What have you eaten today? (Low carb forum)

In before the sport and taking down of decs. The rickety 3 (?4) legged stool (LC, sleep, gout control) still isn't perfectly stable (rocks about on the scales - I may need to saw one leg a tad) but still just about functional .Today’s effort: B:Tea: Mid morning: CWCSFHS: Lunch: Tea : EM - (early): Pheasant (covered in bacon) roast veggies (not root) gravy/jus. I anticipate early rising tomorrow but hope to be surprised. @mojo37 another for the black pepper in swede mash team - anyone keeping score?
Edit: L= Hot SF blackcurrant squash. 75 mls in a Sports Direct mug - pint? Right taste,

Oooh - meant to ask to those that have both instant pots and air fryers - which one gets the most use in your house and if you had to be without one of them which would you keep and why?
I suspect I use the Air Fryer more. I know @Goonergal and I have the same Lidl model and it is a very useful version. IP is still well used though and I wouldn't opt to get rid of either of them.
 
I tend to use the AF more frequently for smaller quantities, and the IP less often for huge amounts.

of the two, the AF can easily be replaced by a grill, a toaster or an oven, whereas the IP is more specialised and I couldn’t substitute it so easily.

yesterday:
3 mushroom and chicken liver soup with crumbled Stilton (home made), venison and red wine pate (bought, GF and 7g cabs), and a slice of Keto cheesecake.

It was a one meal day, only because I was so stuffed after all that that I haven’t needed supper or breakfast!
 
I like black pepper in a lot of my food ...not sure if its good for you or not .....

sure. It is another of my Throw Togethers.

i used chestnut, shitaki and oyster mushrooms and a pot of chicken livers, all sauteed together on a pan with butter.
Quantities adjustable, of course.
Then threw in chicken stock (cube + water) and blended it all til smooth, adding liquid til the right texture.
Plus seasoning. I used salt, pepper and a little smoked chipotle paste.
And garlic granules and dried onion powder too, but if you have fresh, then they could saute too.

I have been using onion powder more and more recently because now I hardly use any onion, it is much less phaff than remembering to buy fresh on the rare occasions I need them, or taking up freezer space with the frozen onions.

when serving the soup I crumble stilton into a bowl, ladle the soup over, micro til hot, then add a dash of cream.
 
Evening all.

TMAD today. Lunch was air fried lamb ribs. Have generally been using Morrison’s ribs lately, but these were Waitrose. Much smaller than their Morrison’s counterparts (more of them). On balance think the Morrison’s are the tastier of the two.

Dinner was mince fried with onions, 2 eggs and a sprinkling of grated cheese.
 

Glad you mentioned Dinner for One. I also thought about @ziggy_w and the German tradition for watching it NYE I watched it last year too but couldn’t for the life of me remember what it was called this year.
Keeping everything crossed for your mum’s vaccination, the sooner the better.
 
Wasn’t hungry at all until around 4pm which is a first for me. Had 2 airfried chicken thighs.
Bought steak for dinner but I’m not hungry enough for it so we’ll have it tomorrow instead.
I’ve picked at the last of the Christmas gammon and might try to make more of a dent in all the leftover Christmas cheese in a bit too.
@Brunneria I like the sound of pouring your hot soup in top of crumbled Stilton. I’ll be giving that a go.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee
Late morning: black coffee and cookies and cream phd bar.
Skipped lunch.
Mid afternoon: black coffee and a few pecans.
Dinner: ‘spaghetti’ bolognese, no spaghetti for me, I had fried courgette slices instead, followed by DGF pecan and butterscotch blondie with cream.

Haven't posted yesterday, so once again Happy New Year to everyone on this thread.

@shelley262 and @DJC3 -- Somehow I missed Dinner for One this year -- I am blaming it on Covid and lockdown, it definitely messes with my routines.
@shelley262 and @Chook -- It's good to see you back on here.

Yesterday ...

Breakfast: A double decaffeinated espresso with cream and erythritol.

Lunch: A slice of Aldi protein bread with h/m mayonnaise, cheese and turkey salami.

Dinner: Fried and cubed veal and a h/m sate sauce. Another slice of Aldi protein bread with h/m mayonnaise, turkey salami and cheese.

Late night snack: A small serving of turkey salami and cheese.

I don't think chicken livers come in pots around here, but pretty sure it wouldn't hurt to use fresh ones

I'm amazed by this Copy Me That website, it managed to find your recipe in between the other posts so now I'll be able to find it again!

Still fighting dark moods so I haven't been posting much, although I've eaten very well
For new Years eve with my neighbours I thawed an almost forgotten box of oxtail stew and turned it into an eastern European like sauerkraut dish with concentrated tomatoes, lots of paprika, and cream. Everybody loved it!

As a dessert I made @DJC3 's chocolate and peanut butter things (https://www.diabetes.co.uk/forum/threads/what-have-you-eaten-today.75781/page-2143#post-2348860), with walnuts instead of peanuts mixed in. I'll definitely make these more often, so much easier than truffles and almost as good! Only 10 minutes work, no risk of separating (I think), and everybody was impressed too!

Yesterday I was invited by other neighbours a bit farther down the road for Chinese take-away. I love Chinese take-away, but I usually choose my dishes for carb content and add a dish of my own to reduce the total carbs further. No such adjustments yesterday, and we ate late, at 8:30, so I've been staying up until 3:30 trying to get back on track with insulin but keeping it safe while sleeping as well. Worth it, but a great reminder of why I prefer lower carb meals.

So today I was very happy with my cheesy string beans (string beans, some leftover grated cheese and a bit of Danish blue, and nutmeg) and my tuna melt things with extra grated cheese on top because I grated too much

Still trying to find a way to save batter for later without it losing its fluffyness (either in fridge or even in freezer) so this time I mixed all the ingredients except the eggs, divided the batter over 3 bowls and finished only one of the bowls with a whisked egg before baking. The second bowl is in the fridge for tomorrow, the third one in the freezer to see if this works.

As a New Year's resolution, I have promised myself to cut way down on my red wine consumption. Have managed to complete two days be now. Today, after cleaning the kitchen, blood sugars went up to 7.6 (highest it's been in a year) -- scared me a bit to be honest and almost made me lose my resolve. In the end, I told myself to give it two hours to drop back to more normal levels. Now back in the mid to low fives -- phew.

Dinner: A small piece of cheese.
 
Yogurt and blackberries with a herbal tea (breakfast)
chicken salad sandwich on wholemeal has we shopped with a bottle of water (lunch)
Tea with Chinese beef curry with no rice with a glass of buck fizz for my son 13th birthday didn’t have any of the cake didn’t fancy any
 
Hi all snowing heavily here just now - a long walk in the forest may be on the cards tomorrow I love it when forest is all white and silent.
I’ve got a delivery due tomorrow so hoping it arrives early so can get my snow boots on and get out there.
Took Christmas tree down and did a lot of decluttering today - out with the old!
Breakfast one each of chipolata sausage,bacon and egg with one slice of lc toast.
Lunch one slice of lc toast and pate.
Dinner duck stir fry served with one small Chinese style pancake (4.8 g of carb) with glass of dry white wine followed byDGF salted caramel brownie with cream.
 

Glad the choc/nut squares were a hit. You’re right they are a lot less hassle than truffles.
Hugs for the worrying night of insulin stress after your Chinese food. Puts my minor frettings about higher numbers into perspective. I usually add my own stir fry to a Chinese takeaway too, at least I can be sure one aspect is safe then.
I hope your dark moods stabilise soon, is it worse in the winter months?

No worrying nor stress, thankfully, just tedious and annoying, but also planned for as I thought it worth it (and also well deserved after both christmas and NYE having been perfectly sensible from a food point of view)!
I can't imagine how hard it must be to deal with diabetes diet only, without insulin giving you the choice between easier or harder control. Being able to choose makes a giant difference for me, without insulin you can only wait it out when having a not so sensible meal or treat. I take my hat off to anyone dealing with that all the time, without cheating tools!

I hope your dark moods stabilise soon, is it worse in the winter months?
I hope so too!
Not sure about it being worse in winter, although december is always harsh with lots of festivities reminding me of times gone and people lost, starting with Sinterklaas (my favourite) and ending with NYE, with christmas and the 19th in between. The 19th is the day my father died 6 years ago, and my dog died last year.
I think periodic dark moods are simply part of me any time of the year, and december makes it worse.
But like always, it will get better!
 
Skipped breakfast
L: 90 sec bread with pate and 3 cherry tomatoes
D: hubbys milestone birthday so boys had supermarket curry with rice, bhaji and nan. Asda failed to deliver my tandoori chicken or offer any substitute so I had to make my own version. Marinated chicken breasts in ff greek with ginger and garlic and lime and tandoori spices. Cooked in air fryer. Was so nice I ate 2 whole breasts.
We then had a zoom party games night with family and friends so drank 2 small glasses red and ate 3 macarons...was a good lowcarb day until then.

At least that's our final celebration over and done with.

@Antje77 I love those chocolate squares too, but they’re far too moreish. Even freezing them doesn’t prevent over eating as they only take a few seconds to defrost in the microwave

Planning OMAD today. Meant to be going on a long walk with a friend and her dog but her car’s broken down while on a visit to her dad and she’s not yet sure how she’ll get back to London! Not seen her in well over a year so am hoping she finds a solution.

In the meantime, Teaolat with cream and IP in standby for prepping of beef short rib for tonight.
