We've been hungry tday, so ate early this evening. It was MrB (our) World Famous Cheese and Onion Pie. Aside from lots of delicious onion in it, it is very low carb. Ingredients are all very approximate, in terms of amounts.
For two:
1 large onion chopped.
c200-250gr cheese of your choosing; grated - for us, this evening, it was just a strong mature cheddar
A decent knob of butter
1 egg
Firstly, boil the chopped onion until soft, the drain very well.
In a bowl, combine the onion, cheese, egg, butter and seasoning, the decant into your chosen cooking vessel. It works just as well as one dish, or individually. We had individuals tonight.
Put it into a 200c fan oven for c30 minutes.
I think it would also be wonderful with cooked bacon or chopped chorizo added.

Morning all. Forgot to post yesterday but I know I had bacon, eggs and tomatoes for dinner and the rest of the tin of tomatoes for tea with 2 buttered Ryvitas. Plus some Co-op Divine 70% chocolate. Today I have a chicken breast which I will stuff with cream cheese with brussels, broccoli and cauliflower. I have some Porcini mushrooms so I'll try to make a sauce out of them. I did make some lc bread but wasn't impressed. It was more like cake than bread but I'll keep trying. @DJC3, how many carbs per slice is the HiLo bread? I miss real bread more than anything and I sometimes crave a cheese sandwich.

How long will your fast be? I was thinking of doing a 2 day one last wek, but having never done one before was not sure how safe it would be.Coffee.
Breakfast: Few rashers of bacon, handful of roasted chickpeas.
Later: Chicken thighs baked in coconut cream with chili and cilantro. Last of my blue goatsmilk cheese with cucumber and walnuts. Few squares of dark chocolate. Matcha tea.
Planning an extended fast this coming week.. Have been 'building my fasting muscles' the past few months and really want to do a good length therapeutic fast - for automimmune and neuro issues - before the silly season is upon us. Most cheeses are fine. Crackers? Google low carb or keto crackers. There are loads of them. One of the popular ones are M&S super seeded but are notoriously difficult to find in store. Many online suppliers have them too. You'll also find loads of recipes online for crackers. I am currently using M&S crispy cheese crackers. Carb count is higher than the low carb version but I can get away with having 2 or 3 of them.It is cheese and crackers I miss, or in fact actually it is anything and crackers... I love crackers
Did you know that Seriously Low Carb are now doing a low carb sweet pickle? Tastes like Branston but not as chunky. Now, cheese & pickle sandwich.It’s about 5g per slice. I completely agree about the cheese sandwich.
