So delicious, with just a hint of heat rom the chillies, and enough left over for another day.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee
Late morning: black coffee and white chocolate phd bar.
Skipped lunch.
Mid afternoon: black coffee and coconut bites.
Dinner: chicken Balti curry with cauliflower rice followed by SF jelly, cream and LC chocolate granola.
 
Breakfast two boiled eggs and buttered hm lc bread
No lunch too hectic
Dinner Cajun chicken with salads followed by DGF peanut butter brownie with cream.

@Goonergal pleased your delivery good mine today from Ocado was a disaster I had to sort out a refund of 78 quid that’s how much was missing basically nearly all my shopping ! Plus they delivered several bags of someone elses shopping and yes you’ve guessed it it was all stuff I choose not to eat such as low fat yoghurt, bread, low fat cheese and spread,grapes,blueberries, bananas etc. Customer services suggested I found a home for it so ended up giving stuff to neighbours as all fresh stuff so not suitable for food bank! However I kept back a pack of quails eggs I’ve never tried them so will do. I’m away for a few days this week so couldn’t rearrange the delivery. Best laid plans!
 

Great weight loss @Sugarlisa, 4 lb in a week is terrific. Wish I could do that. For reasons of other health issues, I find I need to have a reasonable amount of carbohydrate daily - just recently started on this new way of eating and have put on 7 lb in a week! (16 st 41/2 lb to 16 st 111/2 lb.) Not what I wanted and, in fact, more weight than the weight of the carbs eaten in the week. The carbs may cause me to retain even more fluid. GP has just told me to double the (already doubled) amount of Furosimide for a couple of weeks to see if that helps.

Anyway - food today -
Breakfast: raspberries and cream
Lunch: omelette with chorizo and onion
Dinner: mild chilli beef with cannelini beans (don't like red kidney beans), followed by 2 cream crackers with stilton. Still hungry but it will have to do.
 
What are the greens? They don't look familiar to me at all.

Are they 'collard greens'? If so, too bad the google gives me at least 5 different vegetables that are supposed to be the right translation of collard greens

Still, I count my findings as a win, as you can imagine how many results you get when googling for 'greens', ranging from fiddlers to golf and political parties


I had a small leftover filled pepper which has spent a bit too long in the microwave (still tasted nice though, just looks rather unappetising) and bell pepper soup. I've never had bell pepper soup before but it turned out very nice! The picture didn't, but the food is gone now so no second chances on the picture

What are the greens? They don't look familiar to me at all.

They’re just called greens lol I’ve no idea if they have another name. They might be what are called collard greens in the US. Some sort of cabbage or brassica but a thick fairly fibrous leaf, quite strong tasting. I boil for a minute or 2 then sauté with butter and garlic
