What have you eaten today? (Low carb forum)

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee
Late morning: black coffee and Fibre One protein bar.
Skipped lunch.
Mid afternoon: black coffee and coffee chia pudding.
Dinner: LC fish pie with roasted Mediterranean veggies followed by SF jelly, cream and LC chocolate granola.

Hi All
I might be eating too much in the last three days. Brekkie usual slice HiLo toadt cooled, thick butter and lots of tea. I made a large pot of shallot, leek, celery, and broccoli soup on Monday and have been having a large mug of each lunchtime alongside a spoon of h/m Waldorf Salad and either avhunk of cheese or todayva dlice of ham. This cold weather just makes me starving. Monday supper was lamp chop panfried with few mushrooms and a tomato,Tuesday was fried diced red pepper chorizo and leftover chicken with pinch of paprika stirred through cauli rice, delicious. Tonight was roasted Med veg with dried herbs and grated cheese.

l: some of yesterday's leftover bolognaise sauce on a half jacket potato. Tested before and after as havent had potato in months. Rise only 1.8, result! Was about 150g weight of potato. Ff greek with seeds and blueberries

D: fish oven baked from frozen seved with carrots and swede, and courgettes slowly fried in butter and olive oil. At last minute added fish juices and a splash of cream to the courgette pan to make a ( even though I say it myself) fabulous sauce. 1 chia brownie and 2 glasses white wine watered down with kombucha

Doesn’t sound like too much at all. Like the sound of your chicken dish.

Gosh quiet here tonight.
Moved from OMAD to 18/6 - 18 hours fast and all eating within 6 hours but no snacks. Felt hungry in the night waking a lot and first thing so decided couldn’t carry on with OMAD - plus have now lost 4kg since start of February so need to consolidate!
Lunch two egg omelette with mushroom, kimchi and cheese
Dinner venison meatballs cooked in a ragu served with torn basil leaves, sprinkle of cheese and one slice of hm lc garlic bread with generous glass of red wine. Pudding sf jelly with yoghurt plus just had decaff coffee with one hm lc truffle.
OH happy today as he has vax appt next Tuesday - he’s 67.6 and has asthma. I’m a couple of years behind him so hoping won’t be long. Would be great if offered before go to mums in a week to support her during her eye op.

Brunch - 2 slices slc toasted with corned beef & tomato. 1 DGF Raspberry Bakewell Blondie with mug of earl grey tea

Dinner - 2 slc rolls - 1 on leftover bratwurst sausage with a little burger relish & grated cheddar on top, on the other I had a fried egg with a little 50% less sugar & salt ketchup. 1 DGF Notella Blondie with extra thick double cream at the side and a little double cream drizzled over the top

11:30 2 h/m nut bars and piece soda bread
Then a walk/skate. Sheer ice here. The trick is remembering where the flooded bits are as they are now iced over until you step on them and go straight through. Makes a walk interesting but not relaxing.
1: 00 a piece of soda bread with cheese

6:00 2 heck sausages, 2 fried eggs, 1 tablespoon baked beans. Too much Lidl real greek yoghurt...so thick and creamy

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee
Late morning: black coffee and 1/2 packet of coconut bites.
Skipped lunch.
Mid afternoon: black coffee and coffee chia pudding.
Dinner: liver with onion gravy and mixed veg. followed by SF jelly, cream and LC chocolate granola.

Black coffee all morning.
Lunch was leftover lamb stew. Took all the carrots out and just ate the swede out of the veg. About 50g new Dr Almond seedy black bread ( <0.5 g cabs) with butter.
Dinner was gorgeous fresh cod fillet with lemon butter and broccoli followed by DGF blondie.

Woke up starving, I don’t think the OMAD life is for me!

Breakfast: 3 eggs mashed with butter in a cup

Lunch: Prawn cocktail with half an avocado and a few slices of cucumber. Had to use ship bought sauce but came in about 6/7g

Dinner: Ribeye with mushrooms, creamed spinach and Savoy cabbage. With pepper sauce made from almond milk and double cream and a sachet of sauce. I think the veg would make this about 12/13g at least.

DGF Lemon and Blueberry came and a cuppa. A little over my 20g of carbs but nothing to bad.

Sounds wonderful food - yum. Wondering if cold is making us hungrier.

@ Goonergal - I agree, it must have been quiet in here as I expected to have to take ages to catch up. Despite being behind again, I reckon I'll catch up pretty quickly.
@DJC3 - texture on the Dr Almond bread looks excellent.
Despite this being school half term, we decided to move it to next week since, if P1 to P3 go back it means No 2 grandson goes back straight after the holiday which to me makes more sense.
Anyway, Sunday Bed 5.7 FBG 5.5.
B. TAG - SLC bacon and egg roll.
L. Nothing
D. Usual campari and soda. Rib eye, portobello mushroom, asparagus, one of these Iceland broccoli and cauliflower souffle things. Few cherries.

Monday bed 6.7 FBG 5.5.
@Mrs T 123 - I assume that means your DGF order didn't spend a long time in Peterborough this time?

B. TAG then had to get DIL to orthopaedic OP to get new insoles fitted to correct her posture.
L. SLC sandwich with ox tongue and coleslaw.
D. Using up cold cuts. Slice of ox tongue, chicken, haslett and mortadella. Veggie salad, boiled egg and veggie chips.

Sad day. Grandson facetimed me to say goodbye to another one of his guineas who passed away. Poor wee lamb is down to one now but we're going to get another two at the weekend ( but not told him yet to let him get over the upset).

I'm eating nothing, I'll never eat again!! Just kidding, new at this and admit it's a bit scarey making sure I don't eat the "wrong" thing ;) So actually, I'm just cruising the forum, meeting people and so appreciating all the help I'm getting. I was up at 5:30 and did a test, then having my coffee. Which is about 3/4 Chicory Root, and the last of my Yuban (leaded) because I am reading (on different sites) that caffeine is my enema, whoops, I mean enemy. Later this a.m. I will have a couple of scrambled eggs with something, something besides toast I guess. I could have steelcut oats, but no, those are carbs too. I think I'll just have eggs with cheese, I can have cheese ;)

Hi All, Goonergal suggested I come take a look at the low carbs forums after getting a bit of a shock/reality check with my latest HBA1c yesterday which was 70, my highest since diagnosis in 2011. Bit upset and annoyed with myself because since 2018 the scores had been 53, 49, 49, 48, 58, 51. Coming down from 58 in Dec 2019 to 51 in June 20 was really pleasing so annoyed with myself that it's now jumped so high. Without going into detail it's been a rough 12 months or so (as it has been for everyone) and I've slacked off with too many comfort carb foods like potatoes (chips), slipped back to white bread (after sticking with granary last year), crisps and stupidly since Christmas chocolate toffees, I know, no kicking required! I'm back walking again after being laid up for two months with a bruised metatarsal so just need to lower the carbs to go with back walking.

I'm a big carnivore and always have been as some vegetables and roughage tend to aggravate my IBS but I like most meats, eggs and fish, although I find fish without accompaniment doesn't fill me up. So not sure if this is the right thread to ask (please move if not) but has anyone any suggestions just to try to accompany steaks, lamb, bacon, sausages, burgers, turkey, chicken etc rather than the non diabetic obvious choices of potatoes. I'm really looking for replacements/substitutes for potatoes/chips and bread ideally and I live on my own so not much of a cook! So many pages to browse through and have already seen that Portobello mushrooms would be a good addition but any other suggestions appreciated.

Evening all and welcome @Max68

An unintended OMAD today as the day kind of ran away from me, even though all I did was sit on the sofa! The one meal was my favourite mince fried with onions, 2 eggs and some cheese. Yum.

Max, I’m sure others will be along with alternatives, but tagging a couple of creative folks for you @DJC3 @maglil55 @shelley262

Thank you. The whole irony being my HBA1c was at it's best at one stage after bingeing on take aways!! Only thing I can think why is pre lockdown I ate a lot of kebabs, chicken, doner, shish, and KFC but stayed away from the chips! Maybe take aways are hefty so you don't snack, but hey ho, hopefully will pick up a few tips here!

You will find help here @Max68 , I have and just newly diagnosed with Type 2. I did the same thing over this last horrendous year. But we're here now and that's what counts. I usually eat a vegetable with my fish, or other meats. I also like to just slice open an avocado, and try to leave the salt off but sometimes, just a little. I can't say much as I have just gotten my meter, and I have to figure out my "pace" to set with foods. Glad you are here ;)
