What have you eaten today? (Low carb forum)

A few bits of cold ham around 7.30 am (been up since 3 am drinking tea) and the same again around 1.30 pm. Feeling hungry, but don't fancy eating anything that I have in the house. BG has finally dropped to 6.0 after having a few days up in the upper teens. Have an awful feeling I forgot to take my basal insulin but I know I did take the bolus dose before the ham. :banghead: Eeejit that I am!

First thing a few spoons of hm yoghurts with my supplements
Lunchtime two boiled eggs with one slice of LC toast followed by hm yoghurt with a few berries
Dinner see photo half a frittata puffed up under grill served with some leaves and herbs from garden and a portion of kimchi. I serve my kimchi in a bowl with teaspoon so that can eat all the brine which has lots of live bacteria in it. Followed by lc choc brownie and a few squares of 100% chocolate.
On reflection it was a very eggy day - plus I put some chicken in the frittata.enjoyed them all though and it was what I fancied today!
 
Black coffee until lunchtime
L- tin of mackerel in olive oil, h/b egg and chilli sauerkraut. Choc chia pud - I’ve found that if I make it with coconut cream (2.6 carbs per 100g) I don’t need to add sweetener to the cocoa powder which saves me buying it ever again
D- slow roast lamb with creamed cabbage and mushrooms. DGF cake

B: ff greek with seeds,2 strawberries and a few blueberries.
L: 2 slices cheese on toast using hi-lo bread, spoonfull coleslaw. 1 sq 85% chocolate
D: frittata with ham and peppers. 3 sqs 85%

Just starting up a new libre as, hopefully, heading off to Italy for a few days tomorrow. I used to go there for work trips and grew to love their tasty real food. Praying it is still so and the spikes aren't too high.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a food doctor bar.
Skipped lunch.
Mid afternoon: coffee shop cappuccino and a Carb Killa bar.
Dinner: gammon steak and a leafy salad followed by SF blackcurrant jelly and cream.

I make it with 1 tablespoon chia seeds, 1 teaspoon cocoa powder and 100g coconut cream ( or coconut milk which is usually slightly higher carb) plus a drop of vanilla extract if I have any. Mix together and leave in the fridge for an hour or 2.
I used to make it with zero carb almond milk but I needed to add a sweetener then.

I think @Rachox sometimes uses a flavoured Actimel for a change.

I used to use Benecol no added sugar raspberry or peach flavours. However I can’t have chia seeds anymore as I had to have a kidney stone removed last year which was 95% oxalate and chia seeds are high in oxalates.

Hi All
Yesterday was 7 hour fasting for barium xray in the afternoon. Which when I turned up was cancelled at the last minute. It was another hour before I got home and I threw caution to the wind and snaffled two M&S diddy pork pies which live on Mr PM’s shelf. Supper was preplanned to be safe roasted chicken breast with roasted asparagus.
Today we are off to the zoo, like two kids, and taking picnic lunch of Rollitos and LC muffin for me. Supper tonight is already made and is Tom & chilli mini meatballs with green beans for me.
 
Breakfast: 2 fried eggs on a slice of wholemeal toast. Plenty of tea.

Probably nothing else today, except broth of some sort. I've just about run out of milk, so shan't be making any shakes today. Today should be shopping day but Neil is having to rest up after passing out in the bathroom and gashing his head, so I'm short of quite a few things today.
 
Saturday
Breakfast: Full fat greek yogurt , with mixed seeds and black coffee
Lunch: coffee with cream
Dinner: salmon, broccoli, cream cheese, strawberries, cream, and a bottle of beer later.

Sunday
Breakfast: egg, bacon, sausage , mushrooms, coffee.
No lunch
Dinner: rump steak, onions, mushrooms. Red wine.

Monday
Breakfast: Full fat Greek yogurt, walnuts, black coffee
Lunch : coffee with cream
Dinner: chicken curry, cauliflower rice, strawberries, tonic water

Today I had breakfast of cheese omelette and chilli sauerkraut
Lunch was a couple of tuna melt muffins followed by.a DGF cake.
Dinner- wild boar steak with a ‘French sauce’ ( garlic, cream, white wine and mustard - supposed to have honey too, but still lovely without) broccoli and roast cauliflower.
Because I opened a bottle of wine for the sauce, I had a couple of glasses while cooking which wasn’t a good idea - so now I’ve eaten most of a bar of Montezuma’s peanut butter chocolate.

Thank you, I’ll save for later ( or more likely lose and ask you again!) It certainly did look good in your photo. I have a couple of mallard breasts in the freezer but my kitchen is still in upheaval so I haven’t got all my gadgets out again.

OK time to get serious and catch up! Wednesday 1 June - bed 7 4 FBG 7.8. My Libre is driving me nuts. It's scanning well over and there is no consistency. I've reported it to Abbott and they are replacing it at least. A lot of finger stabbing.

B. Usual TAG with 2 slices of SLC toast with ox tongue and coleslaw when I I got back from school run.

L. 3 M&S crispy cheese crackers with guacamole.

D. Boys were here so made bolognese. Hubby and youngest had it with spaghetti, eldest had it with GF pasta and I had it with swoodles which is swede. Problem is they were small pieces. They're OK but need to be longer (Oh fir Oomi noodles still to exist!)

Thursday 2 June - bed 7.5 FBG 7.8

B. TAG and 4 M&S Crispy cheese crackers with pate.

L. Slice of mortadella

D. SLC pizza with added salami, cheese and tomatoes. Grenade Ice cream bar.

Vodka and diet coke to celebrate 3 days off!

I really quite like these SLC pizzas. After redoing their loaves, I see the rolls are now on the improved recipe as well.

About 10 am a few spoons of hm yoghurts as usual with my supplements
Then put some chicken in Indian spices including lots of turmeric ,one of my faves, in olive oil to marinate for the day
1.30 pm two boiled eggs with one slice of lc toast followed by one big chopped strawberry and hm yoghurts and a strip of 100% choc - four small squares of montezumas. Listened to interesting podcast yesterday about benefits of cocoa so I’m feeling virtuous rather than vaguely guilty about my almost daily chocolate. If anyone interested in this podcast I’d recommend it’s the latest low carb md episode and recommended a lot of my favourite foods only thing recommended that I don’t do as it’s way too expensive is truffles - which I’m sure I’d like but will stick to things like chocolate! I thought good quality chocolate was expensive but it’s in a different league to truffles!
5pm chicken cooked in oven served with a portion of kimchi and brine and a range of salad leaves and herbs from the garden followed by lc crumble. I also tried a komucha made with lemon,ginger and bitters lovely I’m trying a few organic ready made ones as thinking about adding it to my fermentation projects - although don’t know where I’d put it to ferment!

When ever I’m preparing my veggies I think of your guinea pigs @Antje77 , I wished you lived nearby, I’d love to give them my off cuts rather than plonking them in the food bin!

Friday 3 June - bed 8.2 FBG 7 7. Not all good yesterday. Had to bring eldest grandson home in the afternoon as he was very upset (as were a number of his friends). One of his friends had a bad accident at school. I now know it was a double break (arm & wrist). Kids were upset because his hand was just hanging and the arm went up like a balloon. He blacked out with the pain. I had to reassure them he'd be fine and the doctors would fix it. What I found unacceptable was we had an unconscious child with a bad break and they couldn't give us a clue when we could get an ambulance. Against their better judgement, teachers agreed with his mother to get him in a car (still unconscious) and meet her at the hospital. He's doing fine but it's a nasty one.

B. TAG and 2 slices of SLC toast with salmon pate.

L A HC gin truffle. Remember that quiet day? I ended up babysitting Luffy the dachshund while everyone else took the kids to Ninja Warriors for youngest's delayed birthday party. He was sitting on my shoulder like a parrot !

D. After the departure of the pup, a mixed meat kebab and a couple of Hubby's chips.

Saturday 4 June - bed 7 5 FBG 6 4

Apart from going shopping (and taking son too) I did get most of today to myself.

B. TAG and 2 slices of SLC toast with salmon pate.

L. A grenade ice cream bar

D. Usual cold cuts - ox tongue, smoked duck, ham, wafer thin roast beef, mini German sausage, salad of avocado, santini tomatoes, port salut, walnuts, coleslaw and no-tater tater salad.

Gin and zero lemonade with a slice of orange taking in the party at the palace. Thought the Queen with Paddington (introducing Queen) was brilliant!

No tater salad recipe - I cook the cauliflower a bit in the microwave. Leave some bite in it.
