What have you eaten today? (Low carb forum)

@RosemaryJackson that really is lovely news, I’m so pleased for you.
Today’s food
B-Scrambled eggs and parmesan. Loads of black coffee
L- Turkey breast slices. H/b egg, turmeric and ginger sauerkraut, leaves. Unsweetened stewed rhubarb with coconut cream.
D- babysitting granddaughters so made DD keto tuna casserole which I know they like, then s/f jelly, blueberries and cream.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: coffee shop cappuccino and a carb killa bar.
Dinner: coronation chicken, leafy salad, two baby tomatoes and coleslaw followed by SF blackcurrant jelly and cream.

I make a LC mix to "crumb" fish (and meats such as chicken/pork/veal escalopes). I just vary the flavourings according to what I'm doing.
The base is equal amounts of almond flour, golden milled flax and grated parmesan. To get a crispy coat when frying, you then add sesame seeds.
Flavourings? Ground salt and pepper but, with fish, I'll add things like lemon zest and chopped parsley. Chicken, I'll add a shake of hot sauce or smoked paprika for example.

It works well and gives you a really good crisp "crumb". I dip in egg first, then the crumb. Refrigerate for 15 minutes or so then dip/crumb and Refrigerate again.

Hello need to catch up from Tuesday. Thanks for all the sympathy re wasp stings which are now healing except for one patch of forearm which is still lumpy and bumpy.
Had brother & SIL staying between Tues evening and Friday morning. We had lunch out both days after we discovered a quiet shady pub garden near the coast. First day I had chicken, bacon & avo starter, second day we all had Moules Frites which we saw on other tables the first day. I have to own up I ate almost half of the Frites, they were so nicely seasoned. Wed supper was Indian t/a and I had my usual Tandoori King Prawns with cauli bhajee. Last night we panfried scallops and turbot fillets and Irish new season spuds my brother harvested so I felt obliged to acknowledge a mouthful! A lot of wine was enjoyed over the few days, in my case Provence Rose. Tonight it was bbq at OH’s golf club which wasn’t actually too bad and since I was driving and don’t drive in the dark any more it was an early return. Back to reality on the food front from here on.
@RosemaryJackson I am sorry to hear about the chest infection and cracked rib. Thats not a good combination and hope your chest clears very soon. @Annb sorry to hear about your continuing tummy issues but its almost unavoidable if its your weakness with recent temperatures. I have discovered that Codeine is very effective for leaky tums and surprisingly also for Covid cough when I can’t get back to sleep.

B: 2 hard boiled eggs with mayo
2 hour dog walk, getting more used to the hills a bit now.
12 noon coffee with cream and a bit of cheese.
Mid afternoon, a very late lunch at a Riverside restaurant. Very tasty whitebait followed by ceasar salad with scallops and crispy pancetta. Yum yum. I glass white with a lot of water.
Evening just one scoop coconut icecream with 2 sliced strawberries

But here I am at gone 11 with stomach whirling like a tornado. Can only think it was the coconut ice cream. With check ingredients tomorrow but know carb wise was only 20g
 
Thursday was a major freight train derailment that give my insides a work out.

Yesterday (Friday) Bacon, two egg nd cheese omelette,mushrooms, two slices of toast and vegimite for breakfast.
No smoko.
We went out to the Bull Yard pub for lunch, rump steak, veggies and chips, lemon sorbet for lunch, a couple of malt whiskies.

Picked up a few bits and pieces od fruit an veggies from the farmers gate stalls, includeding bananas.

So all good to lunch time lchf wise, went down the gurgler after trying half a banana, first taste in six ot seven years. Need less to say the rest of the food on the menu went high carb.
 
Almost ready right now: an approximation of Huevos Rancheros based on the remaining gravy and veg from the sausage casserole plus some ginger and cumin and 2 eggs poached in it. I'll have a slice of wholemeal toast with it and hope that will do me for the day. No guarantees. Taking plenty of pain killers due to very sore legs and feet since last afternoon, so that might affect whether my stomach feels full enough to do without any more.
 
B-boiled egg
L-packed lunch on the beach of SLC roll filled with egg mayo. Granddaughters has cheesy chips from the beach cafe, boy they looked great. Coffee, tea and water throughout the day.
D- stopped off at Aldi on the way home and cleared the shelves of antipasto, cheese, pate, olives etc. and a very nice cheese bake. 4.7g carbs per 100g but a little went a long way with celery dipped in. Very cheesy.
Now having white wine and soda to cool off. It’s a hard life!
 
1100hrs B chia seed pudding with berries , nuts & greek yogart after 20km cycle
1500hrs L chicken and cold meat salad
1800hrs D keto spaghetti bolognese using spiralized courgette as spaghetti.
Snack of some jerky and nuts
 
Brunch: full fat greek yogurt, a few raspberries, black coffee
throughout afternoon, iced decaff black coffees, with one having coconut milk and a teaspoon of cream.
Dinner: not hungry, so some cheese, (cheddar), six almonds, Pepsi Max.

Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: same as yesterday coronation chicken and salad followed by SF blackcurrant jelly and cream.
 
I was sure it was going to be a sandwich day, really didn't fancy cooking.
But tomorrow will be a long day on a ship, leaving early enough to ask neighbour to feed the guinea pigs and returning late, and I'm very sure I don't want to cook after that.
And then I came home today at 10:30PM and didn't even want to heat up the food I made yesterday so today turned out to be sanwich day anyway. :hilarious:
That's fine, I'll have my nice food again tomorrow,and the sandwich wasn't bad either because I had a couple of hard boiled eggs in the fridge. :)
 
Walked the dogs first thing so
Mid morning: bacon and fried eggs
2:30 2 spoons of clotted cream!
Spent the afternoon visiting 4 private gardens open for charity. All absolutely stunning.
Resisted temptation to have tea and cake
D: rump steak cooked on the bbq, with courgette and mushroomed in garlic butter in a dish o the bbq. 1 scoop ice cream (not the coconut this time.)
22:00 got hhe munchies, a nut bar and a handful of walnuts

Checked the ingredients from yesterday's coconut ice cream. Maltodextrin might have been the culprit of my tummy doing somersaults .
 
Back on the torres strait and narrer yesterday. :meh:

Bacon, two egg and cheese omelette, mushrooms for breakfast.
Cold chicken leg for smoko.
Savoury mixed herb and oregano liver and bacon, onions and a tin of tomatoes mixed in the brew for lunch.
Sardines on low carb toast for supper at six.

Glass of single malt whisky before I went to bed early

I have had my fentanyl patches increased in size,I now have to put a 12mcg on with the 50mcg one, thiss is to help the oxycdone keep my chronic wound right leg quite for a lot longer..
 
Visitors gone so back to more mundane eating.
Yesterday was usual slice LC toast and lots of tea.
Lunch was 3 mini fritatas as wasn’t really hungry.
Supper was defrosted chicken curry and cauli rice.
Plan for today Sunday is to roast the large chicken sitting in my fridge and have with veg and then enough cold chicken for meals over the two scorching days to come.
Must admit I will be glad to get back to our usual summer temps, and get a decent night’s sleep.
