What have you eaten today? (Low carb forum)

Realising this made me giggle too, what an unexpected
Somehow the forum refuses to post the last part of this sentence, should have read: Realising this made me giggle too, what an unexpected benefit from having diabetes!
Breakfast was scrambled eggs with cream ( @Antje77 if you have any cream left, add it to scrambled eggs while cooking - gorgeous)
All the cream has been converted to a kilo of icecream, good thing I'm not a fan of scrambled eggs!

I decided to not find the new episodes on dodgy websites this year but to wait until it's aired on Dutch television so I can watch with subtitles and won't miss half the jokes!
 
Monday 17 October bed 6.5 FBG 6.9. Just noticed I didn't do yesterday, which is hardly surprising as I never stopped all day. Hubby continually in my way while trying to help ending in me constantly humming Queen's "I'm going slightly mad"!

B. First day of the October break so, to celebrate, slice of GF Black pudding, 3 chicken sausages, fried egg and santini tomatoes. Slice of SLC toast and TAG.

L. Nothing

D. Leftover cold cuts, ham, roast beef, ox tongue, chicken, pork & egg and coleslaw.

Today 18 October - up at 6.30am. Bed 7.1 FBG 6.8. Finishing off last bits and bobs. Now progressed to singing I'm going slightly mad. I'm not ungrateful but, I have my own way of packing since then I know everything is in and where it is!

B. TAG and a slice of SLC toast and butter. Left at 8.30am.. Passed on breakfast on train as there was absolutely nothing suitable apart from water and TAG.

L. As you know was the chicken thigh dish that was tasty enough but heavy on tarragon. 2 vodkas and diet coke and lots of water.
After a delay and a change of station/train in London eventually got into Bath 9 hours later.

D. Got unpacked and couldn't face going out (other don't arrive until tomorrow). Ate in hotel. Campari and soda and a glass of white wine with meal. To start a confit chicken terrine followed by a shredded duck Asian salad. Both of which were really nice.

Now having a very early night to face tomorrow refreshed and buy the things Hubby forgot having interfered with my packing schedule!

Night, night.
 
My goodness that is one helluva breakfast! Did the hash browns and pancakes actually come as part of the meal
Yes it was. Everything here comes with at least 2 carby sides eg fries, bread, rice, potatoes, corn. And almost everything gets put in a sandwich as main meal, even in posh restaurants
They look at me oddly when I say "hold the sides" but the filling is often more than enough
 
Neil found some very cute and very small pumpkins when he went shopping. There is one orange one about 3 inches diameter, one orange one about 4 inches diameter and a pale yellow one about 5 inches diameter. I'm not really sure how to cook them. Does anyone have experience of cooking mini pumpkins? I could roast them whole and them hollow them out and fill with something or other, I suppose. But that's not very exciting. Any ideas in that great culinary network out there?
Just rub then with olive oil and bake/roast until tender. You can either eat the skins or leave them according to personal taste. I like them cut open with spices, chilli and black pepper and butter, else I find they taste too sweet so need something with a bit of a kick
 
A late "sort of breakfast" was a McDonald's coffee and a small burger of which I left half the bun. Hubby had a warm cinnamon roll of which I had 2 delicious bites.
Hard to tell what it did to bg as was running high anyway after getting cold yesterday and having a migraine late last night. Been lurching from 6 to 9 repeatedly all day every hour. Graph looks like zig zag stich on my sewing machine!
L was the filling of a turkey, ham and cheese sandwich, left the bread
D. Was a delivered pizza. Was only going to have a bite or 2 but it was sooo good, fresh, warm and tasty. Left the large crusts for hubby.
 
Morning all. My fried eggs on ham turned into streaky bacon fried in butter with 2 eggs and canned tomatoes. But half way thro something went wrong and I ended up being very sick for about 3 hours. That was at 2.30pm. By 9 oclock felt hungry but was so afraid to eat, just had a small slice of cheese. Am fine this morning but still wary of eating so today will just pick at low carb stuff. I have cheese, ham, sardines and smoked trout so not afraid of starving! HBA1c result was 51. Not brilliant but it hasn't gone up so am fairly happy. It's a beautiful day here, sunny but cold. Hope it's as good wherever you are. Enjoy

Well, that would be me!
It's literally hoops of spaghetti where I was thinking it must be some low carb brand type spaghetti substitute. :facepalm:

@WHT , I hope the spaghetti hoops tasted good and didn't make your BG rise too much!

Today was the other schnitzel (I bought 2), this time with 6 units of insulin instead of yesterday's 4 and planning to top that up a bit once I start to rise. :)
Had it with mixed chopped veggies, large bag for only 25 cent because it was on it's use by date. Added some bell pepper and shii take mushrooms, and made a peanut sauce to go with it. :hungry:

I had no breakfast! so lunch was the burger with spagetti hoops. Registered 6.4 after.
 
Hugs @RosemaryJackson and @MrsA2 hope you both feel better soon.
I’ve had a busy day and not much time to eat which has made me a bit grumpy at times.
1st bite 11:20 - a Babybell and slice of salami
2nd bite 16:20 -the rest of the pot of M&S smoked salmon and cream cheese deli filler, eaten quickly with a spoon.
18:30 finally a proper meal, IP lamb rogan josh. I’d marinated the lamb overnight so just 20 mins cook time. Airfried large mushrooms with it. Choc chia pud to follow. Happy again now I have a full tum.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and an Aldi protein bar.
Skipped lunch.
Mid afternoon: black coffee and a phd bar.
Dinner: kedgeree made with CauliRice rice with a smidge of sweet pickle stirred in followed by SF strawberry jelly and cream.

Em stayed overnight and has only just gone home with her Dad. Her Dad and Neil have been working hard all day - and are still at it - to fit a new heating system at Em's house. It's a bigger job than they anticipated (as usual). Anyway, the food today has been centred around Em. Started with bacon and eggs. Em had a sandwich for lunch and I had a cup of tea. She also had a lot of some sour cream and chive pretzels after lunch. When the plumbing job went on too long, I thought I'd better feed her so we each had quick fried salmon fillets, hers with tomato ketchup and buttered bread, mine as salmon mayonnaise. BG has been a bit more controlled today.
 
Sausages and eggs, toast and vegimite for breakfast.
Red Rooster chicken, mixed veggies and gravy, small portion lemon / lime sorbet for lunch.
Small mre shepherds pie for supper at six.

Glass of single malt before bedtime.

Blue care nurse think I have got that mongrel infection pseudomonas ? again in my lower right leg, they are a arranging swab tests through my GP and palliative care at the base.

Nearly 18 month since I had a flair up with it.
