What have you eaten today? (Low carb forum)

I had a Lebanese breakfast : Skewered Chicken pieces, shredded chicken, Shawarma beef and lamb, greek salad, fried chick peas and humus (table spoon) with a pickle and a table spoon of rice with carrots and peas. Mmmmmm. BG still rose to 10.6. So 0.6 over my target range.
 
I like the Seriously Low Carb pizza bases. They do make topped pizzas but they are pricey plus I prefer to top them myself. You can freeze them so you can get a stock of the bases when they go on offer. Just remember to separate the bases with greaseproof as they are nigh on impossible to separate when frozen.

To all the lovers of nut butters (I can't stand them), I came across this recipe for American style pancakes made with a nut butter of your choice. Totally flourless.

Must have a try at these, Maglil. Neil has started making his own macadamia nut butter but I can't use that - the nuts cost a fortune but they are one of the few nuts he can tolerate. I have a big bag of broken pecans and was thinking of trying to make pecan butter with those, so I might just do so and try this recipe with that.

Sunday 23 October - Bed 7.7 FBG 7.4.
Day started fine then went downhill. We got out in the morning, took another river trip complete with Pimms o'clock on board and decided what to do for dinner/late lunch. Best laid plans......Hubby went down with the lurgy in the afternoon and had to take to bed in-between frequent visits to the bathroom. No choice really as we were travelling next day.

B. Same as previous days.

L. Pimms on board boat.

D. Should have been a Sunday Roast but Hubby obviously couldn't face anything other than water. I ended up getting a charcuterie board from room service of Italian meats and cheeses. I'd got some crackers from M&S earlier in the day.

At least I got everything packed to save any rush in the morning.

Monday 24 October bed 9.4 FBG 7.7 Signs of something lurking although the raised BGs and my legs/ankles being painful was the only signs.

B. Same as previous days except I dropped the mushrooms and GF Black pudding. Headed off to station after that to get to King's Cross in plenty time.

L. Nothing too tied up with journey. A Stoke of luck at Paddington. One of the railway staff saw my difficulties getting off train and promptly loaded myself, Hubby and luggage onto one of these buggy cars, got us to the taxi rank, straight to the front for a taxi and gave me a card to saw - calk this number next time you go through Paddington and arrange help. I was very impressed.

D. I had a packet of M&S Serrano Ham crisps and a couple of bits of cheese with 2 M&S crackers. Plenty water, 2 vodkas and diet coke. Eventually I had the shepherdess chicken again and a couple of spoonfuls of Hubby's lemon posset. I really wanted the teaspoon as I'd bought the Coconut Collaborative's little chocolate pots in Waitrose. Had one of them.

Eventually got home just before 8pm.

Glad you made it, @maglil55. What a thing to happen just when you had to travel home - and Bath isn't just over the fence. Poor hubby and poor you. You don't need such a stressful end to a break. Probably need another one now to get over it. That sounds like an excellent service at Paddington though.

Should be getting my 2nd meal on but feeling a bit down with this chest and throat, so I might not bother. Been drinking hot, watered down orange juice to try and ease my throat - along with some paracetemol. Otherwise I might be feeling a whole lot worse.
 
Tuesday 25 October bed 7.7 FBG 7.8. Last day of school holidays and very little food in the house.

B. Just TAG then straight to chiropodist and shopping.

L. 2 slices of SLC toast with egg mayonnaise

D. Liver, bacon, mushroom, santini tomatoes, spinach and fried egg.

Early night beckons.

Wednesday 26 October bed 7.9 FBG 7.7 BGs had stabilised again although I still felt a bit "off".

B. Just TAG. Back on school runs then straight to Specsavers to collect my "reglazed" frames to give me 2 pairs again.

.L. Early - 3 chicken chipolatas, slice of GF Black pudding, 2 slices back bacon and a fried egg, santini tomatoes and a slice of SLC toast.

D. With the cooked brunch, I wasn't that hungry so, after feeding the boys & Hubby steak pie, greens and potatoes, I had a SLC sandwich with ham and coleslaw.

Thursday 27 October - a really busy week. Bed 7 FBG 6.4. Much better but I do feel a bit chesty.

B. TAG and 2 slices of SLC toast with ox tongue and coleslaw.

L. Nothing. Having already been at the chiropodist and optician the past two days, today I had the pleasure of the Eye Pavilion. It was a long visit as they mis-filed me after the reading & pressure tests. It was only after I questioned people coming in after me being seen and gone that they realised and I was seen immediately. Pressure was down but not by enough for my consultant so she planned to put a rocket up the booking area.

D. Much later a seafood mix followed by a coconut collaborative little chocolate pot with 3 blackberries.

I wasn't sleeping well as I just didn't feel right.

Glad you got home ok in the end but sorry to hear of poor hubby’s lurgy on your last days. Hope your raised BGs are just worry about him and not another something lurking.
 
@Antje77 - For us, the C&O Pie is a once and done event. MrB does them in generous ramekin style dishes. That said, I reckon, once the mixture was made, it could be frozen in foil/silicone cupcake cases and cooked either from frozen on when almost thawed.

It is a really tasty and satisfying meal.

Edited to say, the system wouldn't let me reply to your post. I thought I had been "elevated" to the naughty step. :cool: :)
 
Late breakfast for me after PT session in the park (Amazingly lucky in missing the frequent heavy showers) SLC roll filled with ham and cheese. No pickle, just mustard.
L- 3 airfried chicken drumsticks
D- inspired by @Goonergal ‘s ‘mince mix-ups’ - beef mince fried in butter with broccoli. S&P and a bit of chilli added. A fried egg on top. Not very photogenic as egg cooked in the same pan and got all stuck to the bottom so the yolk fell out. Tasted great though. White wine nowIMG_1291.jpg
 
Friday 28 October - bed 6 5 FBG 6.7 Thanks to testing strips. I can't recall if I said I had 2 Libres fail before We went away? Obe fell off, the other just stopped working. I claimed for them a day or so before we came back and ordered a supply to get through Christmas/New Year. I applied my last sensor and it failed too!! Thankfully more were on the way so this was another claim. I'll have enough sensors to get me through almost 3 months.

B. TAG and 2 slices of SLC toast with ox tongue and coleslaw.

L. One of these little chocolate pots with blackberries. Off to dentist with Hubby and eldest grandson. I was dreading this as I was sure my upper bridge would need replaced. It did! Turned out a tooth had moved a full tooth width sideways. I have another 4 appointments booked. More on the parallel thread. It wasn't as bad as expected.

D. Grandson decided to stay for dinner. Had to get younger one plus Dad to school Halloween party, then get them all home so I was very naughty. I had a smoked sausage from a chip shop and some of Hubby's chips. Miraculously, BGs only got to 8 then dropped again.

PS Consultant did put a rocket up booking. I got an appointment letter this morning for pre operative checks for the cataracts - 7 December!
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a Lidl protein bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: bolognese with slice sautéed courgettes topped with grated mature cheddar followed by SF black currant jelly and cream.

Hug for the health issues @maglil55, and I hope they all get sorted out very soon. I don't like the sound of you being chesty and feeling a bit poorly and hope it isn't yet another bug. That's the last thing you need with all the running around after others and to foot and eye appointments.

The opthamologist I saw said he was referring me to a specialist for my odd eye problem through my GP but so far have heard nothing. Maybe there's a long waiting list or more urgent problems. I suppose it's a good sign that they don't seem to be in a hurry. I'm not about to lose my sight or anything nasty.

I have been trying to get an appointment with a chiropodist or a podiatrist but the one who was taking clients recently has retired. Can't blame him - he must be in his 70's so why should he carry on? I have obtained a place at the end of the waiting list to be taken on as a client with the one remaining podiatrist who works at the other GP practice in the town (other than the one I go to that is). Not, I am told, for an actual appointment but just to be added to the list of clients who will eventually be granted an appointment. It is very strange, this turn-around in attitudes to footcare. When I was diagnosed as diabetic I was told that under no circumstances should I or any unqualified person attempt to cut my toenails or do any other footcare. Along comes covid and suddenly - get anyone you can to do your nails - we don't do that any more. We'll help if you develop an infection due to bad footcare, but it's up to you to get someone (anyone) to do it routinely. Of course, I could do my own if only I could bend far enough to reach my feet.

I did, after all, make my black pudding dish. It was a bit of a disappointment because the recipe has clearly been changed for the black pudding - it's much dryer and the texture is more like sawdust. I suppose that it is to make it cheaper to manufacture but I shan't be getting that make again. Pity because the spices in it were about right for me, unlike the main Stornoway Black Puddiong makers who put lots of spice in theirs.
 
Milk, regardless of the type (full, semi or skimmed) is too carb heavy for the very low carb peeps. It's something like 12-13 g in a mere 240 mls, which is a great shame as I loved a drink of milk and, it does have other valuable nutrients. It's one of these "try it and see". Test after milk - a couple of times at various intervals and see what it does to your BGs. It puts mine through the roof hence my delight that soya, coconut and almond work instead and don't spike me. I was even more delighted to discover the coffee shops had these alternatives.
The food was fabulous. Best restaurants I have come across for adapting for a low carb diet.
Hmmm... i have managed to stop milk in my tea, but i do miss it, and a cappuccino is a real treat every now and then. Possibly even better, a milky coffee with 3 spoons of coffee powder!...I will do some tests...how long should I wait to test after drinking a cup of milk? I usually do a test 2 hours after eating food, but as I was not eating any sugar or carbs, and was staying around 4.5 to 5, I was not too concerned
 
Had a big meal last night with friends, veal tartar, melted Fontina cheese, rabbit stew followed by vanilla ice cream, 3 bread sticks. 4 glasses of wine and a small Negroni. I was resolute and passed on the pasta! .....But, I had not not eaten all day.
Today, skipped breakfast and lunch. For dinner half a courgette and half an aubergine stuffed with mince, tomato, onion, garlic and a little chilli, topped with parmesan. Then a few tiny tastes of 4 cheeses. Delish!!! Checked glucose level before 5.5mmol... 2 hours later 5.3mmol.

I have still got a couple in my freezer - do you use them within the 2 months or do you think 3 month old frozen ones would still be ok?

@maglil55 when you say "reglazed frames" does that mean specsavers let you put new lenses in old frames? - I have a couple of designer frames which I loved wearing and are in no way past their best but I now no longer use as when I had to get a new prescription thought I would have to get new frames as well?

You can get new lenses put into old frames, but it can be pretty well as expensive as getting completely new glasses. It would only be worth it if you had old frames that you really liked and couldn't get similar new ones. Don't know if that is the case with SpecSavers - it may just be in traditional opticians that this is the case.
 
Brunch - 2 boiled eggs mashed up in a cup with butter. 2 squares 90% lindtt. Mug of earl grey tea

Dinner - chicken with mushrooms & broccoli with a little creamy mustard sauce. Strawberries & cream

Thanks for that @Annb. It might be something I will enquire about next time, as I have got a couple of lovely designer frames (which I could afford when working full time on a good salary but not now as only working part-time and earning a lot less) so it's a thought ... I didn't realise it was a possibility x
